1/2 taza de cebolla picada
1/4 taza de aderezo italiano 'de la casa' reducido en grasa KRAFT Lite House Italian Dressing
1 libra de zanahoria s, peladas y picadas
2 latas (15 onzas cada una) de caldo de pollo
1/4 cucharadita de comino en polvo
1/4 taza de crema agria reducida en grasa BREAKSTONE'S Reduced Fat Sour Cream o la de KNUDSEN Light Sour Cream

Steps:

  • Cocina la cebolla y el aderezo en una sartén grande a fuego medio-alto durante 5 minutos o hasta que la cebolla esté tierna. Agrega las zanahorias, el caldo, el comino y mézclalos bien. Cocina durante 10 minutos o hasta que las zanahorias estén tiernas.
  • Pon todo en la licuadora. Agrega la crema agria y pon la tapa. Lícualo hasta que tenga una consistencia suave.
  • Sirve la sopa inmediatamente o refrigérala tapada hasta que se enfríe bien antes de servir.

In the United States, we think of hot soup as a winter dish, but in Colombia we eat soups all year round in every region of the country. We always welcome a good bowl of soup and this carrot soup is delicious and easy to make.

2 tablespoons vegetable oil
4 Large carrots (peeled and cut into small chunks)
2 garlic cloves (minced)
1/3 cup chopped onion
1 teaspoon cumin powder
1 tablet chicken or vegetable bouillon
5 ½ cups water
1 large white potato (peeled and cut into small chunks)
Salt and pepper
½ cup chopped fresh cilantro

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion and carrots and cook for 5 minutes, stirring occasionally.
  • Add the garlic and cumin and cook stirring for about 1 minute. Add the water, chicken or vegetable bouillon,potatoes, salt and pepper to your taste.
  • Bring to a boil, reduce the heat to medium low and cook until the vegetables are tender about 30 minutes.
  • Add the cilantro and transfer the soup to a blender and pureé until smooth working in batches if necessary.
  • Return the soup to the pot and cook over medium low heat, stirring once and season to taste.

1/4 cup unsalted butter
1/2 lb carrot, sliced 1/2-inch thick
1/2 teaspoon salt
1/2 teaspoon granulated sugar
2 cups hot water
2 ounces cheddar cheese, shredded

Steps:

  • In a 2-quart saucepan, melt the butter over medium heat, then add the carrots & cook, stirring, until they are covered with the butter.
  • Add salt, sugar & hot water, then bring to a boil, cover, reduce heat to low, & cook until soft, about 20 minutes.
  • Drain, reserving the cooking liquid, then transfer the carrots to a blender & process until smooth, adding a little of the cooking liquid.
  • Return to the saucepan with the remaining liquid & bring to a boil, then reduce heat to low & stir in the cheese, while simmering until the cheese melts ~ The texture should be like that of heavy cream.
  • Add additional salt, pepper or sugar as needed, then serve.

2 cups masa harina
1 teaspoon salt
1-1/3 cups warm water
1-1/2 cups shredded cooked chicken breast
1 cup salsa, divided
1/4 cup shortening
1 cup refried beans
1 cup shredded lettuce
1/2 cup crumbled queso fresco

Steps:

  • In a small bowl, combine masa harina and salt; stir in water. Knead until mixture forms a ball. Divide dough into 16 portions; shape into balls and cover with plastic wrap. , Working between two sheets of plastic wrap, press four balls into 3-1/2-in. circles. On an ungreased griddle, cook dough circles over medium-low heat for 1-2 minutes or until bottoms are lightly set. Turn and cook 2 minutes longer. Remove from the heat; quickly pinch edge of circles to form a 1/2-in. rim. Return to the griddle; cook 2 minutes longer or until bottoms are lightly browned. Remove to wire racks; cover. Repeat with remaining dough., In a small saucepan, combine chicken and 1/2 cup salsa. Cook over medium-low heat until heated through, stirring occasionally. In a large skillet, melt shortening. Cook sopes over medium-high heat for 2 minutes on each side or until crisp and lightly browned. Remove to paper towels to drain. , To assemble, layer each sope with refried beans, chicken mixture and remaining salsa. Sprinkle with lettuce and queso fresco. Serve immediately.
