This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

1-1/2 pounds ground beef
2 celery ribs, chopped
1 small onion, chopped
1 bottle (12 ounces) chili sauce
2 tablespoons brown sugar
2 tablespoons sweet pickle relish
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/8 teaspoon pepper
8 hamburger buns, split

Steps:

  • In a large skillet, cook beef, celery and onion over medium-high heat, 8-10 minutes, until beef is no longer pink, breaking beef into crumbles; drain. Transfer to a 3-qt. slow cooker., Stir in chili sauce, brown sugar, pickle relish, Worcestershire sauce, salt and pepper. Cook, covered, on low 3-4 hours or until heated through and flavors are blended. Spoon meat mixture onto bun bottoms. Replace tops.

4 pound(s) beef round tip roast
2 tablespoon(s) cooking fat
- salt and pepper to taste
8 ounce(s) tomato sauce
1.5 cup(s) water
1 package(s) sloppy joe mix
2 medium potatoes, peeled and quartered
1 cup(s) carrots, thickly sliced
1 cup(s) zucchini, thickly sliced

Steps:

  • In a dutch oven, or large pan with a tight-fitting cover, brown meat in fat.
  • Season with salt and pepper and remove from pan.
  • Pour off fat drippings.
  • Add tomato sauce, water and seasoning mix.
  • Return meat to pan.
  • Cover and simmer for 3 to 3 1/2 hours, or until done (or cook in a 325 oven for same amount of time).
  • Turn meat once to cook it evenly throughout.
  • Add potatoes and carrots during the last 35 minutes of cooking, zucchini the last 15 minutes.
  • Remove meat and keep warm.
  • Skim off any excess fat.
  • Taste sauce and correct seasoning, if necessary, with salt and pepper.
  • Serve sliced meat with vegetables and sauce.

This is a classic what some might call BBQ sandwiches. While true BBQ afficianados will certainly deny it the term BBQ, it's sweet tomatoey , beefy tang is always an easy crowd pleaser. Besides being delicious on a bun, it's a wonderful topper for baked potatoes.

5 lbs arm roast (excess fat removed)
24 ounces delmonte chili sauce
1/2 cup cider vinegar
3/4 cup lea&perrins Worcestershire sauce
3/4 cup dark brown sugar
2 chopped large onions
1 head minced garlic
1/4 cup vegetable oil

Steps:

  • In hot Dutch oven, brown arm roast in oil.
  • Cover and simmer for 1 1/2 hours adding water if necessary (if lid fits well, adding water shouldn't be necessary).
  • Add onion and garlic and continue simmering for 1 hour, oruntil beef is fork tender.
  • With two forks, break meat into coarse shreds and chunks.
  • Add remaining ingredients, bring back to a simmer.
  • Cover and simmer 1 hour.
  • Grill lightly buttered hamburger buns and pile on the meat.
