Let me teach you how to make buttery shortbread wedge cookies using a simple 6 ingredient dough. There's no chilling necessary and the cookies will never over-spread because you're baking them in round pans. See above for optional flavors & add-ins.

1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
2/3 cup (135g) granulated sugar
1 and 1/2 teaspoons pure vanilla extract
1/2 teaspoon salt
2 cups (250g) all-purpose flour (spoon & leveled)
1/4 cup (28g) cornstarch
optional: coarse sparkling sugar

Steps:

  • Preheat oven to 325°F (163°C). Line two 8-inch cake pans with parchment paper leaving enough overhang around the sides to easily lift shortbread out. (Tip: Parchment is used so you can easily remove the shortbread and not cut it while it's in the pan. I like to use a square of parchment and I cut a 1-inch slit in the center of each side. This helps reduce the amount of creases when lined in the pan.)
  • Using a hand mixer or a stand mixer fitted with paddle attachment, beat the butter and granulated sugar together on medium-high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl as necessary. Add the vanilla and salt and beat until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl as necessary. Add the flour and cornstarch and beat on low speed for 1 minute as the mixture begins to combine. Turn the mixer up to medium speed and beat for 1-3 minutes or until the dough clumps together. (It will eventually, just keep mixing it.) If you're adding dry add-ins (see above), this is when you'll add them.
  • Divide dough in half. If you want to be totally accurate, weigh the halves to make sure they're even. Recipe makes almost 1.5 lbs of plain dough (will weigh more if you added add-ins). Press each half of dough into a prepared cake pan. You want it nice and compact in the pans. Sprinkle with optional coarse sugar. Dock the surface all over with a fork to prevent air bubbles.
  • Bake the shortbread for 28-30 minutes or until very lightly browned on top and around the edges.
  • Remove from the oven, place pans on a wire rack, and cool shortbread for 10-15 minutes. Carefully remove the shortbread from the pans by picking it up with the parchment paper on the sides. Cut each into 8 large, 12 medium, or 16 small wedges. You want to make sure you cut the shortbread while it's still warm. Enjoy warm or cool shortbread completely on wire racks.
  • Cover and store shortbread at room temperature for up to 1 week. If you added a topping such as glaze, icing, buttercream, or melted chocolate, refrigerate after 2 days.

WHILE chocolate desserts, fresh fruit sorbets and fruit tarts re main the classic, ever-popular French desserts, lighter, cookie- based desserts are appearing more frequently. Several Paris restaurants have recently offered sable, or shortbread cookie, desserts. This recipe comes from Jacqueline Fenix, a fine restaurant in Neuilly, a Paris suburb, where the chef, Michel Rubod, offers warm shortbread with sauteed apples and homemade apricot jam. At Tour d'Argent the menu recently featured a dessert made of three layers of sables interlaced with fresh raspberries, all set in a pool of fresh raspberry sauce, while at Jacques Cagna sables came warm from the oven, accompanied by sauteed apples and cinnamon ice cream.

1/3 cup almonds, ground to a fine powder
1/4 cup sugar
2 egg yolks
1/3 cup (3 ounces) unsalted butter, softened
1 cup bleached flour
1 tablespoon unsalted butter
4 tart cooking apples, peeled, cored, cut into thin slices
1 tablespoon sugar
Fruit jam

Steps:

  • In food processor blend ground almonds, sugar and yolks. Add butter and flour and process until well blended. Remove dough and shape into 6-by-2-inch roll. Refrigerate in plastic wrap for 24 hours.
  • Preheat oven to 375 degrees.
  • Roll cookie dough into 1/4-inch thickness, then cut into 18 rounds 2 1/2 inches in diameter. Place on baking sheet and bake for 10 minutes, or until golden.
  • Prepare apple slices while cookies are baking. Melt tablespoon of butter in medium-size skillet over moderate heat. Add apples and sugar and cook, stirring occasionally, just until slices are cooked through, about 10 minutes.
  • To serve, place 3 warm cookies on each plate, top with portion of apples and serve immediately with pot of jam.

Do not be fooled by this little recipe. So few ingredients but believe me! It-is-a one right after another pop it in your mouth oh I cannot stop eating these. Before you know it, you will have to make another batch for the rest of your family. I got this from my best friend Robin who got it form her Taste of Home Cookbook.

1 cup butter, no substitutes
2/3 cup sugar
1/2 teaspoon almond extract or 1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup jam, for the centers

Steps:

  • Cream butter and sugar
  • Beat in extract
  • Gradually blend in flour
  • Cover and refrigerate for an hour
  • Roll into one-inch balls and place one inch apart on un-greased cookie sheet
  • With the end of a wooden spoon make a indention in the ball and fill with jam
  • I have used Variety of jams and jellies Raspberry being the best! but Apricot is yummmie too, along with apple, blackberry, blueberry the possibilities are endless.
  • Bake at 350 for 14 to 18 minute.
