Steps:
- Combine onion, olive oil, and garlic in a large pot over medium heat. Cook and stir for 2 minutes. Add chicken breasts; cook until lightly browned, about 2 minutes per side. Pour in water; bring to a boil.
- Pour yellow rice into the boiling water. Cover and simmer over medium heat until chicken and rice are tender, about 20 minutes. Sprinkle frozen peas on top; cook until thawed, about 2 minutes. Mix up rice.

EASY SPANISH YELLOW RICE
I'm a lazy cook so when I had a craving for my grandmother's yellow rice, I figured out a recipe that would taste the same and be simple. Amounts and ingredients can be changed according to your tastes and it keeps well too! This is a kind of spanish rice that my Domincan grandmother makes, using tumeric instead of saffron to give the rice its color, with peas, shallot/onion, and garlic.

Steps:
- Heat oil in a medium saucepan on medium-high heat.
- Add the shallots and garlic and cook until they start to brown, around 2-3 minutes.
- Add rice, broth, tumeric, and salt. Add frozen peas; I usually add enough to cover the surface of the broth (you can gauge this by adding them little by litte, they usually float to the top). Bring to a boil; this may take a few minutes.
- Reduce heat to medium-low, cover, and simmer until tender and liquid is absorbed, this takes anywhere from 15 to 20 minutes depending on tastes and your stove!
- Sprinkle with fresh cilantro for a little extra flavor.

- Cook rice in oil or butter, stirring, until opaque.
- Add salt, saffron and bouillon.
- Bring to a boil, immediately turn heat to low, cover, and simmer 16-20 minutes, until rice is tender. (If after 16-18 minutes you find more liquid is needed, add water as necessary, up to 1 cup maximum).

BEEF & YELLOW SPANISH RICE STUFFED BELL PEPPERS
Another recipe from my MIL. Very simple, fast, and tasty. I've listed the spices I used, but honestly, I have no idea how much of each spice. Anywhere between 5-8 "shakes" of each. Season to your taste! Or substitute sausage for the ground beef.

Steps:
- Set oven to broil.
- Brown beef (or sausage) in a large pan with the spices (if using sausage, don't add the spices).
- While beef is browning, prepare yellow rice as instructed on bag or box (or use your own recipe) in another large pan.
- While beef and rice are cooking: rinse, halve, and seed your bell peppers and place them hollowed-side up in a 13 x 7 inch baking dish.
- When beef is done browning, add the beef, diced tomatoes, and 1.5 cups of cheese in with the rice pan and stir till thoroughly mixed.
- Put a heaping spoonful of rice mixture into each bell pepper. They'll probably overflow --
- Sprinkle remaining shredded cheese over the top of the stuffed peppers.
- Broil the stuffed peppers until cheese on top is just melted and bubbly (about 15 minutes).
- Enjoy!
SPANISH YELLOW RICE (ARROZ AMARILLO)
This is an easy recipe to follow, and it's a pretty standard recipe for Spanish Yellow Rice.

Steps:
- 1. Stir saffron and turmeric into the chicken broth, and set it aside while you prepare the onion.
- 2. Heat the oil in a heavy-duty saucepan over medium. Add onion and sauté until the onion pieces are soft and just start to brown around the edges.
- 3. Add the rice, and stir to coat evenly with the oil. Season with salt and pepper as desired. Add the chicken broth, and bring the mixture to a boil. Once it reaches a brisk boil, turn heat to low, cover pan and let the rice simmer gently for 15 minutes.
- 4. After 15 minutes, turn off heat and let the rice steam for 10 minutes, but do not remove the lid.
- 5. After the rice has steamed for 10 minutes, remove the lid and fluff the rice with a fork. Serve immediately.
SPANISH CHICKEN WITH YELLOW RICE

Steps:
- Season chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Heat oil in large Dutch oven over medium-high heat, and brown chicken (about 4 minutes per side), then set aside.
- In same dutch oven, add green pepper, celery, onions and garlic; sauteing 5 minutes, stirring occasionally until vegetables have softened.
- Add cumin, tomatoes with juice, broth, remaining 1 teaspoon salt and 1/4 teaspoon pepper.
- Return chicken to pot, stirring to cover with sauce.
- Bring to a boil; reduce heat to medium, cover and simmer 20 minutes.
- Uncover and cook 20 minutes more (or until chicken is done).
- Combine flour and wine in small bowl. Stir into pot and cook 5 minutes.
- Meanwhile, prepare rice by bringing water to boil in medium saucepan; then stirring in rice, salt, and turmeric.
- Reduce heat; cover and simmer 20 minutes until liquid is evaporated and rice is tender.
- Serve chicken with rice.
SPANISH YELLOW RICE

- Bring water and tumeric to a low simmer in order to incorporate together
- Melt butter in a large pan
- Add peppers and onion to butter. Saute until onion is translucent.
- Add uncooked rice and olive oil. Stir rice until the olive oil, peppers and onion become golden colored.
- Add Chicken/Beef broth, Tumeric-Water mixture, and Salt
- Bring to a slow boil until all liquid is incorporated. Stir occasionally.
- If adding peas, cook the peas and then add into rice mixture
- Serve with chicken, steak or shrimp.

- Boil 2 cut up chicken until done. Pick chicken from bone into a bowl. Melt butter in a large pan, add rice. Cook until golden brown, add onion, chicken & bell pepper. Saute for a few minutes. Add broth then add yellow rice seasoning. Salt & pepper to taste. Cover and simmer until water is cooked away and rice is tender.
