Juicy and flavorful beef breakfast sausage is so tasty and filling. You can make several of them ahead of time and quickly reheat each morning.

1 lb. lean ground beef ((85/15))
1 teaspoon Diamond Crystal kosher salt
1/2 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon crushed red pepper
2 tablespoons olive oil

Steps:

  • Place all the ingredients except for the oil in a medium bowl and use clean hands to combine them into a uniform mixture, but don't over-mix.
  • Divide the mixture into four 1/2-inch thick patties. You can also divide it into eight small patties if you wish.
  • Heat the olive oil in a large skillet over medium heat. Add the patties and cook them until browned and cooked through, 4-5 minutes per side.

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes

Steps:

  • Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

1 teaspoon brown sugar
1 small white onion, diced fine
1 tablespoon Grand Marnier
1 garlic clove, minced
1 tablespoon butter

Steps:

  • Dice a small ( 2 inch or smaller ) white onion.
  • Place in a mixing bowl with the ground beef.
  • Add the garlic.
  • Add fennel seed.
  • Add brown sugar.
  • Add grand marnier.
  • Mix all together well.

1 tablespoon brown sugar
2 teaspoons dried sage
2 teaspoons salt
2 teaspoons dried basil
1 teaspoon ground black pepper
1 teaspoon onion powder
¼ teaspoon dried marjoram
⅛ teaspoon crushed red pepper flakes
2 pounds ground beef (75% to 80% lean)

Steps:

  • Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. Place the ground beef in a large bowl; mix the spice blend into the ground beef with your hands until evenly integrated. Refrigerate for 24 hours to let the flavors blend.
  • Divide the ground beef mixture into 8 patties.
  • Place a large skillet over medium heat; cook the patties in the skillet until firm, hot, and cooked in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
