SHAVED ASPARAGUS SALAD WITH GINGER AND SESAME



Shaved Asparagus Salad With Ginger and Sesame image

Succulent, fat, fresh asparagus is thinly sliced by hand for this raw salad - easier than you'd think, and safer than using a mandoline. It's very refreshing and bright tasting.

2 tablespoons rice vinegar
1 tablespoon grated ginger
1 teaspoon minced garlic
1 tablespoon light brown sugar
1 jalapeño pepper, seeds removed and finely diced (optional)
2 teaspoons toasted sesame oil
Salt and pepper
1 1/2 pounds fat asparagus
Salt and pepper
1/2 cup slivered scallions
Squeeze of lime juice, to taste
Mint leaves, for garnish
Cilantro sprigs, for garnish
1 tablespoon toasted sesame seeds
1 tablespoon black sesame seeds

Steps:

  • Make the dressing: In a small bowl, stir together rice vinegar, ginger, garlic and brown sugar. Add jalapeño and sesame oil, then season to taste with salt and pepper.
  • Snap or cut off the tough bottoms of each asparagus spear. With a vegetable peeler, peel each tough-skinned spear, starting halfway down from tip and peeling toward bottom end.
  • Cut the asparagus at a long diagonal into very thin slices (not paper thin - about the width of a thinly sliced onion). Place asparagus slices in a wide salad bowl. Season with salt and pepper and toss lightly. Add the ginger dressing and toss to coat well. Taste and adjust. Add scallions and lime juice and toss again.
  • Garnish with mint leaves and cilantro sprigs. Sprinkle with sesame seeds and serve.

1 beef top round steak (1 pound)
4 cups cut fresh asparagus (2-inch pieces)
3 tablespoons reduced-sodium soy sauce
2 tablespoons sesame oil
1 tablespoon rice vinegar
1/2 teaspoon grated gingerroot
Sesame seeds
Optional: Lettuce leaves, julienned carrot and radishes, cilantro leaves and lime wedges

Steps:

  • Preheat broiler. Place steak on a broiler pan. Broil 2-3 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°), 6-7 minutes per side. Let stand 5 minutes before slicing., In a large saucepan, bring 1/2 in. water to a boil. Add asparagus; cook, uncovered, just until crisp-tender, 3-5 minutes. Drain and cool. , Mix soy sauce, sesame oil, vinegar and ginger; toss with beef and asparagus. Sprinkle with sesame seeds. If desired, serve over lettuce with carrot, radishes, cilantro and lime wedges.

1 pound asparagus
1 /12 c wheatberries
2 c green onions
1 small bunch of radishes trimmed & quartered
1/4 c chopped peeled fresh ginger
3 Tblsp rice vinegar
2 Tblsp soy sauce
2 chopped garlic cloves
1/2 c peanut oil
1/4 c sesame oil
2 8 oz tuna steaks

Steps:

  • cook asparagus in boiling salted water 3 minutes using tongs-tranfer asparagus to bowl ice water & cool add wheatberries to salted water & simmer until tender not mushy approx 55 minutes Drain Tranfer to a large bowl Pat aspargus dry w/paper towels & cut into 1/2 inch pieces Mix asparagus, green onions, & radishes to wheatberries Combine ginger, soy sauce, galic, vinegar & oils Saute tuna steaks in 1 T peanut oil until done to liking 3-5 minutes/side Cut tuna into 1/2 inch pieces & mix into wheat berries mix Serve w/cilantro sprigs

1 pound fresh asparagus, cut into 1-inch pieces
1/4 cup water
8 cups torn romaine
1 green onion, chopped
2 tablespoons chopped pimientos
1/4 cup sesame seeds, toasted
2 tablespoons lemon juice
2 tablespoons vegetable oil
1/4 teaspoon pepper
1/4 teaspoon dried basil
1/8 teaspoon salt

Steps:

  • In a saucepan, combine asparagus and water; bring to a boil. Reduce heat; cover and simmer for 4-8 minutes or until asparagus is crisp-tender. Drain. Place asparagus in a large bowl and chill. Just before serving, add romaine, onion and pimientos. In a small bowl, whisk sesame seeds, lemon juice, oil, pepper, basil and salt; pour over salad and toss.

For the Creamy Sesame Dressing:
2/3 cup plus 2 tablespoons, divided unhulled sesame seeds
1 cup unsweetened soy, hemp or almond milk
2 tablespoons Dr. Fuhrman's Riesling Raisin Vinegar or rice vinegar
1 tablespoon raw cashew butter or 2 tablespoons raw cashews
1 teaspoon toasted sesame oil
5 dates, pitted
1 clove garlic, chopped
For the salad
2 medium beets, peeled and sliced 1/2 inch thick
1/2 cup water
8 ounces shiitake mushrooms, sliced
1 pound fresh asparagus, cut diagonally into 2 inch slices
1 tablespoon Dr. Fuhrman's VegiZest or other no salt soup base seasoning
1 teaspoon garlic powder
1 medium red bell pepper, seeded and thinly sliced
1/2 cup sliced water chestnuts
4 cups watercress
2 cups bean sprouts

Steps:

  • Lightly toast 2 tablespoons of the sesame seeds in a pan over medium heat for 3 minutes, shaking the pan frequently. Set aside. In a food processor or high powered blender, blend remaining 2/3 cup sesame seeds along with the other dressing ingredients, until smooth and creamy. Stir in toasted sesame seeds. To make the salad, preheat the oven to 400 degrees. Place beets and water in a baking pan. Cover and roast for 20 minutes. Uncover and continue roasting until tender. If needed, add more water to keep beets from drying out. Set aside. Meanwhile, water saute' mushrooms over high heat for about 5 minutes, using only enough water to keep from scorching. When mushrooms are tender and juicy, add the asparagus and water saute' until slightly tender but still crisp, about 5 minutes. Toss with VegiZest and garlic powder. Remove from heat and toss with bell pepper and water chestnuts. Place watercress on a plate and pile the vegetable mixture on top. Drizzle dressing over all, topping with the bean sprouts. Arrange roasted beets around the sides.

1 tsp sesame seed
140g asparagus
50g pea
200g courgette
1 tsp sesame or olive oil
small handful rocket leaves
20g feta cheese
grated zest ½ lemon

Steps:

  • Heat a small frying pan and add the sesame seeds. Cook, shaking the pan and making sure the seeds don't burn. When they are fragrant and have turned a light teak colour, tip them onto a saucer.
  • Steam the asparagus for 3-4 mins until almost done. Drop into a bowl of iced water to cool, then drain and wrap in a tea towel to dry really well. Cook the peas for 3 mins in the boiling water used to steam the asparagus, then drain and cool under a cold tap. Slice the courgettes on the diagonal, about 0.5cm thick.
  • Heat a griddle pan until very hot. Brush the asparagus and courgette slices with the oil, and cook in batches until nicely striped with dark brown. Cut the asparagus into 5cm lengths.
  • Mix the asparagus, courgettes, peas, rocket, feta and lemon zest. Grind over some black pepper and sprinkle with the sesame seeds before serving.

1 pound of fresh asparagus

2 tablespoon of toasted sesame seed oil
1 tablespoon of sugar

Steps:

  • Clean asparagus. Cut into 1" pieces. Bring water to boil and add asparagus. Return to boil and boil for 1 minute. Drain water off in colander. Place asparagus in ice water. Stir in cold water until asparagus is cold. Drain. Pat asparagus dry with towel. In a bowl, mix 2 tablespoon of soy sauce, 2 tablespoon of toasted sesame seed oil, 1 tablespoon of sugar. Stir until sugar is dissolved. Mix in asparagus. Toss until asparagus is fully coated.

4 cups sliced fresh asparagus (cut in 2-inch pieces)
3 tablespoons reduced-sodium soy sauce
2 tablespoons sesame oil
1 tablespoon rice vinegar
1/2 teaspoon grated gingerroot
Sesame seeds
Lettuce leaves, shredded carrots, sliced radishes, fresh cilantro leaves and lime wedges, optional

Steps:

  • Preheat broiler. Broil meat 3-4 in. from heat on each side to desired degree of doneness (medium-rare, 135°; medium, 140°; medium-well, 145°). Cool and cut into thin diagonal strips.
  • In a large saucepan, bring 1/2 in. water to a boil. Add asparagus; cook, uncovered, just until crisp-tender, 3-5 minutes. Drain and cool.
  • Combine beef and asparagus. Stir together soy sauce, sesame oil, vinegar and ginger; pour over beef and asparagus. Sprinkle with sesame seeds; toss lightly. If desired, serve on lettuce leaves with shredded carrots, sliced radishes, cilantro and lime wedges.
  • Yield: 6 servings.

ASPARAGUS SESAME SALAD

1 lb asparagus
1/4 c. rice vinegar
2 Tbls. soy sauce
1 Tbls. roasted sesame oil
2 Tbls chopped fresh cilantro
1/8 txp. coarse salt
3-4 c. baby arugula or mesclun salad (I've also used romaine)
2 Tbls sesame seeds, toasted

Steps:

  • Cut asparagus into one inch pieces. Blanch in boiling water for 3 min. or until bright green. Drain immediately. In large bowl, comine the viengar, soy sauce, sesame oil, cilantro and salt. Add the asparagus and toss to combine. To serve, put salad greens onto platter and spoon the dressed asparagus onto the greens and sprinkle with toasted sesame seeds
