This easy recipe pleasantly proves you can dress up regular rice with a few simple additions. Best of all, it can simmer while you're preparing the rest of the meal. These delicately lemon-flavored grains go nicely with fish.

Number Of Ingredients 8

1 cup water
1 cup chicken broth
2 tablespoons lemon juice
2 teaspoons butter
1 cup uncooked long grain rice
1/4 teaspoon dried basil
1/8 to 1/4 teaspoon grated lemon zest
1/4 teaspoon lemon-pepper seasoning

Steps:

  • In a medium saucepan, bring water, broth, lemon juice and butter to a boil. Stir in rice, basil and lemon zest. Reduce heat; cover and simmer for 20 minutes. Let stand 5 minutes or until the water is absorbed. Before serving, sprinkle with lemon-pepper.

South Indian Lemon Rice image

This South Indian lemon rice dish is easy to throw together with leftover rice. It is best served with raita (yogurt salad) and poppadums.

1 teaspoon coriander seeds
2 tablespoons vegetable oil , or canola or sunflower cooking oil
1 teaspoon mustard seeds
3 to 4 curry leaves
2 green chiles, slit lengthwise
1 (1-inch) piece ginger , grated
1/2 cup peanuts, roasted and unsalted
1 teaspoon turmeric powder
Juice of 2 lemons
2 cups cooked basmati rice , or leftover rice
Salt, to taste

Steps:

  • Gather the ingredients.
  • Gently roast and then coarsely grind the coriander seeds into powder. Set aside.
  • Heat the oil in a pan and add the mustard seeds , curry leaves, and green chiles. Fry the mixture until the splattering stops.
  • Add the ginger and peanuts. Fry the mixture for another minute.
  • Add the turmeric powder and turn off the burner.
  • Add the lemon juice and mix well.
  • Add the rice, roasted coriander powder, and salt to taste and mix thoroughly. Enjoy.

From Nov 2007. This is a perfect side dish and the tart lemon peel adds a light citrusy note. Use basmati rice for the best flavor.

1 garlic clove
2 cups chicken broth
1/2 teaspoon salt
1 cup basmati rice
1 tablespoon grated lemon rind

Steps:

  • Slightly smash garlic clove using flat side of knife. Stir together garlic, broth, butter and salt in a large saucepan; bring to a boil over high heat.
  • Stir in rice; reduce heat to low, and cook, covered, 20 minutes or until broth mixture is absorbed and rice is tender.
  • Remove and discard garlic; stir in lemon rind using a fork.
  • For Lemon-Dill Rice: Proceed with recipe as directed, stirring 1 teaspoon dried dill into cooked rice with lemon rind.
