S'MORE QUESADILLAS
In this Southern twist on a fireside classic, flour tortillas replace traditional graham crackers; be sure to buy the large size and portion out to guests after grilling.

Steps:
- Heat a grill or grill pan. Place 4 tortillas on a clean work surface; scatter each with chocolate pieces and marshmallows. Place the 4 remaining tortillas on top, press them together to seal. Grill until tortillas are browned and chocolate and marshmallows are melted and gooey, about 30 seconds per side. Cut into wedges, and serve.

- Array the two tortillas flat on the bottom of a microwave. Sprinkle 3 spoonfulls of chocolate chips onto the top half of each tortilla. Sprinkle 3 spoonfulls of mini-marshmallows on the bottom half of each tortilla. Microwave at 50% power for 50 seconds.
- Remove carefully from microwave and immediately fold each tortilla in half. Gently smoosh them from the centre to distribute the filling and let sit for a minute or so. Enjoy!

S'MORES NACHOS
Drizzle chocolate sauce over homemade cinnamon flavored tortilla chips, and top with miniature marshmallows to make this s'more inspired snack.

- Preheat oven to 350 degrees F. Using a food processor, process the graham crackers into fine crumbs. Cut each tortilla into 8 equal size wedges. Dip wedges into melted butter and then into cracker crumbs.
- Spread out tortillas onto a baking sheet and bake for 5 minutes. Turn chips over and bake for another 5 minutes or until golden.
- Pile chips onto an oven safe platter, drizzle with chocolate sauce and sprinkle with marshmallows.
- (Optional) Return platter to the oven until marshmallows are lightly browned.

This recipe is so simple and versatile. On a picnic we don't worry about dirty hands, we just pull down the foil and eat til it's gone. Using tortillas are a great way to get the kids involved in making their own snacks. My grandkids have put just about everything in them including candy bars, jelly, and as simple as cinnamon, butter and sugar. One of their favorites is cinnamon and marshmallow,

Steps:
- Spread about 2 T peanut butter on each tortilla.
- Top with about 1/4 cup of marshmallows and 2 T chocolate chips.
- Roll up and wrap in aluminum foil and seal tightly Bake at 375 for about 5-10 minutes or until chips and marshmallows are melted.
- You may also microwave these but will need to wrap in plastic wrap.
- Times will vary according to your microwave.
- I have also made these in advance and wrapped in foil to take on a picnic.
- When you're ready for dessert just put them on the grill for 5-10 minutes depending on how hot your grill is.
