CHARLESTON RED RICE



Charleston Red Rice image

This classic Red Rice is a Lowcountry side dish of long grain white rice that's baked with bacon, onion, garlic and tomato!

Number Of Ingredients 11

3 strips bacon, chopped
¼ cup salted butter
1 onion, finely diced
1 clove garlic, minced
1 (6 ounce) can tomato paste
1 ½ teaspoons kosher salt
1 ½ teaspoons sugar
Freshly-ground black pepper, to taste
2 cups water
1 cup uncooked long-grain white rice
Garnish: chopped fresh parsley

Steps:

  • Preheat oven to 350° F. Grease a 2-quart baking dish; set aside.
  • In a large skillet, cook bacon over medium heat until crisp, about 7-8 minutes. Use a slotted spoon to remove bacon to a paper towel-lined plate, reserving the drippings in the pan. Melt butter in the same skillet over medium-high heat. Add onion and cook, stirring, until the onion softens, 3 to 4 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds. Stir in the tomato paste, kosher salt, sugar and pepper. Cook for 1 more minute.
  • Add the bacon, water and rice. Bring to a simmer, then reduce the heat to low. Cook, uncovered, stirring occasionally, until the liquid has reduced slightly, about 8-10 minutes. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet as you stir.
  • Transfer to the prepared baking dish. Cover and bake until the rice is tender, about 40-45 minutes, stirring every 15 minutes.
  • Fluff the rice, garnish with fresh parsley, and serve.

I didn't have fresh green or red peppers to make Spanish Rice so I used a can of zucchini in Italian tomato Sauce Wow! With the spices it was great! You can use any leftover cubed cooked meat or serve plain. Great the next day also. This is a good make ahead dish and bake later. You will be surprised with the great flavor!

1/4 cup cold water
1 cup chopped white onion
1 teaspoon ground cumin
1 teaspoon ground chili powder
1/2 teaspoon ground black pepper
1 teaspoon chopped basil
1 teaspoon salt or 1 teaspoon salt substitute
1 (15 ounce) can zucchini with Italian-style tomato sauce
1 (15 ounce) can tomato sauce
4 -5 cups cooked white rice
1 -2 cup elk meat (optional) or 1 -2 cup buffalo (optional)
Pam cooking spray
aluminum foil

Steps:

  • In small mixing bowl, add the first seven ingredients.
  • In a large mixing bowl pour the zucchini and sauce. Chop the zucchini in one inch pices.
  • Add the tomato sauce, rice and meat, if desired.
  • Mix gently.
  • With a rubber spatula pour out the onion and spice mixture and mix in slowly so it is absorbed throughout the dish.
  • Preheat oven to 375*.
  • Spray Pam in a glass flat pyrex dish.
  • Spread the rice evenly.
  • Cover with foil.
  • Bake 40-45 minutes.
  • Note: If chilled before baking, bake another 15 minutes.

Red rice and sausage is a Charleston favorite. I like to use turkey sausage, another good alternative is Italian sausage.

Number Of Ingredients 11

2 cups long grain white rice
4 cups water
3 slices turkey bacon
1 onion, chopped
1 teaspoon minced garlic
1 green bell pepper, seeded and chopped
1 (16 ounce) package smoked turkey sausage, halved and sliced
1 (14.5 ounce) can stewed tomatoes, drained
1 (14 ounce) jar spaghetti sauce
dried Italian seasoning to taste
salt and pepper to taste

Steps:

  • Combine the rice and water in a saucepan, and bring to a boil. Cover, reduce heat to low, and simmer for 15 to 20 minutes, until rice is tender and the water has been absorbed. Set aside.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium heat. Add the bacon, and brown on each side. Add the onion, garlic and green peppers to the skillet, and cook until soft, stirring frequently. Mix in the sausage, and cook until hot, then pour in the tomatoes. Cook just until heated through. Stir in the cooked rice and spaghetti sauce. Season with Italian seasoning, salt and pepper. Transfer to a large casserole dish, and cover with a lid or aluminum foil.
  • Bake for 1 hour in the preheated oven, then remove the lid, and cook for an additional 15 minutes.
