1 teaspoon baking soda
1 tablespoon baking powder
1/4 cup (50 g) sugar
1/2 cup (1 stick) unsalted butter, softened
1/2 cup (115 g) sour cream
2 large eggs
1 1/4 cups milk
2 cups of chopped, roasted green chiles (Anaheim or Hatch) (or 3 7-ounce cans of chopped green chiles, drained)
1 cup (130 g) corn kernels (if frozen, defrost)
1 cup shredded cheddar cheese (4 ounces, 113 g)

JALAPENO CHEDDAR CORNBREAD

3 cups all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
2 tablespoons baking powder
2 teaspoons kosher salt
2 cups milk
3 extra-large eggs, lightly beaten
1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pan
8 ounces aged extra-sharp Cheddar, grated, divided
1/3 cup chopped scallions, white and green parts, plus extra for garnish, 3 scallions
3 tablespoons seeded and minced fresh jalapeno peppers

Steps:

  • Combine the flour, cornmeal, sugar, baking powder, and salt in a large bowl. In a separate bowl, combine the milk, eggs, and butter. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Don't overmix! Mix in 2 cups of the grated Cheddar, the scallions and jalapenos, and allow the mixture to sit at room temperature for 20 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Grease a 9 by 13 by 2-inch baking pan.
  • Pour the batter into the prepared pan, smooth the top, and sprinkle with the remaining grated Cheddar and extra chopped scallions. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool and cut into large squares. Serve warm or at room temperature.

SERRANO CORN BREAD

I've had this recipe for years. It's yummy, especially hot out of the oven with butter (yes not margarine). Butter is good, very, very good. Easy to make. IF.....any is left, refrigerate. You can always pop it in the microwave for a few seconds.

2 pkg jiffy corn muffin mix
1 c grated cheddar cheese
1 can(s) cream style corn
1/2 medium white onion (chopped)
1-2 small serrano peppers
2 eggs
2/3 c milk

Steps:

  • 1. Preheat oven to 400. In a large bowl, add corn muffin mix, 2 eggs, 2/3 C milk. Mix ingredients, will be slightly lumpy.
  • 2. Grate 1 C cheese, set aside, chop onion and peppers into very small pieces.
  • 3. Add cream style corn, mix into batter. Add cheese and peppers. (let batter rest for 3-4 minutes) Pour into a greased square baking dish.
  • 4. Bake until golden brown. Test in the middle to make sure it's done all the way through.

A good cornbread recipe is an essential part of any good Southern kitchen. Here, Sean Brock of Husk restaurant in Charleston, S.C., uses a specific grind and brand of cornmeal to create a fluffy texture, though similar results can be had by using a blend of cornmeal and flour. The cornbread can be cut and pan-toasted in bacon fat to provide a good base for salads or poached eggs dishes, in which the slight crunch of a pork-flavored crouton is called for.

2 cups coarse yellow cornmeal (see note)
1 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
5 tablespoons fresh lard, melted
1 egg, lightly beaten
1 1/2 cups buttermilk, preferably made from fresh milk
1/4 cup bacon fat, if making croutons

Steps:

  • Heat the oven to 450 degrees. Place a 10-inch cast-iron skillet inside.
  • In a bowl, combine the cornmeal, salt, baking soda and baking powder.
  • Combine 4 tablespoons of the lard, the egg and the buttermilk. Stir the wet ingredients into the dry until smooth.
  • Move the skillet from the oven to the stove top, over high heat. Add the remaining lard to the pan and swirl to coat. Pour in the batter; it should sizzle vigorously. Shake the skillet to distribute it evenly. Cook 15 to 18 minutes, or until a tester inserted into the center comes out clean.
  • To make large croutons (to serve as a base for greens, poached eggs, etc.), let the cornbread cool in the pan, then turn out and cut into 2-inch pieces. (If using in soup or beans, cut into 1/2-inch cubes.) Arrange on a baking sheet and dry overnight in the turned-off oven, lightly covered with foil. Remove.
  • When ready to serve, heat oven to 425 degrees and place a rimmed baking sheet inside to heat. Add the bacon fat and swirl to coat. Gently turn the cornbread pieces in it, spreading them out, and sprinkle lightly with salt. Bake 8 to 10 minutes, until brown and crisp. Serve hot.

Vegetable oil, for pan
1 cup fine yellow cornmeal, preferably stone-ground
1/4 cup all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper, to taste
1 cup low-fat buttermilk
1/2 cup whole milk
1 large egg, lightly beaten
1 ounce (2 tablespoons) unsalted butter, melted and cooled

Steps:

  • Preheat oven to 425 degrees. Lightly oil a cast-iron pan, and heat in oven, about 5 minutes. Meanwhile, whisk together cornmeal, flour, sugar, baking powder, baking soda, salt, and cayenne in a large mixing bowl. Combine buttermilk, milk, and egg in a measuring cup. Add to cornmeal mixture, and whisk together. Add melted butter, whisking to incorporate.
  • Fill heated pan with batter until almost full (batter will sizzle when first poured in). Return pan to oven, and bake until dark gold around the edges (time will vary depending on size of pan). Remove from oven, and immediately transfer cornbread from pan to a wire rack. Let cool before serving.
