1 large egg, room temperature
1/3 cup whole milk
1 cup all-purpose flour
3 tablespoons sugar
1-1/2 teaspoons baking powder
1/4 teaspoon salt
6 medium firm bananas
Oil for deep-fat frying
Ice cream

Steps:

  • In a large bowl, combine the first 6 ingredients. Cut the bananas in half lengthwise, then cut into 1-1/2-in. pieces. Coat bananas with egg mixture. , In a cast-iron or electric skillet, heat 1 in. of oil to 375°. Fry bananas until golden brown, about 1 minute on each side. Drain on paper towels. Serve warm with ice cream.

Soon after I made these fritters for the first time, my husband began requesting them on a regular basis. I also like to serve them to overnight guests as a sweet breakfast treat.

2 eggs
1/2 cup milk
1 teaspoon canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 large firm bananas
Additonal oil for deep-fat frying
Confectioners' sugar, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. Dust with confectioners' sugar if desired.

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

1 cup all-purpose flour
1 tablespoon baking powder
Salt
Freshly ground white pepper
1/4 teaspoon ground cinnamon
Freshly grated nutmeg
1 egg
1 cup buttermilk
2 pounds bananas, peeled and cut into 3-inch chunks on the diagonal
Powdered sugar, for dusting

Steps:

  • Preheat a deep-fryer or a deep pot of oil to 350 degrees F. In a medium bowl, sift together the flour, baking powder, a dash of salt and pepper, cinnamon, and the nutmeg, to taste.
  • In a small bowl, whisk together the egg and the buttermilk. Whisk into the flour mixture until smooth. Let rest for 30 minutes in the refrigerator.
  • Dip the banana chunks in the batter and fry until golden brown, about 4 minutes. Remove and drain on paper towels. Dust with powdered sugar and serve.

4 firm bananas
1 1/2 cups light rum
1 large egg
4 cups cornflakes
about 5 cups vegetable oil for deep-frying

Steps:

  • Peel bananas and cut crosswise into 1 1/2-inch pieces. In a bowl cover bananas with rum. Macerate bananas at room temperature 30 minutes.
  • While bananas are macerating, in a shallow bowl lightly beat egg. In a plastic bag finely crush cornflakes with a rolling pin and transfer to a large shallow bowl.
  • In a deep 12-inch skillet heat 1 inch oil over moderate heat until a deep-fat thermometer registers 375°F. While oil is heating, carefully remove bananas from rum, reserving rum for another use. Working in small batches, dip bananas in egg to coat, letting excess drip off, and roll in cornflakes, knocking off excess. Arrange bananas as coated on a wax-paper- lined tray.
  • With a slotted spoon gently lower half of bananas into oil and fry, turning them occasionally, until golden brown, 1 to 2 minutes. Transfer bananas as fried with slotted spoon to paper towels to drain and fry remaining bananas in same manner.

6 ripe bananas
2 eggs, beaten
3/4 cup all-purpose flour
3 tablespoons vegetable oil

Steps:

  • In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

3/4 cup yellow cornmeal
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon

1 1/4 cups mashed bananas
1 large egg
2 tablespoons milk
vegetable oil (for frying)

Steps:

  • Set oven to 375 degrees.
  • Spray a baking sheet with cooking spray.
  • in a bowl whisk together cornmeal, flour with baking powder, salt, cinnamon and cayenne pepper (if using).
  • In another bowl mix together banana with egg and milk.
  • Add the cornmeal mixture to the banana mixture and stir until just combined.
  • Heat a small amount of oil in a skillet over medium-high heat.
  • Drop about 2 tablespoons batter into the skillet; cook until golden brown (about 1 minute on each side, do not overcook in the skillet just until lightly browned).
  • Using a spatula transfer to baking sheet.
  • Continue with remaining batter (adjust heat to avoid burning the fritters).
  • Bake until puffed and firm to the touch (about 8-10 minutes).
