CINCINNATI SKYLINE CHILI

This chili, usually served over spaghetti pasta, is quite different from the more common Southwest-style spice profile.

1-quart water, more as needed
2 pounds ground beef
2 cups crushed tomato
2 yellow onions, diced
4 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon unsweetened cocoa
1/4 cup chili powder
1 teaspoon cayenne
1 teaspoon cumin
2 tablespoons cider vinegar
1 bay leaf
1/4 teaspoon cloves, ground
1 teaspoon cinnamon
1 1/2 teaspoons salt

Steps:

  • Gather the ingredients.
  • Add the water and beef to a 4-quart pot.
  • Bring to a simmer while stirring, until the ground beef is in very small pieces. Simmer for 30 minutes.
  • Add the crushed tomatoes, onions, garlic, vinegar, Worchestershire sauce, bay leaf, chili powder, cocoa powder, cayenne, cumin, cinnamon, cloves, and salt. Stir well and simmer on low, uncovered, for 3 hours.
  • Stir occasionally to avoid ingredients sticking to the bottom or sides of the pot.
  • Add water as needed if the chili becomes too thick. Once the cooking time has passed, remove from heat and allow the chili to cool off, covered, to room temperature.
  • Keep covered and fefrigerate the chili overnight. The next day, remove the layer of fat that has formed on top before reheating and serving over pasta or hot dogs.

A copycat of Skyline Chili, true Cincinnati chili, except it's less greasy! I combine all the dry spices times ten and keep the "Skyline Spice Mix" in a jar cannister. One batch of chili will use 3/8 cup of spice mix. The spice mix is also tasty as a meat rub for steak, pork and chicken.

2 lbs ground beef
2 cups chopped onions
4 cups beef stock
2 (8 ounce) cans tomato sauce
2 -3 tablespoons chili powder
2 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
1/2 ounce grated unsweetened chocolate or 2 3/4 tablespoons cocoa
2 teaspoons instant minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground red pepper or 1/2 teaspoon cayenne pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 bay leaves or 1/8 teaspoon bay leaf powder
chopped onion (optional)
finely shredded cheddar cheese (certainly NOT optional)
kidney bean (optional)

Steps:

  • Brown ground beef and onion.
  • Drain.
  • Add beef stock to beef mixture and simmer 10 minutes.
  • Add remaining 13 ingredients, simmer uncovered 1 hour.
  • Remove bay leaf, skim off extra fat.
  • Serve over hot spaghetti, or hot dogs in buns for chili dogs.
  • Top with plenty of cheese and other optional toppings.

1 (15 ounce) can tomato sauce
1 ⅓ (6 ounce) cans tomato paste
5 tablespoons chili powder
2 teaspoons ground cinnamon

1 tablespoon distilled white vinegar
1 teaspoon ground black pepper

This recipe is an approximation of a famous dish in Cincinnati called "Skyline Chili" or just "Skyline". The original recipe was developed by a Greek who owned several chili parlors, and is very different from what most of us think of as chili. It's very popular in Cincinnati, but the recipe is kept very closely guarded secret. My husband LOVES Skyline, so I found 2 recipes that he declares are the closest to the one made in Cincinnati. This is the second recipe. When serving, you have to serve the chili with the toppings - each person can make their chili "3-way", "4-way" or "5-way" depending on the number of toppings they add.

3 medium onions, chopped
6 cloves garlic, minced
3 tablespoons vegetable oil
4 lbs lean ground beef
1/3 cup chili powder
2 tablespoons sweet paprika

1 teaspoon dried oregano, crumbled

Steps:

  • In a large heavy kettle, cook the onions and garlic in the oil over medium heat until the onions are soft.
  • Add the beef and cook, stirring and breaking up the beef until it is cooked and no longer pink.
  • Add the spices and cook, stirring for about a minute.
  • Add the remaining ingredients (except the toppings) and simmer, uncovered, stirring occasionally and adding more water if necessary to keep the beef barely covered, for 2 hours, or until it is thick.
  • Discard the bay leaf.
  • Ladle over the hot spagetti and pass the toppings seperately.

2 pounds lean ground beef
1 onion, chopped
2 (8 ounce) cans tomato sauce
1 clove garlic, crushed
1 dash Worcestershire sauce
1 pinch ground cinnamon
1 teaspoon distilled white vinegar
3 tablespoons chili powder
1 pinch cayenne pepper
salt and pepper to taste
1 pound uncooked spaghetti
1 cup shredded Cheddar cheese
1 cup kidney beans
½ cup olives
¼ cup chopped onion

Steps:

  • Brown beef and onion in a large skillet over medium high heat. Place browned mixture in a large pot and stir in the tomato sauce, garlic, Worcestershire sauce, cinnamon, vinegar, chili powder, cayenne pepper, salt and pepper. Simmer, uncovered, over low heat for 1 1/2 hours.
  • When meat mixture has about 20 minutes cooking time left, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
  • Serve meat mixture over cooked spaghetti topped with cheese, beans, olives and chopped onion.
