Sliced potatoes with seasonings to give it an excellent flavor. This is a great side dish for any main course meal. You can add more of the seasonings for your liking. I suggest a little more paprika, it gives it a great flavor. You can also put in bacon bits when cooking if you would like.

2 (15 ounce) cans sliced potatoes, drained
2 tablespoons butter
1 teaspoon garlic salt
1 ½ tablespoons Italian seasoning
1 ½ tablespoons paprika

Steps:

  • Melt butter in a large skillet at a medium heat. Stir in the potatoes, garlic salt, Italian seasoning and paprika. Stir the potatoes around occasionally. The potatoes should cook for about 12 minutes or until potatoes are a red-brown color.

5 pounds Yukon gold potatoes, unpeeled
2 teaspoons garlic salt
2 teaspoons paprika
2 teaspoons black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
Vegetable oil, for frying

Steps:

  • Scrub the potatoes under water until totally clean. Use a mandolin or Japanese slicer to slice the potatoes as thinly as possible. As you slice them, submerge them in cold water and set aside. Mix together the garlic salt, paprika, black pepper, cayenne and salt in a small bowl and set aside.
  • In 2 heavy Dutch ovens, heat some vegetable oil to 375 degrees F (use a thermometer to keep the temp right!). Lay the potatoes on a baking sheet lined with paper towels, and blot them with more paper towels to dry completely.
  • Lower batches of potatoes into the oil using a spatula. They will fry very quickly, about 1 1/2 minutes; remove with a spatula when they're nice and golden and crisp. Immediately sprinkle on the spice mix. Repeat with the rest of the potatoes!

3 10-ounce bags kettle-cooked potato chips
1 tablespoon garlic salt
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Freshly ground pepper

Steps:

  • Preheat the oven to 350˚ F. Spread out the potato chips on 2 baking sheets. Bake until hot, oily-looking and slightly golden, about 10 minutes. Dump the chips into a large bowl.
  • Meanwhile, mix the garlic salt, paprika, cayenne and 1 tablespoon black pepper in a small bowl. Sprinkle on the hot chips and gently toss.

1/2 teaspoon dry mustard
1/2 teaspoon hot paprika
1/4 teaspoon chili powder
1 small onion, peeled and minced
2 teaspoons salt

  • Preheat the oven to 425 degrees. Generously butter 2 baking sheets. Overlap the potato slices in single rows. Stir the spices and onion into the remaining butter and drizzle it over the potatoes. Sprinkle with salt and bake until the potatoes are golden, about 45 minutes. Serve.

4 medium unpeeled baking potatoes
4 teaspoons salt, divided
4 cups ice water
1 tablespoon chili powder
1 teaspoon garlic salt
1/4 to 1/2 teaspoon cayenne pepper
Oil for deep-fat frying

Steps:

  • Using a vegetable peeler or metal cheese slicer, cut potatoes lengthwise into very thin strips. Place in a large bowl; add 3 teaspoons salt and ice water. Soak for 30 minutes. Drain potatoes; place on paper towels and pat dry. , In a small bowl, combine the chili powder, garlic salt, cayenne and remaining salt; set aside. , In an electric skillet or deep-fat fryer, heat oil to 375°. Cook potatoes in oil in batches for 3-4 minutes or until deep golden brown, stirring frequently. Remove with a slotted spoon; drain on paper towels. Immediately sprinkle with seasoning mixture.
