¼ cup unsweetened cocoa powder
¼ cup all-purpose flour
3 egg yolks
1 ⅓ cups white sugar
1 (12 fluid ounce) can evaporated milk
3 tablespoons butter
1 (9 inch) pie shell, baked
3 egg whites
⅛ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift together the cocoa powder and the flour and pour them into a saucepan. Whisk the egg yolks and 1 1/3 cups sugar. Gradually add the evaporated milk, whisking constantly; slowly pour the milk mixture into the saucepan, whisking until combined.
  • Cook over medium heat, stirring constantly with a flat-bottomed wooden spoon or spatula, until the mixture begins to thicken and coats the back of the spoon, about 15 minutes. Remove the custard from the heat and stir in the butter until melted. Pour the filling into the baked pie crust.
  • To make the meringue topping: Combine the egg whites and cream of tartar in a clean glass or metal bowl; beat with an electric mixer until foamy. Gradually add sugar, a tablespoon at a time, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Spread the meringue over the chocolate filling.
  • Bake in the preheated oven for 10 minutes, or until the tips of the meringue peaks are golden brown.

This is absolutetly yummy!! I took this to several work functions and potlucks and this was always one of the first things gone!! I grew up eating pecan pie but this particular recipe comes from one of those little recipe booklets, I can't remember which one, with my tweaking of it of course!

3 eggs
1 cup sugar
1 cup dark corn syrup
2 tablespoons butter, melted with
2 ounces semisweet chocolate
1 teaspoon vanilla
1 1/2 cups pecan halves, toasted*
2 tablespoons Bourbon (or any liqour you like)
1 pie crust

Steps:

  • Preheat oven to 350 degrees. In bowl, or blender is how my mom always made pecan pies, beat eggs with fork. Add sugar, corn syrup, butter w/chocolate, vanilla, and Bourbon. Stir till well blended. This is why the blender is a great and easy idea.
  • Pour into pie crust. Stir pecans into mixture, till all are incorporated, or all covered with goo :).
  • Bake for 50-55 min, or when knife inserted in center comes out clean.
  • *To toast pecans put into dry skillet on medium-high heat. shake skillet around till they become brown and fragant and you can really notice their color change. This will take about 7-10 minute.

This is an unusual pecan pie because it uses only brown sugar--no corn syrup. This gives it a wonderful consistentcy, and this is my most requested dessert of all time. I always have to take 2 extras to family gatherings so everyone can take some home. I got the original recipe from my aunt, but I have added the cocoa, more pecans, more eggs, the alcohol and changed other ingredient amounts over the years, so I consider it my creation now.

3 9-inch pie shells
3/4 cup butter
6 large eggs
2 (16 ounce) boxes light brown sugar
3 tablespoons unsweetened cocoa powder
1/3 cup evaporated milk
1/4 teaspoon salt
2 teaspoons vanilla extract
2 tablespoons Tia Maria or 2 tablespoons Amaretto
2 cups chopped pecans
18 pecan halves, for decoration

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter and set aside.
  • Beat the eggs in a large mixing bowl.
  • Sift the brown sugar into the eggs (yes, sift) and mix well.
  • Add the remaining ingredients except for the pecan halves and mix thoroughly.
  • NOTE: If you don't want to add the 2 Tablespoons of alcohol, then increase the vanilla extract amount to 1 Tablespoon.
  • Distribute the pie filling evenly between the 3 pie crusts, and decorate the tops of each pie with 6 pecan halves in a pinwheel pattern.
  • Bake at 400 degrees for 15 minutes then reduce the heat to 350 degrees and bake for another 35 minutes.

1/4 cup butter
1 2/3 cups evaporated milk
1 1/2 cups sugar
3 tablespoons cornstarch
1/8 teaspoon salt
2 eggs
1 teaspoon vanilla
1 unbaked 9-inch pie shell, fluted
1 1/3 cups baker's angel flake coconut
1/2 cup chopped pecans

Steps:

  • Melt chocolate with butter over low heat, stirring until blended. Remove from heat.
  • Gradually blend in milk.
  • In a seperate bowl mix sugar, cornstarch, and salt thoroughly. Beat in eggs and vanilla. Gradually blend in chocolate mixture.
  • Pour into pie shell.
  • Combine coconut and pecans; sprinkle over filling.
  • Bake in moderate oven (375*) until top puffs and begins to crack-about 50 minutes. (Center of pie should be soft.).
  • Cool at least 3 hours before serving.

1 unbaked pie crust (regular size, not deep dish)

Steps:

  • Prepare brownie mix according to package directions. Stir in chocolate chips.

1/4 cup butter or margarine
2 cans (5 oz. each) evaporated milk
1 cup sugar
3 Tbsp. cornstarch
1/8 tsp. salt
2 eggs
1 tsp. vanilla
1 frozen deep-dish pie crust (9 inch), thawed
1 cup BAKER'S ANGEL FLAKE Coconut
1/2 cup chopped pecans

Steps:

  • Heat oven to 375°F.
  • Cook chocolate and butter in medium saucepan on very low heat until melted, stirring constantly. Remove from heat; gradually add milk, stirring constantly until well blended.
  • Combine sugar, cornstarch and salt in medium bowl. Whisk in eggs and vanilla. Gradually whisk in chocolate mixture. Pour into crust; sprinkle with coconut and nuts. (Filling will almost completely fill crust.)
  • Bake 45 min.or until top is puffed and browned, covering pie loosely with foil after 30 min. (Filling will be soft, but will set while cooling.) Cool 15 min. Refrigerate 4 hours.
