SOFT SUGAR COOKIE PUFFS

Steps:
- In a bowl, beat eggs; add cream and beat well. Beat in the sugar, butter and almond extract. Combine flour and baking powder; gradually add to sugar mixture. Cover and refrigerate for 1 hour or until easy to handle., On a lightly floured surface, roll out dough to 1/4-in. thickness. Cut with 2-1/2-in. cookie cutters dipped in flour. Place 1 in. apart on greased baking sheets. If desired, sprinkle with colored sugars, pressing sugar into dough if needed., Bake at 375° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

The title says it all. Everyone who has ever tasted these has asked for the recipe. Don't be alarmed at the amount of flour, it is correct. The dough is pretty thick.

- Preheat the oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time mixing well after each. Combine the flour, baking powder and baking soda; stir into the sugar mixture alternately with the milk. Drop by heaping tablespoonfuls onto ungreased cookie sheets. Space cookies at least 3 inches apart.
- Bake for 12 to 15 minutes in the preheated oven, or until light brown. Remove from cookie sheets to cool on wire racks. When completely cool, frost with vanilla frosting and sprinkle with candy sprinkles.

SOFT SUGAR COOKIE CUTOUTS
These are my oldest sons favorite cutouts. The sour cream helps them stay soft , moist and get kind of "puffy" when you bake them. Prep time does NOT include chilling time for dough.

Steps:
- In a large mixing bowl, beat together sugar and butter until creamy. Beat in eggs, vanilla and sour cream until fluffy. Mix in orange peel.
- In a seperate bowl, combine flour, baking powder, baking soda, and salt. Gradually add flour mixture into creamed mixture. Beat until well-combined.
- Divide dough in half and wrap each half in plastic wrap or wax paper. Chill for about 2 hours.
- When dough is chilled, preheat oven to 400.
- Roll dough on to lightly floured surface to about 1/8"-1/4" thickness. Cut with cookie cutters and place cookies on ungreased cookie sheets about 2" apart. (If desired, sprinkle with colored sugars). Bake at 400 for 6-9 minutes or until edges slightly golden. Cool about 2 minutes before removing to wire racks to cool.

SOFT SUGAR COOKIE
This recipe has been in the family for four generations. When I got married, Mom made sure to pass this recipe along. For variation, I sometimes eliminate the raisins and sprinkle the tops with colored sugar or leave them plain and frost when cooled.

- In a large bowl, cream shortening and sugar until light and fluff. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture alternately with buttermilk, beating well after each addition. Cover and refrigerate for at least 2 hours (the dough will be very soft). , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Place a raisin in the center of each cookie. Bake at 375° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

Steps:
- Preheat oven to 350 degrees. Spray cookie sheet with nonstick spray or use a silpat.
- In a medium-sized mixing bowl, stir the butter and sugar together until creamed. Mix in the egg and vanilla.
- Stir in flour, baking soda, salt, cream of tartar, and sprinkles until just combined. Do NOT overmix.
- Place the dough in the center of the prepared cookie sheet into a tall ball. Bake for 14-16 minutes until the edges are browned. The center may appear undone but that's what you want. It will firm up. Allow to cool completely ON the baking sheet
