For this recipe, the traditional 7-layer dip has been revisited so that each layer is good enough to eat on its own, but isn't so much effort that the whole thing can't be finished in 20 minutes. The order of the layers offers some delightful moments, like where the cheese melts into the warm refried beans or where the cool sour cream meets the fiery salsa. Cilantro and scallions serve as a refreshing counterpoint, and Fritos lend added crunch. No need to dig out your trifle bowl: A platter with a lip is preferred here for easier scooping.

3/4 cup sour cream
1 jalapeño, finely chopped (about 2 tablespoons)
Kosher salt and black pepper
2 medium ripe avocados
2 tablespoons freshly squeezed lime juice (from 1 lime)
1 (16-ounce) can refried beans
1 teaspoon ground cumin
1 cup freshly grated Cheddar (about 4 ounces)
1 cup sliced black olives (about 4 ounces)
3/4 cup good-quality, store-bought red salsa, fresh or jarred and any heat level (drained if watery)
1/2 cup Fritos or corn nuts, crumbled
1/4 cup thinly sliced scallions (about 2 scallions)
1/4 cup tightly packed cilantro leaves
Tortilla chips, for serving

Steps:

  • In a small bowl, stir together the sour cream and half the jalapeño (about 1 tablespoon). Season with salt and pepper. In another small bowl, coarsely mash the avocado, lime juice and remaining 1 tablespoon jalapeño, then season with salt and pepper.
  • In a small saucepan over medium-low heat or in a microwave, warm the refried beans with the cumin. Season with salt and pepper.
  • Spread the beans on a platter with a rim or lip. Top evenly with the cheese, followed by the olives, avocado mixture and salsa. Top with dollops of jalapeño-sour cream and sprinkle with crumbled Fritos, scallions and cilantro. Serve with tortilla chips.

This has many of my favorite appetizers all in one dish. Consists of layers of Wild Mushroom Couscous, Spicy Lemon Hummus, Kalamata Olive Tapenade, marinated artichoke hearts, feta cheese, sundried tomatoes, and parsley. Makes an impressive presentation with all the rich colors. Some individual layers require their own separate preparation in advance of assembling the dip. The flatbread is a perfect complement to this dish.

1 cup plain cooked couscous
2 tablespoons lemon juice
2 tablespoons olive oil
4 -5 shiitake mushrooms, soaked and chopped
2 medium tomatoes, seeded and chopped
1/3 cup green onion, diced
1/4 cup pine nuts
1 tablespoon oregano
8 ounces prepared lemon hummus
1 tablespoon ground cumin
fresh ground black pepper
3 garlic cloves
1 cup pitted kalamata olive
1 cup pine nuts
1 cup parsley, minced
1/2 cup cilantro, minced
1 teaspoon fresh rosemary
fresh ground black pepper
1 teaspoon orange peel, grated
1/4 cup olive oil
2 (6 ounce) jars marinated artichoke hearts, drained and chopped
8 ounces feta cheese, crumbled
4 ounces sun-dried tomatoes, drained and chopped
1 cup parsley, minced
5 loaves prepared flat bread
2 tablespoons butter, melted
2 teaspoons fresh rosemary

Steps:

  • Prepare the Wild Mushroom Couscous.
  • Cook 1 cup of plain couscous according to package directions and let it cool to room temperature.
  • Whisk together lemon juice and olive oil.
  • Pour into couscous and add the next 5 ingredients, stirring to mix well.
  • Line a nine-inch glass pie plate with the wild mushroom couscous.
  • Prepare the Spicy Lemon Hummus.
  • Stir the ground cumin and black pepper into the prepared lemon hummus.
  • Spread the spicy lemon hummus on top of the couscous mixture.
  • Prepare the Kalamata Olive Tapenade.
  • Mince garlic in food processor and then add the next seven ingredients.
  • Slowly add the olive oil while the blade is running. Process until smooth.
  • Spread one cup of the tapenade over the hummus layer. (The recipe will make slightly more tapenade than you need).
  • Arrange chopped artichoke hearts as the next layer, followed in turn by layers of feta cheese, sundried tomatoes, and parsley.
  • Serve immediately or cover and refrigerate. Bring to room temperature before serving.
  • Prepare the Flatbread with Rosemary Butter.
  • Stir rosemary into the melted butter and brush on the flatbread. Heat on baking tray in 350 degree oven for one to two minutes.

1 1/4 cups feta cheese, crumbled and DIVIDED
2 tablespoons milk
1 tablespoon dried basil
10 ounces frozen spinach, thawed and well-drained
1 large tomatoes, chopped
3 green onions, chopped
1/4 cup sliced black olives

Steps:

  • In a mixing bowl, beat cream cheese, 1 cup of feta, milk and basil until well-blended. Spread in bottom of 9" pie plate.
  • Top with drained spinach, then tomato, then green onion, then black olives, then remaining feta cheese.
  • Cover and refrigerate about 1 hour before serving.

3 cups all-purpose flour, more
flour, for kneading
2 teaspoons kosher salt
1 tablespoon fresh rosemary, chopped
1 teaspoon extra virgin olive oil
1 1/4 cups water

Steps:

  • Combine flour, salt and rosemary in a large bowl.
  • Stir in water and oil until dough comes together.
  • Turn onto a lightly floured surface; knead until smooth, about 5 minutes, dusting surface lightly with flour as needed.
  • Place dough in an oiled bowl, cover with plastic wrap, and let rest for 30 minutes at room temp or up to 2 hours in the fridge.
  • Heat a 10" to 12" cast iron or other heavy skillet over medium heat until a drop of water sizzles off on contact.
  • On a lightly floured surface, divide the dough into 6 portions.
  • Roll each piece into 8" round, put in the heated skillet and cook until golden brown spots appear on the bottom and the bread begins to puff, 1- 2 minutes.
  • Flip the bread, and cook until spots appear, then transfer to a plate (cover with a towel to keep warm).
  • Repeat the cooking process with the remaining 5 dough portions.
