BREAD PUDDING WITH SOUTHERN BOURBON SAUCE

3 cups stale French bread, cut in 3/4-inch cubes
2 cups milk
2 eggs
1 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
4 tablespoons butter, melted and slightly cooled
1/2 cup sultana raisins
2 egg yolks
1 stick butter, not margarine
1 cup sugar
1/3 cup bourbon whiskey, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Place stale bread in a bowl with milk and squeeze the bread with your hand until well saturated with milk.
  • With an electric mixer on high speed in a separate bowl, beat eggs with sugar until thick and pale. Stir in the vanilla, cinnamon, nutmeg, butter and raisins to the egg mixture. Add the soaked bread crumbs to the egg mixture and stir well. Let stand for 10 minutes. It is important to allow enough time for the bread to absorb the egg mixture or the bread crumbs will float to the top during baking, leaving a layer of custard on the bottom of the dish.
  • Transfer the mixture to a greased baking dish. Bake until firm, or until a knife inserted in the middle comes out clean, about 45 to 50 minutes. Let it slightly cool in the dish.
  • Meanwhile, near the end of the baking time, make the sauce. With an electric mixer, beat egg yolks until thick and pale. In a saucepan, melt the butter and sugar. Pour the butter and sugar mixture over the egg yolks, beating constantly with the mixer, until well thickened. Stir in bourbon by hand. Serve the pudding warm with vanilla ice cream if desired. Pass the hot bourbon sauce separately.

¼ cup raisins

⅛ teaspoon freshly ground nutmeg, or to taste
2 tablespoons melted butter

1 pinch salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a 9-inch square baking dish.
  • Spread half of the bread in the bottom of the prepared baking dish. Top with raisins, cinnamon, nutmeg, and remaining bread. Sprinkle with more cinnamon and nutmeg and drizzle with melted butter.

⅓ cup raisins
1 ½ cups unsweetened applesauce
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ cups milk
½ cup white sugar
¼ cup buttermilk
2 eggs, beaten
1 teaspoon vanilla extract
1 dash ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread bread cubes and raisins in a 9x13-inch casserole dish. Mix applesauce, cinnamon, and nutmeg together in a small bowl. Pour mixture over bread.

My Grandma's family is from the south so that where she got it from (and we all know that there's no food like southern cooking, lol !!!) 8 slices stale bread
4 large eggs
3/4 cup brown sugar (firmly packed in)
1 teaspoon cinnamon
1 cup raisins (optional)
1/4 cup butter
2 cups evaporated milk (also called 'carnation' or 'condensed' milk)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter (set aside).
  • Cut the slices of bread into cubes (set aside.
  • Beat eggs and add the brown sugar, vanilla extract, 1/2 teaspoon of cinnamon, and evaporated milk (MIX WELL TOGETHER).
  • Lightly grease or butter aluminum pan or casserole baking dish.

2 loaves Raisin Cinnamon Bread
8 eggs plus 2 egg whites
2 cups milk
2 cups heavy cream
1 cup sugar or vanilla sugar
2 tablespoon Madagascar vanilla
2 tablespoons Grand Marnier
1 tablespoon cinnamon
1 lemon juiced and zested
1 cup dried cherries and raisins
1/4 cup melted butter, for baking dish
2 cups bread crumbs from crusts
Bourbon sauce, recipe follows
1/2 cup brown sugar
1/2 stick cold butter, cut into cubes
2 egg yolks
1 stick butter
1 cup dark brown sugar
1 tablespoon vanilla
1 cup bourbon

Steps:

  • Preheat oven to 350 degrees. Remove crusts from bread and reserve. Cut bread slices into cubes. In a large bowl, beat eggs well. Add milk, cream, sugar, vanilla, Grand Marnier and mix well. Add cinnamon, juice, and lemon zest. Stir in cherries and raisins. Add bread cubes and stir until well coated. Let stand 30 minutes, stirring often. If mixture is soupy, you may need to add additional slices of white bread (crusts removed.) The mixture should be wet but not soupy. Pour into buttered baking dish, dusted with sugar. Prepare topping in a food processor. Add crusts, butter and brown sugar, pulsing until mixture is crumbly. Spread evenly over top of pudding. Bake in a water bath for 50 minutes covered with foil. Remove foil and bake another 10 minutes or until brown on top. Serve with bourbon sauce.
  • Mix eggs, butter, and sugar together until light and fluffy. Add vanilla and 1/2 cup bourbon. In top of a double boiler cook until temperature reads 165 on a thermometer. Beating constantly and being careful not to curdle eggs. Remove from heat and strain. In a mixer bowl, beat sauce until slightly cool, adding remaining bourbon a little at a time. Serve with bread pudding.

6 cups 1-inch cubes Italian bread
5 cups half-and-half
3/4 cup plus 2 tablespoons sugar
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon

4 large eggs, lightly beaten
2 cups raspberries (a few reserved for garnish)
2 cups sliced strawberries
1 tablespoon honey, plus more if desired
2 teaspoons fresh lime juice
Vanilla ice cream or whipped cream, for serving

Steps:

  • For the bread pudding: Butter a 13-by-9-inch baking dish with 1 tablespoon butter. Put the bread cubes in the dish.
  • Whisk together the half-and-half, 3/4 cup of the sugar, vanilla, 1 teaspoon of the cinnamon, salt and eggs in a large bowl. Pour this mixture over the bread. Cover and refrigerate for 1 hour.
  • Preheat the oven to 325 degrees F. Melt the remaining 3 tablespoons butter in a microwave or on the stove and drizzle over the top of the bread pudding. Combine the remaining 2 tablespoons sugar and 1/2 teaspoon cinnamon and sprinkle over the top.
  • Place on the center rack in the oven. Bake until the edges start to rise, a knife inserted into the center comes out mostly clean and the pudding jiggles when shaken, 45 to 50 minutes. Cool on a rack 35 to 40 minutes before serving.
  • For the sauce: Puree the berries in food processor. Press through a fine-mesh strainer. Stir in the honey and lime juice. Taste and adjust with more honey if it's not sweet enough for you.
  • Serve the bread pudding with a drizzle of sauce. Garnish with additional berries and a scoop of vanilla ice cream or whipped cream.

2 pkg 12 oz each, hawaiian king rolls, cubed
2 c heavy cream
1 c sugar
2 Tbsp sugar
4 Tbsp butter, melted
4 large eggs
1 tsp vanilla
2 can(s) 15 oz each, sliced peaches, cubed
1 c pecans, chopped
SOUTHERN COMFORT SAUCE
1 stick butter
1 c heavy cream
1 c sugar
2 large egg yolks
1/3 c southern comfort

Steps:

  • 1. Preheat oven to 350 degrees and lightly butter a 9x13" baking dish.
  • 2. Add bread cubes to a large bowl.
  • 3. In a medium bowl, whisk 1.5 cups cream, 2 cups milk, 1 cup sugar 4 tbsp melted butter, 4 eggs and vanilla.
  • 4. Add cream mixture and diced peaches to bread cubes and toss to combine.
  • 5. Pour mixture into the greased dish. Let sit for 15 minutes.
  • 6. Drizzle the bread mixture with the remaining 1/2 cup cream.
  • 7. Sprinkle pecans on top then the remaining 2 Tbsp of sugar.
  • 8. Bake until the center is set - about 45 minutes. Serve warm or cold with Southern Comfort Sauce &/0r whipped cream.
  • 9. To make the sauce, first melt the butter in a heavy saucepan.
  • 10. In a small bowl, mix cream, sugar and yolks - whisk together.
  • 11. Add creamed mixture to butter - cook over medium heat until it comes to a boil, stirring constantly -reduce heat and cook for 4 more minutes.
  • 12. Remove from heat and add Southern Comfort (it would also be good with Amaretto or Rum) - serve sauce warm or cold over bread pudding, stirring well before serving.

This recipe I got from my Dad he was an excellent cook. He would make bread pudding mostly in the Autumn and Winter for Sunday's dinner desert.

1 c milk
1 c half and half
2 eggs
1 c suguar
1 Tbsp vanilla extract
1/2 c raisins
2 Tbsp unsalted butter, melted
1/2 lb loaf of french bread (1 whole medium or 3/4ths an extra long loaf)

Steps:

  • 1. Preheat oven to 350 degrees. Whisk together the milk and half and half. Tear the French bread into small pieces and put into a large container for soaking. Pour the milk mixture all over the top. Let sit for about 10 minutes. Stir.
  • 2. In a separate bowl, whisk the eggs with the sugar and vanilla until well blended. Add the raisins. Pour over the bread and gently mix. Put the melted butter into a 9 x 9 inch baking dish and coat the dish all along the sides and bottom. Spoon the bread pudding mixture into the dish.
  • 3. Bake at 350 degrees for 1 hour, or until bubbly on the sides, golden brown and set in the middle. Let cool for about 5 minutes before cutting into squares. Drizzle each serving with Whiskey Sauce.
  • 4. WHISKEY SAUCE: 1 stick of unsalted butter, 1/4 c. of suguare, 1/2 c. of milk, 1 tbsp of flour, 1/2 teaspoon of vanilla and a tablespoon of rum or rum flavoring or to taste (can omit). Melt butter in a saucepan and whisk all other ingredients in except the vanila and whiskey; bring to a boil. Reduce heat and simmer until thickened. Remove from heat, add vanilla and whiskey, whisk and drizzle over individual servings of the warm bread pudding.

Steps:

A delicious bread pudding with hard sauce that it sure to please everyone! I've looked for just the right recipe for years and never could find it so I came up with one myself!

FOR THE BREAD PUDDING:
1 loaf French Bread
1 quart Half-and-Half (Fat Free Works Well)
1 stick Butter, Melted
3 whole Eggs
2-¼ cups Sugar
1 teaspoon Vanilla

FOR THE HARD SAUCE:
1 stick Butter, Melted
1 whole Egg
1 cup Sugar
2 Tablespoons Whiskey (see Note)
1 Tablespoon Vanilla

Steps:

  • Break apart the loaf of bread into bite size pieces. Pour half-and-half over the bread pieces and soak at least a couple of hours in the refrigerator, but overnight is best. Blend the melted butter, eggs, sugar, and vanilla with the bread mixture. Pour into a 9×13″ dish that has been sprayed with non-stick cooking spray. Bake at 350 degrees for one hour, or until the center springs back. If you shake the baking dish, the pudding will appear wiggly like gelatin. Serve topped with Hard Sauce.
  • To prepare Hard Sauce:
  • Blend together sauce ingredients; simmer for a short while until mixture is all combined and melted together. Pour over warm bread pudding.
  • Note: You may substitute other artificial flavorings such as butterscotch, almond, or rum for the whiskey if you'd prefer. You may also add pecans to the sauce for something different.

I wish I had a good story to go with this bread pudding. I dont. I knew I had tasted only a few Bread Puddings which I dearly loved. I set out to find the yummy one with Cinnamon, raisins and Lemon Sauce... Wah-lah!! What can I say? I have a sweet tooth and know a good dessert when I taste it. I have had this recipe since '84 and every so often, family requests it when they come for visits. They have that same sweet tooth too, I guess! This is a great lunch time dessert.

1/2 cup(s) golden raisins

  • Preheat oven to 350 degrees. Using a 12 X 8 Pyrex (or slightly smaller dish), spray with Bakers Joy. Next, brush 1 side of each bread with melted butter, placing buttered side facing upward in Pyrex dish. Sprinkle 2 T of sugar and cinnamon atop the buttered slices. Cut bread in quarters and arrange in layers sprinkling with raisins over each layer. Beat eggs and stir in sugar, milk and vanilla--- then pour over bread. Set Pyrex dish in larger pan of HOT water and bake for about 1 hour or til set.
  • **LEMON SAUCE TOPPING** Add sugar, salt and nut,eg to boiling water. Dissolve cornstarch in a little cold water before adding to hot mixture. Cook until thick. Remove from heat and add butter, lemon juice and 3 drops of food coloring. Ooooooooooooh so good!!
