¼ cup white sugar
1 teaspoon ground cinnamon
¾ cup butter
3 cups white sugar
3 eggs
6 very ripe bananas, mashed
1 (16 ounce) container sour cream
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
½ teaspoon salt
3 teaspoons baking soda
4 ½ cups all-purpose flour
1 cup chopped walnuts

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
  • In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
  • Bake for 1 hour, until a toothpick inserted in center comes out clean.

4 very ripe bananas, divided
1 cup white sugar
¾ cup butter, melted and cooled
2 large eggs
⅓ cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts
2 teaspoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan.
  • Mash 2 bananas in a bowl with a fork. Place remaining 2 bananas in a separate bowl with 1 cup sugar and beat the bananas and sugar with an electric mixer until creamed and fluffy, 3 minutes. Beat in melted butter, eggs, sour cream, and vanilla extract until thoroughly combined.
  • Whisk flour, baking powder, and salt together in a bowl and stir the flour mixture into banana-sugar mixture. Fold in mashed bananas and walnuts. Pour batter into prepared loaf pan and tap the pan on the counter several times to remove any air pockets. Stir 2 teaspoons sugar with cinnamon in a small bowl and sprinkle the cinnamon sugar over the top of the loaf.
  • Bake in the preheated oven until bread is golden brown on top and set in the center, 1 hour and 15 minutes; rotate bread pan in oven halfway through baking. Cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

6 tablespoons butter
1 1/2 cups white sugar
2 eggs
3 ripe bananas, mashed

Steps:

  • Preheat oven to 325 degrees F. Lightly spray 2 8-5" x 4-5" x 2-5" disposable loaf pans (or reusable pans with same measurements)with cooking spray.

I added dates and eliminated the sugar entirely, swapped out the white flour for whole wheat, and substituted grapeseed oil for half the butter. The result was a super moist loaf that was just sweet enough - the sweetness from the dates and bananas really shone through. It turned out so well I thought I would share.

1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
2 tablespoons cocoa powder
1/2 cup sour cream
1 cup mini chocolate chip (regular sized will work, also)
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9- x 5-inch loaf pan with non-stick spray.
  • In a large bowl, cream butter and sugar together until light and fluffy. Stir in egg, mashed bananas, sour cream, and vanilla until well blended. Add baking soda, cocoa, and flour. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer). Add chocolate chips and walnuts, if used.
  • Transfer batter into loaf pan and bake for 50-60 minutes. Test by inserting a toothpick into center of loaf and checking to see if it comes out clean when you pull it out.
  • Remove from heat and allow bread to rest in loaf pan for 10 minutes. Invert the loaf pan onto a cooling rack. Serve bread warm or cold.

Sour cream makes this loaf super moist. Very peanut buttery and naturally sweetened with over-ripe bananas and a small amount of added brown sugar.

1 1/2 cups all-purpose flour (I use half all-purpose and half whole wheat)
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup brown sugar
1 cup creamy peanut butter
1/2 cup sour cream
1 egg
1 1/2 cups mashed bananas (about 5 to 6 over-ripe bananas)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F degrees. Grease and flour a 9" by 5" loaf pan.
  • Sift flour, baking soda, and salt together in a bowl. Set aside.
  • In a large bowl, cream together brown sugar and peanut butter until fluffy.
  • When measuring sour cream, pour liquid off the top of sour cream, and use thick sour cream on bottom of container. Add thick sour cream, egg, mashed bananas, and vanilla to the peanut butter mixture, and mix well.
  • Add flour mixture to peanut butter mixture, and mix just until combined while scraping bottom of bowl. Pour into prepared loaf pan.
  • Bake for 40 minutes. Remove from oven and cover with double layer of aluminum foil to prevent excess browning. Return to oven and bake for 20 minutes more, or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes on wire rack.
  • Remove from pan and allow to cool completely on a wire rack. When cool, wrap in plastic wrap and aluminum foil and allow to set for 3 days at room temperature to combine flavors before cutting or consuming (Setting for 3 days makes the loaf moister and tastier). Then, refrigerate.

I used to frequent a cross stitch message board, and Stacie shared her banana bread recipe. I have made this numerous times - always a winner, and always eaten quickly!

Number Of Ingredients 11

1 1/2 cups white sugar
3/4 cup shortening
2 eggs
1 teaspoon vanilla
1 cup sour cream
1/2 cup chopped nuts (I sometimes use chocolate chips) (optional)
2 large bananas, mashed
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 1/2 cups flour

Steps:

  • Cream sugar and shortening.
  • Add eggs and vanilla; blend well.
  • Add mashed bananas.
  • Sift flour with dry ingredients.
  • Add flour to wet ingredients, alternating with sour cream.
  • Add nuts.
  • Place in 2 pans; pans should be"greased" and dusted with flour.
  • Bake at 375F fir 1 hour.
  • Remove from pans; let cool.
  • Store in tin foil; they are very moist!
  • Can easily be halved (I have done this, and it still tastes great) but be warned that you NEED two loaves!

1 cup granulated sugar
2 teaspoons vanilla extract
2 1/2 cups roughly mashed bananas
1/2 cup coarsely chopped walnuts
1/3 cup sour cream

Steps:

  • Heat oven to 350 degrees F Beat eggs, butter, sugar and vanilla in lg bowl with electric mixer until smooth and flowing, about 2 minutes.
  • Add bananas and walnuts; mix to combine.
  • Add sour cream, flour, baking powder, baking soda.
  • Mix to combine.
  • Transfer batter to greased 9 x 5 x 5 1/4 inches bread pan.
  • Smooth surface with spatula.
  • Bake until browned and toothpick inserted in center comes out clean, about 55 minutes.
  • Cool in pan; wrap in foil.
  • Can be kept up to 3 days at room temperature.
  • Can also be frozen.
