I'm not really sure where I got this recipe. It's written in my handwriting on a 3x5 card that's stained with soy sauce. This makes a good marinade for beef or pork.

1/2 cup soy sauce
1/2 cup water
2 tablespoons oil
2 tablespoons lemon juice
1 tablespoon brown sugar, packed
1 garlic clove, minced
1/4 teaspoon red pepper

Steps:

  • Mix all ingredients well.
  • Pour over beef or pork and marinate 8 hours or overnight.
  • Grill or broil meat.
  • Leftover marinade should be discarded.

Honey and Soy Sauce Marinade image

This is a lovely marinade for barbecued or fried chicken. I usually use it for chicken breasts cut into not too thin stripes which I cook on a table barbecue. Most raclette gadgets in Switzerland also include a barbecue facility. In the winter I like to invite people for a raclette and table barbecue evening and the marinated chicken stripes are always part of it. Everybody loves them! I found this marinade in a chicken cooking book and there they recommend it in particular for chicken thighs meat (bones removed). I'm sure it will be nice with whatever part of chicken you fancy. Just remember that the bigger the parts you want to fry/barbecue, the longer the meat should be in the marinade. You may even want to marinate your meat overnigt.

90 g honey
60 ml soy sauce
1 garlic clove, crushed
2 tablespoons sake (rice wine)
1/2 teaspoon Chinese five spice powder
500 g chicken meat (1 lb)

Steps:

  • Mix all ingredients for marinade.
  • Pour marinade over chicken meat. Make sure every part of meat is covered.
  • Refrigerate for at least 2 hours or overnigt.
  • Try this: You may want to put marinade and meat into a plastic bag, tie the bag together and turn it from time to time while in the fridge.

I found this on the internet while looking for dipping sauces to use for a fondue party. YUMMY! Tasted great with shrimp, chicken, etc. We found that we like soaking the shrimp for awhile in the sauce after cooking it so I think that I will also try this as a marinade sometime soon.

  • Combine ingredients in a ziploc bag add steaks, shake Marinate at least 30 minutes, overnight if possible, turn/shake several times Remove steaks, pat dry Medium rare: Grill-high heat-4 min/side Remove to cutting board Let meat rest for 10 minutes Slice thinly & diagonally

1 1/2 lb. thick pork loin chops, fat trimmed and cut into pieces about 1 inch by 2 inches
Marinade Ingredients:
1/4 cup red wine vinegar
2 T soy sauce
2 T vegetable oil (I used canola oil)
1 1/2 tsp. sesame oil
1 T lime juice
2 T smooth peanut butter (use natural peanut butter without added sugar for South Beach Diet)
2 tsp. finely minced garlic
1/2 tsp. red pepper flakes (use more or less to taste)

Steps:

  • Trim visible fat from pork chops and cut into strips about 1 inch by 2 inches. (I cut each trimmed pork chop into about 4 crosswise strips.) Combine red wine vinegar, soy sauce, vegetable oil, sesame oil, lime juice, and peanut butter, then whisk until peanut butter is mixed into the other liquids. (This will take a little stirring to get it smooth.) When the mixture is well-combined, whisk in the finely minced garlic and red pepper flakes. Put pork cubes into Ziploc bag or plastic container with a snap-on lid, then pour in marinade. Let the pork strips marinate 6-8 hours in the refrigerator, turning it a few times if you're home. When you're ready to cook, remove the pork strips from the refrigerator and drain the marinade. (I used a colander placed in the sink to drain the pork pieces.) Thread kabobs onto skewers, folding each piece over so they won't spin when they're cooking. Let the pork pieces come to room temperature while you oil the grill with olive oil or non-stick grilling spray and preheat grill to medium-high. (You can only hold your hand there 2-3 seconds at that heat.) Grill kabobs, turning several times with tongs so you get nice grill marks on each side. Kabobs are done when the pork feels firm, but not hard to the touch or when meat reaches a temperature of 160F/70C on an instant-read meat thermometer. We cooked our kabobs about 15 minutes, but actual cooking time will depend on the temperature of your grill and temperature of the meat when it's put on the grill. Serve hot.

1 lb steak (I use sirloin)
mushroom (2-4 Portobello caps or any mushroom you prefer)
1/2 sweet onion
2 tablespoons soy sauce (I use Pearl River Bridge Superior Light Soy Sauce)
2 tablespoons port wine
1 garlic clove (crushed)
1/2 tablespoon flour (to coat the mushrooms)
2 tablespoons olive oil

Steps:

  • Marinate the steak in the soy sauce, port wine, and garlic for at least one hour.
  • Coat the mushrooms with flour.
  • When ready to cook, pour olive oil into a pan and pan fry the steak, save remaining sauce from marinade. When steak is cooked to your preference, take it out of pan and place on plate. Pour the remaining marinade into the pan and cook the mushrooms and sliced onions for a couple of minutes. Pour the mushroom/onion/sauce mixture over the steaks, serve with rice/potatoes/veggies, or whatever you prefer.

1/2 cup soy sauce
2 tablespoons grated fresh ginger
3 tablespoons mirin
1 pound small squid (bodies and tentacles), cleaned

Steps:

  • Mix together the soy sauce, ginger, and mirin in a large bowl to make the marinade. Reserve 1/2 cup of the marinade and set aside. Lay the squid in the remaining liquid, gently turning 4 times to coat all over. Marinate the squid for 10 minutes at room temperature, turning once.
  • Preheat a grill to hot. Grill the squid for about 4 minutes (5 minutes if they're larger than 1 ounce apiece). Every 30 seconds flip the squid and brush on the reserved marinade. The squid will turn from translucent to white when they're ready, becoming tender and releasing a rich aroma. Be careful not to overcook; squid turns rubbery if grilled too long. Serve immediately.

1/4 cup peanut oil or 1/4 cup toasted sesame oil
1/4 cup tamari or 1/4 cup soy sauce
1/4 cup marsala wine

1 tablespoon gingerroot, grated
1/2 teaspoon Chinese five spice powder

Fantastic for chicken wings my friend gave it to me about 30 years ago, it was also on the LaChoy Soy Sause Bottle Can also do stake tips, the wings are best. The longer you marinade the wings the more the flavor stinks in I try to let marinade for three days. I over cook them a little because the husband likes them a bit dry.

1/2 c soy sauce (la choy is best )
1/2 c water
1 Tbsp thrown sugar (i use dark the kind you pack down)
1 Tbsp oil
1 tsp tea garlic powder
1/4 tsp black pepper
you can add crushed red pepper (hot) to your liking

Steps:

  • 1. Mix all ingredients in bowl large enough for your chicken wings
  • 2. I cut the tips off the chicken wings, and I separate the wings at the joint
  • 3. Marinate at least 4 hours, the longer you let chicken marinate the better, I marinate about 3 days
  • 4. Spread on baking sheet or pan bake bake on 350 to 375 until the doneness you like
