4 skinless, boneless chicken breast halves
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon butter
1 tablespoon vegetable oil
¾ pound yellow squash, sliced
¾ pound zucchinis, sliced
1 medium tomato - peeled, seeded and chopped

Steps:

  • In a large nonstick skillet, melt butter in the oil over medium high heat. Season chicken with half of the salt and half of the pepper, and add it to skillet. Cook until lightly browned, about 2 minutes per side. Transfer to large plate or platter, and cover to keep warm.
  • Pour off fat from skillet, and add squash, zucchini, and tomato. Season with remaining salt and pepper. Cook and stir over medium-high heat until squash is slightly softened, about 3 minutes. Reduce heat, and return chicken to skillet. Cover partially. Cook until squash is soft, and chicken is white throughout but still juicy, about 5 minutes longer.
  • Transfer chicken to platter, and cover with foil to keep warm. Raise heat to high. Cook vegetable mixture, stirring often, until almost all of the liquid has evaporated, about 2 minutes. Arrange vegetables around chicken, and serve.

1 pound chayotes
6 ounces of roasted tomatoes (can use canned fire roasted tomatoes , or roast whole tomatoes on stovetop or under broiler until skin begins to blacken, do not remove skin but process whole)
1 clove garlic, chopped
2 tablespoons extra virgin olive oil
2 tablespoons chopped onion
1 large green Anaheim chile (stem and seeds removed and discarded), chopped
Pinch red chile pepper flakes
1/4 cup water
Salt to taste
1/4 cup roughly chopped cilantro
1/4 cup finely grated Monterey Jack cheese

Steps:

  • Purée the roasted tomatoes and the garlic: In a blender, purée the tomatoes and garlic. Set aside.
  • Serve: Sprinkle with grated cheese to serve.

4 chayote squash, halved, seeded
2 tablespoons vegetable oil
1 onion, finely chopped
11/2 teaspoons salt
1/2 pound chopped mushrooms
2 garlic cloves, minced
2 jalapeno chilies, minced
1/2 teaspoon ground cumin
2 tomatoes, peeled, seeded chopped
1 to 2 tablespoons chopped epazote leaves or fresh oregano
1 cup dry bread crumbs
1/2 cup toasted almonds, chopped
1/2 cup grated Cotija or Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F. Cook unpeeled squash in lightly salted water until crisp tender, about 15 minutes. Drain well. Scoop out most of flesh, leaving 1/4-inch thick shell. Season shell with salt and pepper. Coarsely chop chayote flesh. Set aside.
  • Heat oil in heavy large skillet over medium high heat. Add onion and salt and saute until tender, about 5 minutes. Add mushrooms and cook until most of liquid evaporates. Add garlic, jalapeno and cumin and saute until fragrant. Add tomatoes and reserved chayote flesh. Stir until most of liquid evaporates. Stir in epazote, bread crumbs and almonds. Season to taste with salt and pepper. Spoon mixture into shells. Sprinkle with cheese. Arrange shells in large baking pan. Pour enough hot water around shells to reach 1/4-inch. Bake until heated through, about 15 minutes.

4 medium chayote squash, peeled, pitted, and cut into 1/2-inch dice
1/4 cup chicken broth, or more if necessary
3 tablespoons unsalted butter
1/4 cup minced white onion
2 tablespoons finely chopped Italian parsley
1/3 cup heavy cream
Salt and freshly ground white pepper

Steps:

  • Combine squash and broth in a medium saucepan. Cover, and place over medium-low heat. Simmer until squash is tender, about 12 minutes, adding more broth if pan becomes dry.
  • Meanwhile, melt butter in small skillet over low heat. Add onion, and saute until translucent. Remove from heat, and add parsley.
  • Add onion mixture and cream to cooked squash and its remaining liquid. Toss to mix. Season with salt and pepper to taste. Return to medium heat just until cream is bubbling and squash is reheated. Serve immediately.

6 small boneless skinless chicken breasts (1-1/2 lb.)
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
3 Tbsp. milk, divided
1 tsp. dried Italian seasoning
1/2 tsp. garlic powder
2 small each yellow squash and zucchini, cut lengthwise in half, then sliced crosswise
3 cups cooked orzo pasta
2 Tbsp. thinly sliced fresh basil

Steps:

  • Melt butter in large skillet on medium heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Transfer to plate; cover to keep warm.
  • Mix cream cheese spread, 2 Tbsp. milk and dry seasonings until blended. Mix 1/4 cup with remaining milk in small microwaveable bowl; set aside. Add vegetables to same skillet; cook 5 min. or until crisp-tender, stirring frequently. Stir in remaining cream cheese mixture; cook and stir 2 min. Add orzo; cook and stir 2 min. or until heated through.

2 large chicken breasts, halved and cut into cubes
2 chayote squash, diced
2 large potatoes, diced
1 small onion, diced
2 clove garlic, minced
salt and fresh ground pepper to taste

Steps:

  • 1. Heat oil in large skillet over medium heat. Add the chicken, squash, potato and onion. Cook and stir 10 minutes.
  • 2. Stir in garlic and cook until potatoes are tender and chicken is no longer pink in the center, 5 minutes more. Season with salt and pepper to serve.
