2 pounds carrots, cut into sticks
1/4 cup butter
1/4 cup packed brown sugar
1/2 teaspoon apple pie spice
1/4 teaspoon salt
1/8 teaspoon white pepper
1/2 cup golden raisins
1/3 cup pistachios

Steps:

  • Place carrots in a large saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. Drain and set aside. , In the same pan, combine the butter, brown sugar, pie spice, salt and pepper; cook and stir until butter is melted. Add carrots, raisins and pistachios; cook and stir over medium heat for 5 minutes or until glazed.

1/4 cup sugar
1/2 teaspoon salt
1 tablespoon curry powder
2 teaspoons ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon ground cinnamon
3/4 teaspoon ground ginger
2 cups unsalted shelled pistachios
2 tablespoons olive oil

Steps:

  • Line a shallow baking pan with wax paper or parchment paper.
  • Stir together sugar, salt, and spices in a small bowl.
  • Cook pistachios in oil in a 12-inch nonstick skillet over moderate heat, stirring occasionally, until a shade darker, about 5 minutes.
  • Stir sugar mixture into nuts and cook over moderate heat, stirring constantly, until sugar begins to melt and coats nuts evenly, 2 to 3 minutes. Immediately transfer nuts to baking pan and cool.

Spiced Chicken with Spaghetti Squash, Pomegranate, and Pistachios image

Spice-rubbed chicken legs get roasted alongside spaghetti squash and onion for an easy sheet-pan dinner that's bursting with bright, comforting flavors.

1 medium spaghetti squash (2-2 1/2 pounds), halved lengthwise, seeded
1 1/2 teaspoons kosher salt, divided
1 medium red onion, peeled, quartered
2 teaspoons ground turmeric
1 1/2 teaspoons ground allspice, divided
1/4 teaspoon cayenne pepper, divided
4 chicken legs (thigh and drumstick)
4 tablespoons olive oil, divided
2 tablespoons fresh lemon juice
1 tablespoon pomegranate molasses (see cooks' note)
1/2 cup roasted salted pistachios, coarsely chopped
1/3 cup pomegranate seeds
1/4 cup coarsely chopped dill, plus more for serving
1/4 cup coarsely chopped mint, plus more for serving

Steps:

  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
  • Sprinkle each half of squash with 1/4 tsp. salt, then place facedown on prepared baking sheet along with onion quarters.
  • Combine turmeric, 1/2 tsp. salt, 1 tsp. allspice, and 1/8 tsp. cayenne in a large bowl. Add chicken and toss to coat. Arrange chicken skin side up alongside squash and onions on baking sheet. Brush tops of chicken with 1 Tbsp. olive oil. Bake until interior of squash and onions are fork-tender, chicken skin is crispy, and an instant read thermometer inserted into the thickest part of the chicken registers 165°F, 35-45 minutes; if chicken is done before squash, remove from oven and let rest until squash is finished cooking.
  • Meanwhile, whisk lemon juice, pomegranate molasses, and remaining 3 Tbsp. oil, 1/2 tsp. salt, 1/2 tsp. allspice, and 1/8 tsp. cayenne in a large bowl.
  • Finely chop onion quarters and transfer to bowl with dressing. Using a fork, scrape squash crosswise to pull strands from shells into bowl with dressing; discard shells. Add pistachios, pomegranate seeds, dill, and mint and toss to coat.
  • Divide chicken among plates, top with dill and mint, and serve alongside squash mixture.

5 large egg whites
1/2 cup sugar
1 teaspoon thyme leaves
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
4 dashes of Angostura bitters
1 pound unsalted, shelled raw natural pistachios
vegetable oil

Steps:

  • Preheat oven to 350°F. Whisk 5 large egg whites, 1/2 cup sugar, 1 teaspoon thyme leaves, 1/2 teaspoon ground allspice, 1/2 teaspoon ground ginger, 1/4 teaspoon cayenne pepper, and 4 dashes of Angostura bitters in a medium bowl to blend. Fold in 1 pound unsalted, shelled raw natural pistachios. Spread out on a rimmed baking sheet brushed with vegetable oil. Bake, stirring every 10 minutes, until golden brown and beginning to crisp, 30-35 minutes. Let cool on sheet on a wire rack (nuts will crisp as they cool).

1/4 cup garlic oil (recipe below)
2 teaspoons fresh oregano leaves
2 teaspoons fresh rosemary leaves
1/2 teaspoon fennel seed
1/2 teaspoon coriander seed
1/2 teaspoon caraway seed
1/2 teaspoon red chili pepper flakes
2 tablespoons sugar
1/2 teaspoon ground aleppo pepper (or 1/4 teaspoon ground cayenne pepper)
1/2 teaspoon ground smoked paprika
1/2 teaspoon kosher salt
1 lb roasted salted pistachios (in the shell)
1 1/2 cups extra virgin olive oil
6 garlic cloves, peeled

Steps:

  • Make the Garlic Oil: Heat the olive oil and garlic in a small saucepan over medium heat for 5 minutes, stirring to make sure the garlic cloves are coated in oil. Lower the heat to keep warm for an additional 35-40 minutes, moving the garlic around the pan every so often to prevent burning.
  • Let the oil and garlic cool to room temperature. Store, covered, in the refrigerator up to 30 days. Makes 1 1/2 cups.
  • Do not discard the garlic cloves. They are just like roasted garlic and can be used in recipes or spread on toast.
  • Make the Pistachios: Preheat the oven to 400°F Blend the Garlic Oil, oregano, and rosemary in a blender on high speed for 2-3 minutes, until the herbs are fully incorporated. Toast the fennel, coriander, and caraway seeds in a sauté pan over medium heat for 4-5 minutes, shaking the pan often to prevent burning.
  • Transfer the seeds to a spice grinder or a mini food processor, add the chili flakes, and grind to a fine powder.
  • In a mixing bowl, combine the ground seed mixture, sugar, Aleppo pepper, paprika, and salt.
  • Place the pistachios in a roasting pan. Combine the pistachios with the blended oil mixture, add the spice blend, and stir until evenly coated. Roast in the oven for 10 minutes, stirring halfway through. Makes approximately 2 cups. Can be stored at room temperature for three days.

1/4 teaspoon ground nutmeg
Vegetable oil, for brushing
1 large egg white
2 cups raw unsalted walnuts
2 cups raw unsalted pistachios
1 cup dried cranberries
Kosher salt
6 tablespoons sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger

Steps:

  • Mix 1 1/2 teaspoons salt, the sugar, cinnamon, ginger, allspice, cloves and nutmeg in a small bowl; set aside.
  • Preheat the oven to 350 degrees F and brush a rimmed baking sheet lightly with vegetable oil. Whisk the egg white in a large bowl until frothy. Add the walnuts and pistachios. Sprinkle with the prepared spice blend and toss to coat. Spread the nut mixture evenly on the baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes; let cool on the baking sheet.
  • Add the cranberries to the nut mixture; toss to combine.
