BEST EVER BRAISED SIRLOIN TIPS

- 1. Preheat the oven to 300F.
- 2. Cut the beef into 1 inch (or slightly smaller) cubes, discarding any fat or gristle. Most of the "silver skin" can remain as it will melt in the long cooking.
- 3. Toss the beef in the black pepper.
- 4. Using a large Dutch oven or similar oven-safe pan with cover, melt 2 Tbl of the beef fat on medium-high heat. Brown the beef in small batches, adding fat as necessary. Adjust the heat to prevent the pan drippings from burning. Remove the last of the beef from the pan.
- 5. Discard any excess fat leaving enough in the pan to lightly saute the onions and garlic. Cook the onions and garlic for 2 to 3 minutes, stirring to coat them with the pan drippings.
- 6. Stir together the wine, soy sauce, water and demi-glace paste until the paste is dissolved.
- 7. Add the browned beef cubes and the liquids to the onions and garlic and bring to a simmer.
- 8. Cover and simmer in the oven for 1 1/2 hours or until the meat is fork tender.
- 9. Continue to simmer on top of the stove and slowly add the dissolved cornstarch, stirring to prevent lumps. This should quickly thicken the liquid to a rich gravy. Simmer another minute, if the gravy has not thickened to your liking, add more dissolved cornstarch but be careful! Too much cornstarch will turn the gravy into a sticky goo.
- 10. Taste and adjust with salt if needed.
- 11. Serve hot over rice, potatoes or noodles.
EASY SIRLOIN TIPS
Could not find the taste I wanted, and did not want the creaminess of so many canned soup recipes. So, concoted this one and was very pleased with the results. Hope you do, too. Warning- use sirloin tips and NOT stew beef, unless you're prepared to cook dish much, much longer.

- Place tips in a plastic bag, add flour, salt and pepper and shake well, insuring that all tips are coated.
- In large skillet, heat oil over medium high heat. Add tips and mushrooms and stir until all tips have browned. Leave oil and flower mixture in pan.
- Add water, wine and dry soup mixture. Stir well, cover pan and reduce heat to a simmer.
- Simmer for 30 minutes, stirring ocassionally and adding water, if needed.
- Serve tips and gravy over rice, pasta, or baked potato.

- Be sure all visible fat is trimmed off the meat.
- Brown on all sides in a large heavy skillet.
- Add consomme, wine (or cranberry cocktail), soy sauce, garlic and onion powder.
- Heat to boiling.
- Reduce heat, cover, and simmer 1 hour, or until meat is tender.
- Blend cornstarch and water and stir gradually into the stew.
- Cook, stirring constantly, until gravy thickens and boils.

- MAKING THE MARINADE:.
- Combine the soy sauce, oils, garlic, ginger, sugar, zest, red pepper, and scallion in a small bowl.
- PREPARING THE STEAK TIPS:.
- Combine the marinade and meat in gallon-size zipper-lock bag; press out as much air as possible and seal bag. Refrigerate 1 hour, flipping bag after 30 minutes to ensure that meat marinates evenly.
- About halfway through marinating time, turn burners on grill to high, close lid, and heat grill until hot, about 15 minutes.
- Remove steak tips from marinade and pat dry with paper towels. Grill, covered, until well seared and dark brown on first side, about 4 minutes. Using tongs, flip steak and grill until second side is well seared and thickest part of meat is slightly less done than desired, 4-5 minutes for medium-rare (about 130 degrees on instant-read thermometer) 6-8 minutes for medium (about 135 degrees); if exterior of meat if browned but steak is not yet cooked through, move steak to cooler side of grill and continue to desired doneness.
- Transfer steaks to cutting board; tent loosely with foil and let rest for 5 minutes. Slice steak very thinly on the bias. Serve immediately with orange wedges.

- Cut steak lengthwise in half, forming two 2- to 3-inch-wide strips. Cut each strip into 2- to 3-inch triangles. Combine 2 tablespoons olive oil, garlic, sugar, soy sauce, thyme, and 2 teaspoons harissa in large bowl; whisk to blend. Add beef; toss to coat evenly. - Saute` mushrooms and bacon* pieces in butter until lightly browned; spoon into a casserole.
- Add remaining butter and olive oil to skillet; add meat, and brown on all sides.

- Cut the steak lengthwise in half and slice each half across at an angle into 2 inch wide triangles.
- Combine 2 tbsp olive oil, garlic, sugar, soy sauce, thyme and 2 tsp harissa sauce into a zip bag (or large bowl) and add beef. Close the bag and mix by squeezing the bag with your fingers to coat all the beef pieces (or toss in bowl to coat each piece and cover). - Whisk 2 tbsp olive oil, 1 tbsp harissa and 2 tbsp water in a small bowl to blend. Season this sauce with salt.

SAUTEED SIRLOIN TIPS WITH BELL PEPPERS AND ONION RECIPE

- Rinse, pat dry and cut the sirloin steaks into 1-inch pieces. Whisk together the teriyaki sauce, brown sugar, olive oil, chopped parsley, 3 clove minced garlic and red pepper flakes. Place into a plastic storage bag and refrigerate for several hours or overnight. To prepare, remove the sirloin tips from the marinade. Discard the marinade. Heat a few drizzles of olive oil in a large cast iron or heavy skillet over medium-high heat. Add the sirloin tips. Cook for 5-7 minutes until browned and to your preferred doneness. Season with 1 tsp of steak seasoning. Remove from the pan to a platter to rest. Add the sliced bell peppers and onion wedges to the pan.
