This rich and decadent baked pasta is a Southern Black staple for holidays and special occasions. Steering away from the standard stovetop mac, this version includes three kinds of cheese and bakes up like a casserole with a crispy, golden top. The addition of eggs makes it similar to a cheesy, savory custard. Warning: This is not diet food!

Kosher salt
1 pound elbow macaroni
5 large eggs
3 1/2 cups heavy cream
2 1/2 teaspoons Cajun seasoning
1/2 teaspoon ground mustard
1/4 teaspoon ground nutmeg
1 pound sharp Cheddar, shredded
1 pound whole-milk mozzarella, shredded
1 pound Gouda, shredded

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
  • Cook the macaroni according to the package directions until 3 minutes less than fully cooked. Drain and rinse under cold water until cooled; drain well. Add the cooked pasta back to the pot.
  • Put the eggs, heavy cream, Cajun seasoning, ground mustard, nutmeg and a big pinch of salt in a medium bowl and whisk to combine. Pour over the cooked pasta and stir to combine.
  • Toss together the Cheddar, mozzarella and Gouda in a large bowl. Add the cheeses to the pot and stir to evenly combine. Transfer the mixture to a 9-by-13-inch baking dish.
  • Bake until the center of the mac and cheese is set and the top is golden brown, 60 to 70 minutes. Let cool about 10 minutes before serving.

It is an adapted recipe from strong Southern women (Patti LaBelle, Mama Jean, and my son's girlfriend Ashley)...all wonderful foodies! I make this a day ahead.

1 (16 ounce) package whole wheat elbow macaroni
½ cup dried minced onion
1 pound cooked and cubed lobster meat
1 pound cooked shrimp, tails removed
1 (12 ounce) can evaporated milk
1 cup heavy cream
1 tablespoon all-purpose flour, sifted
3 eggs
1 stick butter
2 tablespoons all-purpose flour
1 pound shredded sharp Cheddar cheese
1 pound shredded Swiss cheese
1 pound shredded Monterey Jack cheese
1 stick butter
1 tablespoon dried onion seasoning (such as Pampered Chef® Three Onion Rub)
1 teaspoon herbes de Provence
2 cups crushed buttery round crackers (such as Ritz®)
1 stick butter, sliced into pats

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni and 1/2 cup dried onion in the boiling water, stirring occasionally, until macaroni is tender yet firm to the bite, about 8 minutes. Drain.
  • Place lobster and shrimp in a colander. Pour the cooked pasta and onions over shellfish; let drain.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Warm evaporated milk and cream slowly in a saucepan over medium-low heat. Whisk in flour. Whisk eggs together in a small bowl.
  • Cook sauce until small bubbles form. Add sauce very slowly, 1/4 cup at a time, to the bowl with the eggs, being careful not to cook and scramble the eggs. Slowly mix the egg-cream mixture back into the pan. Continue cooking on medium-low heat, stirring occasionally, until thick and smooth, 5 to 10 minutes.
  • Melt 1 stick of butter in the pot used to cook the pasta over medium heat. Add flour; cook until roux thickens and turns caramel in color, about 5 minutes. Stir in Cheddar cheese, Swiss cheese, and Monterey Jack cheese. Cook, stirring constantly, until mostly melted, about 4 minutes. Pour in the cream sauce and stir until smooth.
  • Stir pasta, lobster, and shrimp into the cheese and cream sauce to coat completely. Pour mac and cheese into a 9x11-inch baking dish.
  • Melt another stick of butter in the saucepan used to make the sauce. Add onion seasoning and herbes de Provence; stir. Add crackers. Cook and stir over medium heat until coating mixture is lightly toasted, about 5 minutes.
  • Cover mac and cheese with thin pats of butter. Top with the cracker coating.
  • Bake in the preheated oven until top is crispy and cheeses are melted, about 1 hour.

1/2 pound elbow macaroni
2 cups shredded sharp cheddar (8 ounces)
2 large eggs
1 cup half-and-half
1 small garlic clove, minced
2 slices white sandwich bread, torn

Steps:

  • Set a large pot of salted water to boil. Preheat oven to 350. Butter four 10-ounce ramekins. Cook pasta 3 minutes short of al dente; drain.
  • In a large bowl, whisk together 1 1/2 cups cheddar, eggs, half-and-half, garlic, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Add pasta, and stir to combine; divide among ramekins.
  • In a food processor, pulse bread and melted butter until coarse crumbs form; season with salt and pepper. Dividing evenly, top pasta mixture with 1/2 cup cheddar, then sprinkle with breadcrumbs. Place ramekins on a rimmed baking sheet. Bake until mac and cheese is golden and bubbling, about 20 minutes. Let stand 5 minutes before serving.

4 pounds Cheddar cheese, sliced
1 ½ cups milk
5 eggs, or more to taste
1 tablespoon yellow mustard
ground black pepper to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Layer some of the macaroni in a 5-quart baking dish; top with a layer of Cheddar cheese. Continue layering macaroni and Cheddar cheese into the dish, ending with a Cheddar cheese layer.
  • Beat milk, eggs, and mustard together in a bowl; pour over macaroni mixture, ensuring milk mixture gets to all of the macaroni.

3 tablespoons unsalted butter
3 tablespoons all-purpose flour
3 cups whole milk
3 cups coarsely grated American cheese, divided

1 1/4 teaspoons mustard powder
1/8 teaspoon paprika

Steps:

  • Preheat oven to 350°F. Cook macaroni in a large pot of boiling salted water, stirring occasionally, until noodles are very tender. Drain; transfer to a 3-quart baking dish.
  • Meanwhile, melt butter in a medium pot over medium heat. Whisk in flour and cook, whisking, until pale golden, about 2 minutes. Whisking vigorously and constantly, gradually add milk. 1 pound elbow pasta uncooked (regular, not gluten-free or quick-cook pasta)
2/3 cup low-fat milk plus 1/3 cup of heavy cream (or 1 cup of half and half)
12 ounces evaporated milk
3 cups extra-sharp cheddar cheese (12 ounces)
1 cup shredded Monterrey Jack or American cheese (4 ounces)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dry mustard
1/4 tsp garlic powder
1/4 cup butter, cubed

Steps:

  • Prepare the slow cooker with non-stick spray. This recipe is for a 6-quart.
  • Boil the pasta so it's still a bit firm.
  • Add the pasta to the crockpot along with the milk, cheese, salt, pepper, mustard, and garlic. Stir that all up and make sure the pasta is coated completely. Drop in the cubes of butter and spread them out over the top.
  • Cover and cook on low heat for 1.5 to 2 hours. Stir gently a few times after the first 45 mins to an hour. Each crockpot is a little different so cook to the consistency you like.
  • When done, the pasta will be tender and the liquid will be thick and creamy. Add any remaining cheese on top to melt while sitting if desired.
  • Note: the cheese gets thicker the longer it sits before serving.
