2 tablespoons olive oil
1-2 shallots (thinly sliced (may substitute yellow onion))
3-4 cloves garlic (minced)
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 cup red wine (such as Merlot, Cabernet Sauvignon)
6 oz. tomato paste
14.5 oz. petite diced tomatoes
22 oz. crushed tomatoes
fresh basil, oregano, and/or parsley for garnish
parmesan cheese for garnish

Steps:

  • In a large skillet or Dutch oven, saute shallots and garlic in olive oil over medium heat until shallots have softened and become translucent.
  • Add dried basil and oregano and saute one minute longer.
  • Add red wine to the pan, scraping the browned bits from the bottom of the pan. Bring the wine to a simmer until reduced in half - about 3-4 minutes.
  • Add tomatoes and tomato paste. Bring to a boil over medium-high heat. Reduce heat to low, cover with a lid, and simmer for about 30 minutes.
  • Taste the sauce and season with salt and pepper as needed. Add 1-2 teaspoons of sugar and simmer a couple minutes longer to take some of the acidity out of the tomatoes if desired.

1 (28 ounce) can crushed tomatoes
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 tablespoon minced garlic
2 teaspoons white sugar
2 teaspoons dried parsley
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon ground black pepper
1 ½ tablespoons capers
1 pinch crushed red pepper flakes

Steps:

  • In a large saucepan combine crushed tomatoes, diced tomatoes, tomato sauce, minced garlic, sugar, parsley, garlic powder, salt, oregano, basil, and ground black pepper. Add capers and crushed red pepper if desired. Cover. Bring to a boil.
  • Lower heat and simmer, with cover, for 45 to 60 minutes.
  • As simmering time nears, in a large pot with boiling salted water cook spaghetti until al dente.
  • Toss spaghetti with cooked sauce. Serve warm.

1 (28 ounce) can plum tomatoes, juices included
1 (6 ounce) can tomato paste
3/4 cup dry red wine

1/2 teaspoon coarse salt
1/8 teaspoon crushed red pepper flakes (to taste)

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. 1 cup chopped onions
1 teaspoon fennel seeds

¾ cup dry red wine

¾ cup chicken broth, or more as needed
1 tablespoon sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary, crushed

1 large bay leaf
freshly ground black pepper to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil until hot, then add mushrooms, onions, and fennel seeds. Cook, stirring occasionally, until softened, about 3 minutes. Add garlic, and cook for 1 more minute. Pour in red wine, and simmer until the alcohol has cooked off, about 3 minutes.
  • Add tomatoes, tomato paste, and chicken broth to the pot and bring to a simmer. Stir in sugar, basil, oregano, rosemary, salt, crushed red pepper flakes, bay leaf, and pepper. Turn off Saute function.
  • Close and lock the lid and set the pressure valve to sealing. Select high pressure according to the manufacturer's instructions; set timer for 10 minutes. Allow 10 minutes for pressure to build.
  • When time is up, carefully release pressure using the natural-release method according to manufacturer's instructions for 5 minutes. Unlock and remove the lid.
  • Taste the sauce and adjust seasonings, if necessary. If the sauce is too thick, just stir in a little chicken broth or water until you reach your desired consistency.

1 lb spaghetti
salt, to taste
fresh ground pepper, to taste
1/2 cup extra virgin olive oil
1 tablespoon minced garlic
1 teaspoon red hot red pepper flakes (to taste)
1 (750 ml) bottle light red wine (like Chianti Classico or a good red Zinfandel...a quality wine, but not necessarily expensive)
1 tablespoon butter

Steps:

  • Bring a large pot of water to a boil and salt it. Put the oil, garlic and hot pepper in a large, deep skillet.
  • When the water boils, add the pasta; turn the heat under the skillet to high. Cook the pasta as usual, stirring. As soon as the garlic begins to brown, sprinkle it with salt and pepper to taste and add three-quarters of the bottle of wine (a little more than two cups); bring to a boil and keep it there.
  • When the pasta beings to bend--after less than five minutes of cooking--drain it and add it to the wine mixture. Cook, stirring occasionally, adding wine a little at a time if the mixture threatens to dry out completely.
  • Taste the pasta frequently. When it is done--tender but with a little bite--stir in the butter and turn off the heat. When the butter glazes the pasta, serve it immediately.
