8 ounces smoked salmon, roughly chopped
1/2 cup mayonnaise
Freshly ground black pepper
3 ounces raw salmon, finely diced
1/2 cup creme fraiche or sour cream
1 shallot, minced
1 lemon, zested and juiced
1/2 cup minced chives
Kosher salt, optional
Crostini, for serving

Steps:

  • In a food processor, add the smoked salmon along with the mayonnaise and some pepper. Pulse just until the salmon is broken up into slightly smaller pieces. Do not overmix.
  • Place the mixture into a bowl and combine with the raw salmon and creme fraiche or sour cream. You may add more or less depending on how creamy you like it. Add the shallot, lemon zest and juice and half the chives. Season with pepper; the mixture will likely not need salt due to the smoked salmon.
  • Transfer the mixture to a shallow wide bowl and cover with the remaining chives. Serve with crostini.

SMOKED SALMON SALAD
with creme fraiche vinaigrette, roasted
shallots and pumpernickel croutons
Fresh mixed salad greens 8 1/2 cups
Fresh Dill, chopped 1 1/2 tbsp.
Fresh parsley, chopped 1 tsp.
Chives, cut 2" long 8 pieces
FOR THE VINAIGRETTE
Sour Cream 5 tbsp.
Olive Oil 2 tbsp.
Lemon juice 1/2 tsp.
Seasoned rice vinegar 1 tsp.
Beau Monde Seasoning 1/2 tsp.
FINISHING THE SALAD
Whole butter 3 tbsp.
Xtra virgin olive oil 3 tbsp.
Shallots, sliced 3 each
Dry, pumpernickel ciabatta, cubed 5 tbsp.
Garlic clove, crushed 1 clove
Good quality smoked salmon 7 slices,
Capers, non-perils 1/2 tsp.
Goat cheese, fresh 4 tsp.
Sea salt 1/8 tsp.

Steps:

  • Combine the first 4 ingredients in a large salad bowl. Cover and refrigerate. For the vinaigrette, combine the next five ingredients in a small bowl and whisk together. Cover and refrigerate. Preheat a convection oven to 350 degrees. In a large skillet, heat the butter and 2 tbsp of the olive oil until very hot. Add the shallots, cubed pumpernickel bread and garlic clove. Saute very slowly, shaking often over medium heat for about 5 minutes. When shallots are translucent, discard the garlic and transfer pan to the oven. Cook for 6-7 more minutes until shallots are caramelized and croutons are golden and crispy. Let cool for 6-7 minutes. To serve, Toss the reserved salad mixture with remaining olive oil, croutons, shallots, smoked salmon, capers, goat cheese and sea salt. Drizzle the crème fraiche vinaigrette between the salad greens .Note: Do not mix vinaigrette thoroughly with the greens. Divide among 4 salad plates.

Baked Eggs With Crème Fraîche and Smoked Salmon image

Runny-yolked eggs baked in individual ramekins or custard cups make for a very elegant brunch or light supper. These are bathed in a shallot-steeped crème fraîche and topped with smoked salmon for an especially rich result. Serve them with toast, croissants or crusty bread - something to mop up the last bits of yolk and cream at the bottom of the ramekins. You won't want to leave behind a single drop.

2 tablespoons unsalted butter, plus more for greasing the ramekins
2/3 cup thinly sliced shallot (2 to 3 shallots)
1/2 teaspoon fine sea salt
3/4 cup heavy cream
1/3 cup crème fraîche
1 tablespoon chopped fresh dill, plus more for serving
1/2 teaspoon finely grated lemon zest
12 large eggs, at room temperature
Freshly ground black pepper
4 ounces smoked salmon

Steps:

  • Heat oven to 400 degrees, and brush six 8-ounce ramekins or ovenproof custard cups with butter. Place the ramekins or cups on a rimmed baking sheet.
  • Melt 2 tablespoons butter in a medium skillet over medium heat. Stir in shallots and 1/4 teaspoon salt, and cook until very soft, 7 to 10 minutes, reducing heat if necessary to prevent browning.
  • Stir in 6 tablespoons cream, the crème fraîche, dill, lemon zest and remaining 1/4 teaspoon. Remove from heat. Divide mixture among the ramekins.
  • Crack 2 eggs into each ramekin and float 1 tablespoon of cream on top of each, then sprinkle tops with salt and pepper. Bake until egg whites are just set, and yolk is still runny, 12 to 16 minutes. (The eggs will look slightly puffed at the sides of the ramekins, but still jiggly in the center and that's O.K. The eggs will continue to cook once out of the oven.) Remove from oven and transfer ramekins onto individual plates for serving.
  • To serve, top each ramekin with some of the smoked salmon and a little more dill. Serve warm.

500g new potato , halved
200g pack asparagus tips
250g bag mixed salad leaves (including young beetroot leaves and watercress)
bunch each parsley and mint, leaves picked and roughly chopped
140g radish , thinly sliced
8 x hot-smoked salmon steaks, skin removed
4 spring onions , sliced diagonally
3 tbsp lemon juice
125ml olive oil
1 tsp wholegrain mustard
2 red chillies

Steps:

  • Boil potatoes in salted water for 10 mins until tender, adding the asparagus tips for the final 2 mins of cooking. Drain and allow to cool. Whisk together the salad dressing ingredients. then season to taste.
  • In a large bowl, toss together the potatoes, asparagus, salad leaves, herbs and radishes. Add two-thirds of the dressing, thoroughly mix through the salad, then spread the salad over a large platter. Break the hot-smoked salmon into large chunks, then scatter over the top along with the spring onions. Finish by pouring remaining dressing over the top.

200ml tub crème fraîche
3 tsp vodka
2 tsp hot horseradish sauce
6 slices smoked salmon
250g pack small, cooked beetroot (not in vinegar), thinly sliced, then shredded
salmon caviar (optional)
few small, torn dill sprigs

Steps:

  • Beat the crème fraîche with the vodka and a little seasoning until it holds its shape, then stir in the horseradish. Chill in the fridge.
  • Lay the slices of salmon over plates, then top with the beetroot and a spoonful of the crème fraîche. Top with the salmon caviar, if using, then scatter with the dill. Grind over some black pepper and serve.

200ml tub crème fraîche
3 tbsp hot horseradish sauce
1 tbsp vodka (optional)
2 tsp white wine vinegar
2 tbsp olive oil
1 tsp honey
250g pack cooked beetroot (not in vinegar), finely diced
8 large slices smoked salmon
24 red chicory leaves
60g baby rocket salad
few snipped dill sprigs
fingers of toast , to serve (optional)

Steps:

  • Fold the crème fraîche with the horseradish and vodka, if using, with a little seasoning. Chill.
  • In a bowl, mix the vinegar, olive oil and honey. Toss half the dressing through the beetroot and chill until ready to serve.
  • Before serving, divide the slices of salmon between 8 plates, then top with a spoonful of the crème fraîche and bring up the sides of the salmon to make a 'flower'. Arrange the salad and beetroot round the salmon, scatter with the dill. Grind over some black pepper, drizzle with the remaining dressing and serve with toast, if you like.
