LEMON SOUFFLE CHEESECAKE WITH BLUEBERRY TOPPING



Lemon Souffle Cheesecake with Blueberry Topping image

Enjoy this light and lemony cheesecake with its delicious blueberry topping. It's excellent as a summer dessert, especially if you can find wild blueberries or huckleberries, or use frozen thawed and drained blueberries.

1 ¼ cups graham cracker crumbs
2 tablespoons brown sugar, packed
1 tablespoon butter, melted
4 (8 ounce) packages cream cheese, softened
1 cup white sugar
4 large egg yolks
1 tablespoon finely grated lemon zest
¼ cup fresh lemon juice
1 teaspoon vanilla extract
½ cup sour cream
4 large egg whites
⅓ cup white sugar
3 cups fresh blueberries or frozen blueberries, thawed
⅓ cup white sugar
1 teaspoon fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9 inch springform pan. Cut an 18 inch square of aluminum foil, and wrap around the outside bottom of the pan.
  • To make the crust, mix the graham cracker crumbs and brown sugar together in a bowl. Stir in the melted butter until thoroughly blended. Press the mixture evenly into the bottom of the prepared pan.
  • Bake in preheated oven until golden brown, about 8 minutes. Remove pan from oven and cool on a rack.
  • To make the filling, place the cream cheese in a mixing bowl; beat until creamy, about 2 minutes. Continue beating while gradually adding 1 cup sugar. Beat until sugar is thoroughly blended. Beat in the egg yolks, one at a time, scraping the sides of the bowl after each addition. Mix in the lemon zest, lemon juice, vanilla, and sour cream until well blended.
  • Beat the egg whites in a clean bowl until soft peaks form. Continue beating while gradually adding 1/3 cup sugar in a slow stream, until stiff peaks form. Do not overbeat. Gently fold 1/3 of the meringue into the cream cheese mixture. Repeat twice more with remaining meringue, mixing carefully to not deflate the egg whites, until no meringue streaks remain. Pour the filling into the prepared pan, and place in a large baking pan. Pour hot (not boiling) water into the baking pan up to 1 inch on the sides of the springform pan.
  • Bake in preheated oven until the top is almost set, 50-55 minutes. Turn off the heat, prop the oven door open about 2 inches, and allow cake to rest in the oven until completely set, about 1 hour longer. Refrigerate at least 4 hours, or overnight before serving.
  • To make the topping, place 1 cup blueberries and sugar in a saucepan; cook over medium heat until berries begin to break, 6-8 minutes. While still hot, strain the berries through a sieve or cheesecloth placed over a bowl, reserving the juice. Discard berry pulp. Allow the juice to cool.
  • Mix remaining 2 cups blueberries and lemon juice together in a large bowl. Stir in the strained blueberry juice. Just before serving, pour the blueberry topping over the cheesecake.

4 tablespoons unsalted butter, at room temperature, plus more for the souffle dish
One 8-ounce package cream cheese, at room temperature
1/2 cup pumpkin puree
4 large eggs, separated, at room temperature
1/3 cup cake flour
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1 cup whole milk, at room temperature
1/2 cup sugar
1/4 cup 60 percent chocolate chips, melted

Steps:

  • Preheat the oven to 350 degrees F. Butter the inside of an 8-inch souffle dish. Place in a roasting pan that fits the dish.
  • Add the cream cheese, pumpkin puree and butter to a medium bowl. Using a rubber spatula, mix together until smooth and well combined. Switch to a whisk and add the egg yolks one at a time, making sure they are fully incorporated before adding the next yolk. Add the cake flour, vanilla and cinnamon and mix well until smooth. Slowly add the milk until fully incorporated. Set aside.
  • Beat the egg whites in a large bowl using an electric hand mixer on medium-high speed until soft peaks form, about 3 minutes. With the mixer running, slowly sprinkle in the sugar until glossy and stiff peaks form. Fold one-third of the egg white into the cream cheese mixture using the whisk until incorporated. Repeat with another third. Now add the cream cheese mixture into the bowl with the remaining egg white and, using a spatula, gently fold in the remaining egg white until no streaks remain.
  • Pour the mixture into the prepared dish. Drizzle with the melted chocolate and run a skewer through the top to make a design. Fill the roasting pan with enough hot water to come halfway up the sides of the souffle dish and place in the oven. Bake for 10 minutes. Reduce the heat to 300 degrees F and continue to bake until the souffle is just set but still a little jiggly in the center, about 50 minutes. Allow to cool to room temperature in the water bath. Remove from the water and refrigerate to cool completely, at least 2 hours. Use a large spoon to serve the souffle.

1 pkg. (0.3 oz.) JELL-O Lemon Flavor Sugar Free Gelatin
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 container (8 oz.) PHILADELPHIA 1/3 Less Fat than Cream Cheese
2 cups thawed COOL WHIP FREE Whipped Topping

Steps:

  • Sprinkle half the graham crumbs onto side of 8- or 9-inch springform pan or pie plate sprayed with cooking spray.
  • Add boiling water to gelatin mix in bowl; stir 2 min. until completely dissolved. Cool 5 min. Blend gelatin mixture and cheeses in blender until smooth, occasionally scraping down side of blender. Pour into large bowl. Stir in COOL WHIP.
  • Pour into prepared pan; smooth top. Sprinkle remaining crumbs around outside edge. Refrigerate 4 hours or until set. Remove side of pan just before serving.

The Strawberry Swap of 2005 inspired me to create my own recipe using these wonderful berries. This light and airy dessert is sinless, delicious and satisfying. For those on Weight Watchers the souffle is Core plus a half point for the fruit spread (you can always omit). For Flexers, it's 2 points total.

1/2 cup fat-free cottage cheese
3 -5 teaspoons Splenda sugar substitute
1/4 teaspoon vanilla extract or 1/4 teaspoon almond extract
1 dash cinnamon
1 egg, separated
1 egg white
1 dash cream of tartar
6 strawberries, sliced
1 tablespoon strawberry all-fruit spread or 1 tablespoon raspberry spreadable fruit
1 tablespoon water

Steps:

  • Preheat oven to 375 degrees.
  • Puree the cottage cheese until there are no lumps. Add Splenda to taste, egg yolk, vanilla and a dash of cinnamon.
  • In a separate bowl whip egg whites to soft peaks. Add a dash of cream of tartar to stabilize if needed.
  • Gently fold the egg whites into the cottage cheese mix.
  • Pour into 2 ramekins until it just below the lip to allow for rising. Place ramekins into a larger baking pan and fill with boiling water until the water comes two-thirds up the sides of the ramekins. (I use a loaf pan.).
  • Bake souffles for 28-30 minutes until golden brown on top.
  • Mix the fruit spread and water together. Add strawberries and mix.
  • Serve warm souffles with berries spooned on top.

15 ounces part-skim ricotta cheese
8 ounces lemon low fat yogurt
1/3 cup sugar
1/4 cup fresh lemon juice
3 tablespoons all-purpose flour
1 egg yolk
2 teaspoons grated lemon zest
1 teaspoon vanilla extract
1/4 teaspoon salt
5 large egg whites
1/8 teaspoon cream of tartar
1/4 cup sugar
2 cups sliced strawberries, fresh blueberries (or a combination) or 2 cups fresh raspberries (or a combination)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Coat a 2-quart souffle dish with cooking spray. Fold a sheet of foil or parchment in half lengthwise, wrap it around the outside of the souffle dish, and secure it in place with kitchen string so it forms a collar that rises 3 inches above the sides of the dish. Coat the inside of the dish with the cookie crumbs, leaving any loose crumbs in the bottom of the dish.

350 g cream cheese
100 g butter, softened
4 large eggs, separated
110 g sugar
45 ml lemon juice
40 g cake flour, siffed
80 ml warm milk

Steps:

  • Preheat oven to 170°C.
  • Butter the cake pan.
  • In a medium bowl, whisk cream cheese, 80 gram butter and egg yolk to blend, then add flour, lemon juice and milk until mixed well.
  • In a large bowl with an electric mixer, beat together egg white and sugar until fluffy.
  • Stir GENTLY in cream cheese mixture in three times, until just combined (DO NOT OVERMIX).
  • Put the batter into the cakepan, smooth the top.
  • Bake in water bath, about 70 minutes, or until a tester come out clean.
  • You must take the cakep an away immediately when you take the cake out from oven.
  • Serve when it's hot,with fruit coulis.
