This recipe uses southwest ingredients to make a tasty and tender porkchop that is still low in calories. It is also easy to put into the marinade in the morning and simply cook later in the day for dinner.

2/3 cup fat-free Italian salad dressing
2/3 cup salsa
2 tablespoons lime juice
2 tablespoons fresh cilantro, minced
6 garlic cloves, minced
1/2 cup red onion, minced
4 teaspoons lime zest
1/2 teaspoon hot pepper sauce (to taste)
6 boneless pork loin chops
1 avocado, chopped

Steps:

  • In a bowl, combine the first eight ingredients. Pour 1/2 cup into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade.
  • Drain and discard marinade from chops. Place on a broiler pan rack. Broil 4 inches from the heat for 7 minutes on each side or until juices run clear. Baste with reserved marinade.
  • Serve topped with remaining marinade and garnished with avocado and cilantro.

4 teaspoons dried minced onion
2 teaspoons ground cumin
1 teaspoon cornstarch
1 teaspoon chili powder
1 teaspoon dried minced garlic
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
6 bone-in pork loin chops (about 3/4 inch thick and 7 ounces each)
1/4 cup barbecue sauce
2 tablespoons lemon juice

Steps:

  • In a small bowl, combine the first eight ingredients; rub over pork chops. In a large resealable plastic bag, combine barbecue sauce and lemon juice; add pork chops. Seal bag and turn to coat; refrigerate for 1-2 hours., Discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chops, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before serving.

4 bone-in center-cut pork loin chops, 3/4 inch thick (about 2 lb)
1/2 tsp salt
1 tsp mexican seasoning
1/2 c salsa
1 c frozen whole kernel corn
2 can(s) (15 oz each) pinto beans, drained, rinsed
chopped fresh cilantro, if desired

Steps:

  • 1. Heat 12-inch nonstick skillet over medium-high heat. Sprinkle pork chops with 1/4 teaspoon of the salt and 1/2 teaspoon of the seasoning. Cook pork chops in skillet 4 to 6 minutes, turning once, until brown.
  • 2. In 3- to 4 1/2- quart slow cooker, mix remaining 1/4 teaspoon salt, remaining 1/2 teaspoon seasoning, the salsa, corn and beans until well blended. Top with pork chops, overlapping as necessary, pressing gently into bean mixture.
  • 3. Cover; cook on Low heat setting 4 to 5 hours.
  • 4. Remove pork chops to serving platter. Cover to keep warm. With fork or potato masher, mash beans slightly until slightly thickened. Serve pork chops over beans. Sprinkle with chopped cilantro.

3 teaspoons southwestern seasoning mix
2 tablespoons chopped fresh cilantro
2 teaspoons butter or margarine, melted
1 teaspoon lime juice
2 ears frozen corn-on-the-cob

Steps:

  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer. Sprinkle pork chops with 2 teaspoons of the seasoning mix. Let stand at room temperature no more than 5 minutes.
  • Meanwhile, in small bowl, mix cilantro, melted butter, lime juice and remaining 1 teaspoon seasoning mix. Coat corn with 1 tablespoon cilantro mixture; reserve remaining mixture. Wrap each ear of corn in heavy-duty foil, sealing edges well and leaving room for heat expansion.

2 tablespoons taco seasoning, divided
2 cups uncooked instant rice
4 boneless pork loin chops (approx 1 pound)
1/2 bell pepper, chopped
1/4 cup green onion, sliced and divided
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained
1 1/2 cups shredded part-skim mozzarella cheese
sour cream, sliced black olives, salsa, cilantro, optional garnishes

Steps:

  • Preheat oven to 450 degrees.
  • Place uncooked rice in bottom of 9x9 baking dish or casserole dish with a lid. Sprinkle 1 tablespoon taco seasoning over rice.
  • Place pork chops on rice; sprinkle chops with remaining 1 tablespoon seasoning. Arrange green pepper slices and 1/2 the sliced green onions over pork chops.
