SAUTEED PORK TENDERLOIN MEDALLIONS
Steps:
- In a large skillet heat the oil. Add the medallions and saute them over high heat for 2 minutes a side to brown them. Lower the heat and continue to cook slowly for about 5 minutes or until just cooked through. Don't overcook or they will toughen. When done, remove the medallions to a serving plate.
- To the remaining oil add the cumin, turmeric and tomatoes and stir for a few seconds just to heat the tomatoes; season to taste with salt and crushed red pepper and spoon over the medallions.
SLICED & SAUTEED PORK TENDERLOIN
Steps:
- Cut the tenderloin into slices about 1/3 inch thick. Mash the garlic and spread over the pork, then add pepper to taste. Let sit for half an hour. Slice bell peppers. Add olive oil to pan and heat up over medium-high. Add Peppers and cook/stir for 5-10 minutes. Remove peppers and add a little more oil to pan. Put pork slices in single layer - do not pile. Cook 2-3 minutes on each side. If your skillet wasn't big enough for all the slices, you probably want to add more oil before putting in another batch of pork slices. Remove pork; add chicken wine and broth and boil/reduce for about 6-8 minutes. Pour gravy over pork and peppers. Add parsley and sliced lemon and serve.

CARAMELIZED PORK SLICES
This easy treatment for pork caught my eye when I saw the word "caramelized." The slightly sweet glaze is yummy. I like to serve this over noodles or rice...or with mashed potatoes. -Elisa Lochridge, Beaverton, Oregon.
