1/4 cup water
1 teaspoon seafood seasoning
1 package (1 pound) frozen cooked medium salad shrimp, thawed
Hot cooked rice

Steps:

  • In a saucepan, combine soup, water and seafood seasonings. Bring to boil. Reduce heat; stir in shrimp. Heat through. Serve over rice.

4 egg yolks
2 tablespoons flour
2 cups milk
2 drops tabasco sauce
1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons melted butter
3/4 pound crab meat
1 1/2 pounds shrimp, cooked and peeled
1/4 cup sherry

Steps:

  • Blend flour and egg yolks. Add seasonings to milk and add to the egg mixture. Add the melted butter and blend until smooth. Stir while cooking over low heat until thickened. Add sherry and seafood, pour into a casserole and brown quickly under broiler.

2 cups cooked brown rice ( I used white rice)
½ cup dry white wine
1 ½ T butter
½ t salt
¼ t black pepper
¼ t cayenne pepper
1 bay leaf
1 pound large shrimp, peeled and deveined
1 pound sea scallops
1 cup heavy cream
4 egg yolks, beaten
¼ cup cream sherry

Steps:

  • Heat oven to 325. Coat a 2 quart casserole with nonstick cooking spray. Spoon rice into prepared dish. In a medium sized skillet, combine the wine, butter, salt, black pepper, cayenne and bay leaf. Bring to a simmer. Add shrimp and cook for 4 minutes over medium heat. Remove shrimp and reserve. Add scallops and cook for 5 minutes. Remove scallops and reserve. Simmer cooking liquid for 4 minutes or until reduced to about 3 tablespoons. Remove bay leaf and discard. Reserve cooking liquid. In small saucepan, whisk together the cream and egg yolks. Heat over medium-high heat for about 2 minutes, whisking constantly, until thickened. (be careful with this. If you cook too long or get it too hot it can start to curdle!) Mix together shrimp, scallops, reduced cooking liquid and cream mixture. Spoon mixture evenly over the rice. Pour cream sherry over the top. Bake at 325 for 25 minutes. Let stand 15 minutes before serving. Garnish with chopped parsley.

1 cup cream
3/4 teaspoon salt

2 tablespoons sherry
cooked rice

Steps:

  • Melt butter and add corn starch to make a smooth paste. Add cream and stir over medium high heat until mixture begins to thicken. Beat and add egg yolks. Add to mixture and cook while stirring gently for 2 minutes, until egg yolks thicken - DO NOT BOIL. Add sherry and seafood. Serve immediately over rice.

2 teaspoons olive oil, divided
2 cups sliced baby portabella mushrooms
3/4 cup 1% low-fat milk
1 tablespoon all-purpose flour

1 large egg yolk
1/4 teaspoon kosher salt
1/8 teaspoon ground red pepper
1/8 teaspoon fresh ground black pepper
4 slices whole wheat bread, toasted

Steps:

  • Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat.
  • Add shrimp.
  • Saute 3 minutes and remove from skillet.
  • Keep warm.
  • Add 1 tsp oil to skillet.
  • Add bella mushrooms and saute 5 minutes.
  • Combine milk, flour, sherry, and egg yolk, stirring well with a whisk.
  • Add to the mushrooms.
  • Bring mixture to a boil, reduce heat and simmer until thick (about 3 minutes), stirring constantly with a whisk.
  • Return shrimp to skillet and stir in salt and peppers.
  • Cut each toast slice in half diagonally.
  • Arrange 4 toast triangles on each of 2 plates.

  • Spray a large sauce pan with cooking spray and heat over medium heat.

1 lb cooked, deveined shrimp
1 c milk
2 Tbsp flour
1/2 tsp dry mustard
2 Tbsp sherry
salt and pepper to taste
2 Tbsp butter
3 Tbsp tomato ketchup
1 Tbsp scant worcestershire sauce
cayenne pepper

Steps:

  • 1. Whirl milk, flour, and dry mustard in blender. Pour into top of double boiler and cook over boiling water, stirring constantly, until smooth and thickened
  • 2. Stir into thickened sauce butter, ketchup. Worcestershire sauce. Season with salt, pepper, and cayenne to taste. Stir in shrimp and heat thoroughly. At this point dish may be held in refrigerator all day and re-heated at serving time. JUST BEFORE SERVING, STIR IN SHERRY ~ THIS MAKES THE WHOLE DISH ~ DO NOT OMIT !

BAKED SHRIMP NEWBURG

Ever since I can remember my mother has made a "quickie" version of "Shrimp on Toast" for a fast lunch. It was buttered toast, canned shrimp and a cream sauce. Fast to do, and tasted fast. Tonight I'm ratcheting it up a few notches for her. Hope she will like it. I know there are other baked versions of Newburg but I don't seem to be able to find one quite like this.

1 French bread
1 lb shrimp, raw in shell (any size)
1/4 cup butter
1/4 cup flour
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
2 cups whole milk
1/4 cup sherry wine
1/4 cup water (or chicken stock)
1/2 teaspoon curry powder
1/2 teaspoon paprika, hot
1 teaspoon pepper, coarse ground
1 teaspoon salt
1 cup mozzarella cheese, grated

Steps:

  • Preheat oven to 350°F
  • Slice the bread on the diagonal about 1/2 inch thick, and toast. You have to have enough slices to cover the bottom of a 9x9 ovenproof pan twice. Set toast aside.
  • Peel the shrimp and roughly chop. Set aside.
  • Heat the butter in a medium saucepan and sauté the onion and celery until softened. Add the flour and whisk. Slowly add in the milk and simmer until thickened. Let cook for one minute to get rid of the raw flour taste.
  • Stir in the sherry, water, curry, paprika, pepper and salt. Remove half of the sauce and set aside. (Note: the better the sherry the better the sauce will taste.).
  • Reheat remaining sauce in the saucepan to a simmer and add the shrimp and half the cheese. Cook until shrimp are almost done, about 1-2 minutes.
  • Place one layer of the toast in the bottom of the pan. Pour the shrimp mixture over the top and smooth out. Arrange remaining toast on top. Pour reserved sauce over the final layer of toast and sprinkle on remaining 1/2 cup of cheese.
  • Bake for about 25-30 minutes, or until bubbly on top.

  • Before removing from fire, add beaten egg and cream.

Steps:

  • Cook rice as directed, cover to keep warm.
  • In a large saucepan, melt 2 tsps butter over medium heat. Add the shrimp shells and cook, stirring until crisp, about 5 minutes. In a small bowl, whisk the milk with the cornstarch, then whisk into the shrimp shells. Bring to a simmer, whisking, then cook for 1 minute. Strain the mixture into a bowl, pressing the shrimp shells to get all the liquid, discard the shells. Wash and dry the saucepan.
  • In the saucepan, melt the remaining 2 tsps butter over medium-low heat. Add the onion and cook, stirring frequently, until softened, about 5 minutes. Stir in the flour for 2 minutes. Slowly whisk in the milk mixture and bring to a boil. Lower the heat and simmer for 1 minute.

I found this recipe in a cookbook titled Casserole Cook Book by Better Homes & Gardens, printed in 1961 (I like old cookbooks), and I made this for my parents and sister while stuck in the states. Everyone loved this!

1/3 cup(s) butter
2 tablespoon(s) all purpose flour
2 cup(s) half and half
4 egg yolks, slightly beaten
4 cup(s) shrimp, peeled, deveined, tails removed, cooked
1/2 teaspoon(s) salt
1/4 cup(s) dry white wine
2 teaspoon(s) lemon juice
toast cups or cooked egg noodles, for serving
paprika, for garnish as desired

Steps:

  • For the shrimp, clean them and remove the tails, cook them your preferred way, I like to sauté them.
  • Melt the butter in a large saucepan, stir in the flour until smooth. Slowly stir in the cream, stir continuously until sauce thickens.
  • Lightly beat the egg yolks. Scoop out a little bit of sauce and stir into the yolks (called tempering so you do not end up with scrambled eggs in your sauce), then add the yolks to the sauce and stir until completely blended in, about 1 minute.
  • Stir in the shrimp and salt, and heat through, now you are just warming the shrimp as they are already cooked. When hot, stir in the wine and lemon juice.
  • Spoon into toast cups or spoon over hot buttered egg noodles. Garnish with a light sprinkle of paprika if desired. Serve and enjoy.

1 teasp Old Bay Seafood Seasoning
1 (10 3/4 oz) can condensed cream of shrimp soup
1/4 cup cooking sherry
1 (3 oz) package cream cheese

Steps:

  • Peel and devein shrimp, removing tails. Preheat large sauté pan on medium high heat for 2-3 minutes. Spray pan with cooking spray. Place shrimp in pan and sprinkle with Old Bay Seasoning. Cook 2 minutes, stirring often. Stir in soup, cooking sherry and cream cheese until blended and mooth. Simmer 3 minutes. Serve Serve over rice or mashed potatoes with a fresh tossed salad
