Thinly sliced raw cauliflower takes center stage in this salad, tossed in a bright, limey dressing and dusted with nutritional yeast.

1 teaspoon finely grated lime zest
1/4 cup fresh lime juice
1 teaspoon Dijon mustard
1 teaspoon honey
1/4 cup olive oil
Kosher salt, freshly ground pepper
10 ounces cauliflower florets (from about 1/2 of a small head), very thinly sliced lengthwise on a mandoline
1 tablespoon plus 1 teaspoon nutritional yeast
2 cups (1-inch-wide strips) lollo rosso lettuce or romaine
2 cups torn frisée
2 ounces Parmesan, finely grated, divided

Steps:

  • Whisk lime zest, lime juice, mustard, and honey in a large bowl. Whisking constantly, gradually add oil; whisk until emulsified. Season with salt and pepper.
  • Add cauliflower and 1 Tbsp. nutritional yeast to dressing; toss to combine. Add lettuce, frisée, and half of Parmesan and toss again; season with salt and pepper.
  • Transfer salad to a platter and top with remaining Parmesan and remaining 1 tsp. nutritional yeast.

1/2 small head golden cauliflower, shaved (about 1 1/2 cups)
1/2 small head purple cauliflower, shaved (about 1 1/2 cups)
1/2 bunch green onions, green parts only, sliced
2 cups torn curly kale
1/2 cup dried cranberries
1 1/2 tablespoons olive oil
Juice of 1 lemon (about 3 tablespoons)
Kosher salt and coarsely ground black pepper
1/2 cup pecans, chopped and toasted

Steps:

  • Combine the golden cauliflower, purple cauliflower, green onions, kale and cranberries in a large bowl.
  • In a small bowl, whisk together the olive oil and lemon juice. Add the dressing to the salad and toss to combine. Season to taste with salt and pepper.
  • Sprinkle the toasted pecans over the top just before serving.

1 cup mayonnaise
2 tablespoons parmesan cheese
1 tablespoon lemon juice
1/8 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 dash Accent seasoning
1/2 head large iceberg lettuce, torn
1/2 head large romaine lettuce (may mix in other greens, such as spinach)
3/4 cup grated cauliflower
3/4 cup toasted breadcrumbs

Steps:

  • Combine mayonnaise, Parmesan cheese, lemon juice, garlic powder, salt, pepper and Accent seasoning to make the dressing.
  • Chill in the refrigerator 2 hours or more so flavors will develop.
  • Toss greens with dressing and half of the grated cauliflower.
  • Top each serving with remaining cauliflower and the toasted bread crumbs.Enjoy!

4 thin slices lemon
2 cloves garlic, thinly sliced
1/2 teaspoon crushed fennel seeds
1/2 teaspoon crushed coriander seeds
2 tablespoons fresh lemon juice
Kosher salt and freshly ground black pepper
Chopped parsley and chives

Steps:

  • Thinly slice the cauliflower on a mandoline or with a heavy sharp knife. Place in a large bowl and set aside.
  • Heat the oil in a small skillet over medium heat. Add the lemon slices, garlic, fennel seeds and coriander seeds and cook, stirring occasionally, until fragrant and the garlic begins to brown, about 4 minutes.
  • Remove from the heat and stir in the lemon juice. Pour the dressing over the cauliflower. Season with salt and pepper, sprinkle with parsley and chives and toss.

1/2 head of a 1-pound cauliflower, cored, cut into florets
1/2 head of a 6-ounce radicchio, cored, quartered lengthwise
6 inner celery stalks with leaves
1/4 cup thinly sliced chives
1/4 cup flat-leaf parsley leaves
1 lemon
Dressing:
2 teaspoons Dijon mustard
1/4 cup walnut oil
Kosher salt, freshly ground pepper
1 ripe Bosc pear
1/4 cup coarsely chopped walnuts, toasted if desired

Steps:

  • For salad:
  • Push cauliflower florets, then radicchio, through the feed tube of a food processor fitted with a slicing disk, or thinly slice cauliflower on a mandoline and radicchio with a knife. Mix in a large bowl.
  • Peel rounded side of celery with a peeler to remove strings. Remove leaves; add to bowl. Thinly slice stalks with a knife; place in bowl and add chives and parsley. Finely grate zest from whole lemon directly over the bowl to catch any citrus oil. Toss to mix well. Squeeze juice from lemon for dressing.
  • For dressing:
  • Place 1 tablespoon juice in a small bowl. Whisk in Dijon mustard. Gradually whisk in oil. Season with salt and pepper.
  • Up to 1 hour before serving, add dressing to salad; toss to coat. Season salad with salt, pepper, and more lemon juice, if desired.
  • Cut pear into matchstick-size pieces. Add pear and walnuts to salad; toss to combine.

Shaved Cauliflower Salad image

1/2 cup white vinegar
3/4 cup golden raisins
1/2 cup capers
1 clove garlic
1/4 cup olive oil
1 head cauliflower
1 red onion
1 bunch Italian parsley chiffonade

Steps:

  • In a food processor puree vinegar, 1/4 cup of the golden raisins, capers and 1 garlic clove until smooth. While the machine is on drizzle olive oil into mixture. Taste and adjust seasoning with salt.
  • Shave 1 head cauliflower into 1/4" or less thick slices on a mandolin or by hand. Toss in a large bowl with puree and 1/2 cup of additional golden raisins. Let sit for 2 hours, stirring occasionally.
  • When ready to serve toss in 1 small julienned or thinly sliced onion and parley chiffonade. Salt and pepper to taste before serving.
