1 can (15 ounces) black beans, rinsed and drained
4 taco shells, crushed
1/2 cup chopped onion
1/2 cup chopped green pepper
1/3 cup minced fresh cilantro
2 egg whites
2 tablespoons chopped jalapeno pepper
2 teaspoons ground cumin
2 teaspoons chili powder
3 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
Salsa, optional

Steps:

  • In a large bowl, combine the first 12 ingredients. Crumble beef over mixture and mix well. Press into a 9x5-in. loaf pan coated with cooking spray. Bake, uncovered, at 375° for 1 hour or until meat is no longer pink and a thermometer reads 160°., Cool for 10 minutes before removing from pan. Drizzle with salsa if desired.

This my 86-year-old Aunt Libby's home-made meatloaf recipe. I finally had her write it down for me last year. You can be sure no one will tell you this meatloaf is dry!

2 pounds ground beef
1 onion, chopped
1 cup ketchup
1 cup Italian-seasoned bread crumbs
2 eggs
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 ½ cups ketchup
¼ cup water
3 tablespoons white wine vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
  • Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
  • Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.

0.25 cups dry bread crumbs
0.25 cups milk
2 slices bread
2 pounds ground beef
0.5 cups onion
1 packages taco seasoning
2 cups mexican style cheese
1 cans black olives
1 units tomatoes
0.25 cups green onions
0.5 cups salsa

Steps:

  • In a small bowl, combine bread crumbs with milk. Set aside. Grease a 9x5 loaf pan and place the 2 bread heels in the bottom. In a large mixing bowl, combine ground beef, onion, taco seasoning, and bread crumb milk mixture. Mix until well combined.
  • Spread 1/2 of meatloaf mixture in loaf pan on top of bread heels. Sprinkle 1 cup shredded cheese over meat, layer on top of cheese the sliced olives, tomatoes and green onions. Sprinkle on the other 1 cup of cheese over that. Spread rest of meatloaf mixture on top. Spoon the salsa on top.
  • Bake at 350 for 1 hour or until done. Let meatloaf rest 5-10 minutes covered after taking out of oven.

When my husband and I moved down South, we discovered our love for pimiento cheese! It adds southern flair to this meat loaf recipe. My husband loves his cheese, so he likes to add a sprinkle of shredded sharp cheddar cheese, and diced jalapeno on top for an added kick. -Patricia Getson, Wilmington, North Carolina

2 teaspoons olive oil
1/2 cup chopped sweet onion
1/3 cup chopped celery
1/2 cup shredded carrots
3 garlic cloves, minced
2 large eggs, lightly beaten, room temperature
1/3 cup crushed saltines (about 10 crackers)
1/3 cup crushed Ritz crackers (about 10 crackers)
2 tablespoons Italian seasoning
1 tablespoon dried parsley flakes
1 teaspoon salt
1 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
1 carton (12 ounces) refrigerated pimiento cheese
Hot mashed red potatoes
Optional: shredded sharp cheddar cheese and sliced jalapeno pepper

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium-high heat. Add onion and celery; cook and stir until crisp-tender, 4-5 minutes. Add carrots and garlic; cook and stir until tender, 1-2 minutes longer. Transfer vegetable mixture to a large bowl. Add eggs, crackers and seasonings. Add beef; mix lightly but thoroughly, Shape into an 8x4-in. loaf in a greased 11x7-in. baking dish. Bake, covered, for 45 minutes. Uncover and bake until a thermometer reads 160°, 15-20 minutes longer. Let stand 10 minutes. Cut into slices; spread with pimento cheese. Serve with potatoes and if desired, shredded cheese and jalapeno.

This was one of those recipes that I clipped a long time ago but never got around to. Well, I got around to it and it was great! This is my first submission so I am feeling pretty confident that everyone will like it. Great with a side of Uncle Ben's Mexican Fiesta Rice!

  • Drizzle with salsa if desired and top with sour cream if desired.
