Steps:
- Bring 1/2 cup water to boil in large skillet over medium-high heat. Add broccolini; cover and cook until crisp-tender, about 3 minutes. Drain. Dry skillet.
- Heat oil in same skillet over high heat. Add next 5 ingredients; stir 30 seconds. Push vegetables to side of skillet; add scallops to other side. Sprinkle with salt and pepper; stir-fry 1 minute. Stir vegetables into scallops. Add rice, broccolini, soy sauce, and sesame oil and stir-fry until heated through, about 2 minutes. Season with salt and pepper.

- Preheat the oven to 350 degrees F (175 degrees C). Line a sheet pan with aluminum foil and place salmon fillets on top.
- Stir soy sauce, avocado oil, chili-garlic sauce, ginger, honey, sesame oil, and lime juice together in a small bowl; brush over salmon fillets. Set remaining sauce aside for dressing.
- Bake salmon in the center of the preheated oven until it flakes easily with a fork, about 15 minutes. Remove from the oven and let cool, about 15 minutes.
- Divide rice evenly between 4 bowls and top with salmon fillets. Distribute carrots, snow peas, avocado, and bell peppers evenly between the bowls; sprinkle green onion over top.
- Stir reserved soy sauce mixture with peanut butter, rice wine vinegar, and garlic powder; add water until dressing reaches desired consistency. Drizzle over the bowls and sprinkle with sesame seeds.

- Soak 12 wooden skewers in water for 30 mins. Cook the rice following pack instructions, then rinse under cold water and drain thoroughly.
- Heat the grill. Mix the mince with the harissa, feta, grated onion and seasoning. Form into 12 sausage shapes and thread onto the skewers. Lay on a non-stick baking tray and grill for 6-8 mins, turning until cooked through and slightly browned.
- Mix the brown rice with the remaining ingredients and some seasoning. Serve alongside the hot skewers.

- In a sauce pan on med heat pour in the pineapple juice, setting 1/3 c. to the side for the rice. Add the remaining ingredients and bring to a simmer. Remove from heat and let cool. Combine with the uncooked pork chops and let it marinade for 2-3 hours. (save a portion of the marinade to use later as a sauce) Start to prep the rice 20 minutes before cooking the pork chops. For the rice follow the boxed instructions. Saute the diced peppers and onions, when they are about half way cooked add in mushrooms and cilantro. Set aside when done. In a sauce pan put pork chops and marinade on med heat. When about half way cooked drain the liquid and let the pork chops sear. Next, check on the rice and add in pineapple juice- allow the rice to get really thick and sticky. Add in the sauteed vegetables and hot sauce. For the salsa saute the pineapple chunks and brown sugar on med-low heat. When cooked through drain the excess liquid from the pan. Add remaining ingredients and cook until browned. When done, add the pork chops to the salsa to finish cooking.

- Heat oil in heavy large nonstick skillet over high heat. Add garlic and ginger and stir-fry 1 minute. Add next 5 ingredients and stir-fry until just tender, about 3 minutes. Add rice and toss to combine. Add oyster sauce, water and chili paste and stir-fry until sauce is evenly distributed and mixture is heated through, about 2 minutes. Mound in large bowl. Garnish with green onions and serve immediately.

- 1. Combine peas, onion, ham and garlic in a skillet and cook, covered over low heat for 10 to 15 minutes until onions are tender. Leave covered to keep warm. 2. In a small bowl, whisk together the vinegar and peppers. Add the oil in a stream and keep whisking until the dressing emulsifies. 3. Combine the pea mixture with the dressing. Stir in the lemon juice, scallions, & salt and pepper. Allow to marinate at least one hour, stirring occasionally. 4. Cook 1 1/2 cups of brown rice according to package directions. Spoon pea mixture over rice. (Or, hollow a middle area in a shallow bowl of rice to put the pea mixture).
