Crunchy Maple Fruit & Nut Granola image

I tried a bunch of granola recipes and came up with this combination which is by far my favorite. Other nuts and dried fruit can be substituted but the coconut, pecans and dates just work so well together with the maple I just make this one all the time.

Time 1h40m

Number Of Ingredients 8

4 c instant 1 minute rolled oats
1 c chopped pecans
3/4 c shredded coconut
1/2 c dark brown sugar
1/2 c + 4 tablespoons real maple syrup
1/4 c + 1 tablespoon vegetable oil
1/2 c chopped dates
1/2 c dried cranberries

Steps:

  • 1. Preheat oven to 250 degrees. In a large bowl mix all ingredients well so all they are all evenly coated. Pour on to a large cookie sheet with sides and bake at 250 for 1 hour and 30 minutes.
  • 2. This step is important because it insures the granola is evenly toasted and browned. Stir granola every 15 minutes while it is baking for even color. Cool and store in airtight container. Enjoy!
