Spicy Black Bean Burgers with Chipotle Mayonnaise image

One bite of this spicy black bean burger with spicy chipotle mayo and creamy avocado and you won't miss the meat! Yes, these were good enough to please even the adult carnivore's in my home (a bit too spicy for my kids).

3 1/2 tbsp light mayonnaise (Hellman's)
1 tbsp canned chipotle in adobo sauce
16 oz can black beans (rinsed and drained)
1/2 red bell pepper (cut into 2 inch pieces)
1/2 cup chopped scallions
3 tbsp chopped cilantro
3 cloves garlic (peeled)
1 jumbo egg
1 tbsp cumin
1/4 to 1/2 tsp kosher salt
1 tsp hot sauce
1/2 cup quick oats (use gf oats for gluten free)
4 whole wheat 100 calorie buns (Martin's*)
1 small hass avocado (sliced thin)

Steps:

  • Combine mayonnaise and chipotle, set aside.
  • Dry the beans well after washing, extra moisture will keep the burgers from sticking.
  • In a medium bowl, mash beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, cilantro, onion, and garlic, then add oats, then eggs and spices.
  • Then stir into mashed beans.
  • Divide mixture into four patties (using slightly oiled hands helps) and place them onto a flat surface covered with wax paper. (If it's too wet, chill the mixture 30 minutes in the refrigerator or add another tablespoon of oats)
  • Freeze at least 2 hours before cooking or keep frozen until ready to cook.
  • Heat a lightly sprayed skillet to medium heat and cook frozen burgers about 7 minutes on each side.
  • If grilling, preheat grill over medium heat, and lightly oil a sheet of aluminum foil; grill 7-8 minutes on each side or you can bake in the oven at 375° on a lightly oiled baking sheet.

Make-ahead tip: Form patties, place them on a cookie sheet, cover with plastic wrap, and refrigerate for up to 24 hours until ready to cook.

1/2 cup mayonnaise
2 teaspoons finely chopped chipotle pepper in adobo sauce (seeds removed for a milder mayo; leave them in for more heat)
1 teaspoon adobo sauce (from the can of chipotles)
1 small clove garlic (minced) (about 1/2 teaspoon)
Pinch kosher salt
1 (15-ounce) can black beans, drained and rinsed
1 egg
1/2 small yellow onion (finely chopped) (about 1/2 cup)
1 small clove garlic (finely minced) (about 1 teaspoon)
1 cup bread crumbs
2 teaspoons adobo sauce (from a can of chipotle peppers in adobo sauce)
1 teaspoon dried oregano
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
1/8 teaspoon cayenne pepper (optional)
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons olive oil
16 slider buns or dinner rolls (sliced in half)
8 ounces pepper jack cheese (sliced thin)
1/2 red onion (sliced)
Sliced sweet pickles

Steps:

  • Mix all ingredients together in a small bowl. Refrigerate in an airtight container until ready to use.
  • Place beans in a small bow and mash with a fork or potato masher. Add egg, bread crumbs, adobo sauce, oregano, cumin, smoked paprika, cayenne (if using), salt and pepper. Mix well.
  • Form into one-ounce patties - about 2 tablespoons per patty - by rolling mixture into a ball, packing together firmly, then flattening slightly.
  • Add the olive oil to a large saute pan over medium heat. Working in batches so that the burgers aren't too crowded, cook one one side until browned - about 5 minutes, then carefully flip and cook until browned and cooked through, about 10 minutes total.
  • Remove patties to a paper-towel-lined plate to drain and cool slightly.
  • Put slider buns sliced-side up on a cookie sheet. Add black bean patties to the bottom halves of the buns and top with cheese. Place under oven broiler until cheese has melted and buns are golden brown, about one minute (depending on your broiler - just watch carefully!)
  • Remove from oven and slather chipotle mayo on the inside of the bun tops. Top burgers with red onions and pickles, sandwich with the bun top, and secure with a toothpick or skewer. Serve immediately.

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

1 (15 ounce) can black beans, rinsed
3/4 cup chopped red onion
3 tablespoons chopped fresh cilantro
1 clove garlic, finely chopped
1 tablespoon chili powder
1 teaspoon ground cumin
2 tablespoons lime juice (or lemon juice)
1/4 teaspoon salt
1 tablespoon light mayonnaise
3 tablespoons light sour cream or 3 tablespoons nonfat plain yogurt
2 teaspoons chopped chipotle peppers in adobo sauce
4 (6 inch) pita breads, preferably whole wheat
1/2 small head iceberg lettuce, shredded
1 ripe avocado, sliced
1 ripe tomatoes, sliced

Steps:

  • Combine black beans, onion, cilantro, garlic, chili powder, cumin and lime or lemon juice in a large bowl. Season with salt.
  • Slightly mash the beans while stirring, until all ingredients are incorporated and the mixture just holds together.
  • Stir together mayonnaise, sour cream (or yogurt) and chipotle in a small bowl.
  • Slice off the top third of each pita; open them up and spread the bean mixture inside.
  • Top with the chipotle mayonnaise, shredded lettuce, sliced avocado and tomato. Serve within 30 minutes.
  • This is good warm, room temerature, or even cold.
  • Note:.
  • If you are sensitive to spicy foods, start with half the amount of chili powder called for and increase to taste.
  • Other canned beans can stand in for the black beans; try cannellini beans, red beans or pinto beans.

Beans:
1 1/2 cups dried black beans (about 10 ounces)
2 peeled onions; 1 halved, 1 chopped (about 2 cups)
1 bay leaf
1 teaspoon dried oregano (preferably Mexican)
2 tablespoons olive oil
2 links fresh chorizo sausage (6 to 7 ounces casings removed)
2 tablespoons finely chopped fresh cilantro plus additional for garnish
2 garlic cloves, minced
2 teaspoons minced seeded jalape&entilde;o chile
1/2 teaspoon ground cumin
Chipotle cream:
1/2 cup sour cream
1 1/4 teaspoons chipotle-flavored hot pepper sauce
1 teaspoon fresh lime juice

Steps:

  • For beans:
  • Place beans in large saucepan. Add enough water to cover by 2 inches. Let beans soak overnight.
  • Drain beans. Return to saucepan. Add onion halves, bay leaf, and oregano. Add enough cold water to cover by 2 inches. Bring to boil, reduce heat to low, and simmer uncovered until beans are very tender, stirring occasionally, 1 1/2 to 2 hours (depending on age of beans). Drain beans, reserving cooking liquid. Discard onion halves and bay leaf.
  • Heat oil in heavy large deep nonstick skillet over medium heat. Add chorizo and cook until brown, breaking up with back of spoon, 4 to 5 minutes. Using slotted spoon, transfer chorizo to small bowl. Add chopped onion to drippings in skillet. Cook until soft and golden brown, stirring often, about 10 minutes. Add 2 tablespoons cilantro, garlic, jalapeño, and cumin; stir 1 minute. Add beans, 3/4 cup reserved cooking liquid, and chorizo to onion mixture. Stir to distribute evenly. Simmer over medium-low heat until heated through and flavors are blended, 3 to 4 minutes. Season to taste with salt and pepper.DO AHEAD: Can be made 1 day ahead. Chill uncovered until cool, then cover and keep chilled. Rewarm over medium heat before serving.
  • For chipotle cream:
  • Whisk all ingredients in small bowl to blend. Season to taste with salt. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewhisk before serving.
  • Transfer beans to large bowl. Garnish with chipotle cream and chopped cilantro.

3 tablespoons red onions, finely chopped (or use green onions)
3 tablespoons fresh cilantro, chopped
1 garlic clove, finely chopped
1 tablespoon mild chili powder
1 teaspoon ground cumin
2 tablespoons lime juice
1 teaspoon salt (to taste)

Steps:

  • Stir together mayonnaise, sour cream (or yogurt) and chipotle in a small bowl; set aside.
  • Combine black beans slightly mashed, chopped onion, cilantro, garlic, chili powder, cumin and lime juice in a large bowl.
  • Stir all the ingredients until mixture holds together and season with salt to taste.
  • Serve with crackers as a dip or spread on sandwiches or pita breads cut in halves and top with shredded lettuce, sliced avocados and tomatoes. Serve within 30 minutes.
