CHICKEN IN CARDAMOM-YOGURT SAUCE WITH RED BELL PEPPER AND SHALLOT CURRY image

Number Of Ingredients 25

1 1/2 C yogurt
1 1/2 C canned tomato puree
3 T ground cumin
2 T ground coriander
2 T canola oil
4 t paprika
1 T celery seeds
1 1/2 t cayenne pepper
1 t salt
1 t ground giner
1/2 t cardamom seeds, cracked
10 whole cloves
5 garlic cloves, peeled, chopped
2 lbs skinless boneless chicken thighs, trimmed
Steamed Basmati Rice
for Red Bell Pepper and Shallot Curry:
1/2 C veg oil
1 T cumin seeds
3 C thhinkly slice shallots (about 10)
1 bunch green onions, white and pale green parts separate from dark green parts, all chopped
3 lg jalapenos, seeded, finely chopped
1 t ground turmeri
1 t paprika
1 t black mustard seeds
3 large red belle peppers, thinly sliced

Steps:

  • For chicken: Preheat overn to 375F. Whisk first 13 ingredients in 2qt baking dish. Add chicken. Stir to coat. Bake until cooked through, about 40mins. For Curry: Heat veg oil in heavy large skilled over med-hi heat. Add cumin ses and cook til aromatic. Add shallots and light parts of green onions. cook til golden brown, about 6mins. Add tomatoes, jalapenos, turmeric, paprika and mustard seeds to skillet. Simmer unti oil begins to separate, about 10mins. Add bell peppers and reduce heat to med-low. Cover and cook til peppers are soft, stirring frequently, about 10mins. Season w/salt and pepper. Stir in dark green parts of green onions. Top chicken with sauce over rice.

2 tablespoons olive oil
4 large shallots, finely chopped (about 2 cups)
Kosher salt, freshly ground pepper
1 tablespoon apple cider vinegar
1 1/2 cups low-fat plain Greek yogurt
1 tablespoon sliced chives, plus more for serving
Chips or crackers (for serving)

Steps:

  • Heat oil in a medium skillet over medium. Add shallots and season generously with salt and pepper. Cook, stirring occasionally and reducing heat if needed, until shallots are golden brown and tender, 15-18 minutes. Let cool slightly.
  • Mix shallots and vinegar into yogurt in a medium bowl; season with salt and pepper.
  • Stir 1 Tbsp. chives into yogurt; divide among bowls and top with more chives. Serve with chips for dipping.
  • Do Ahead
  • Yogurt (without chives) can be made 3 days ahead; cover and chill.

I think of Persian shallots like truffles-they grow wild in the foothills of the Zagros Mountains, and have to be found and dug out of the earth by dedicated artisans. This lovely, simple dish is great to have in your fridge at all times (it will keep, covered, in the fridge, for a week). It goes to perfection with eggs and every kind of kabab, adding a wonderful and distinctive flavor to any dish it accompanies.

1 ½ cups dried musir (Persian shallots, see note)
4 cups (960g) plain yogurt
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
1 cup (85g) shredded fresh mint, or 1 tablespoon dried mint
Garnish:
1 teaspoon crushed dried rose petals (see note)
1 tablespoon fresh mint leaves

Steps:

  • Soak the musir in water for 3 to 24 hours in the fridge. Drain, rinse in cold water, and pat dry. Inspect the soaked musir, cutting out any stems that remain hard after soaking, and chop finely.
  • In a mixing bowl, combine the chopped musir with the yogurt, salt, pepper, and mint. Mix well.
  • Add the garnish if you like and serve as an appetizer or an accompaniment.

2 tablespoons minced shallot
1 teaspoon Worcestershire sauce
Coarse salt and freshly ground pepper
