1 cup whole milk
1 cup heavy cream
6 large egg yolks
1/2 cup sugar
2 teaspoons pure vanilla extract

Steps:

  • Prepare an ice-water bath and set aside. Bring milk and cream to a boil in a heavy-bottomed saucepan over medium-high heat.
  • Meanwhile, in a medium bowl, whisk yolks and sugar together until well combined and slightly thickened. Slowly whisk in 1/3 of the hot milk mixture until egg mixture is slightly heated, then continue whisking remaining milk mixture into egg mixture. Return mixture to saucepan and place over medium heat; cook, stirring, until mixture is thick enough to coat the back of a spoon and reaches between 170 and 180 degrees on an instant-read thermometer.
  • Remove from heat and strain into a bowl; stir in vanilla. Place bowl in ice-water bath and stir to cool, about 20 minutes. Remove bowl from ice-water bath and cover; transfer to refrigerator for at least 24 hours and up to 3 days before using.

Creme Anglaise
2 cups whole milk
1/4 teaspoon salt
1/3 cup farina or Cream of Wheat
1/3 cup sugar
1 teaspoon pure vanilla extract
2 large eggs, lightly beaten
1/2 cup plump, moist golden raisins or other dried fruits cut into small pieces
Scant 1/2 cup sugar
Squeeze of fresh lemon juice

Steps:

  • Preheat oven to 350 degrees with a rack set in the center.
  • Make the cake: Place milk and salt in a medium saucepan and bring to a boil over medium-high heat; immediately reduce heat and stir in farina. Cook according to package directions, stirring and adjusting heat as necessary, until thickened. Remove from heat and stir in sugar and vanilla; let stand until cooled slightly, about 15 minutes.
  • Make the caramel: Place an 8-inch round cake pan in oven to preheat. Place sugar, 1/4 cup water, and lemon juice in a small skillet or saucepan over high heat. Stir until sugar is moist and bring to a boil. As sugar begins to caramelize, carefully swirl pan to heat sugar evenly. Cook until sugar begins to turn dark amber in color, about 5 minutes. Remove cake pan from oven and pour caramel into pan, tilting pan to evenly coat; set aside.
  • Stir eggs and raisins into farina mixture and pour into prepared cake pan. Transfer to oven and bake until firm, puffed up, and a knife inserted into the center comes out clean, 25 to 35 minutes.
  • Invert a rimmed serving plate over cake pan and, working carefully (caramel will be very hot), turn pan over onto plate and lift it off; caramel will run down the sides of the cake. Let cake cool to room temperature before serving.

1 cup semolina flour
1 cup yogurt
1 cup sugar
1 cup butter
2 tablespoons baking powder
2 beaten eggs
3 cups sugar
1 cup water
1 teaspoon vanilla
1/2 lemons or 1/2 lime
1 cinnamon stick

Steps:

  • First make the cake:.
  • Preheat oven to 350.
  • Mix together flour, sugar, and baking powder very well in large bowl.
  • Melt butter, add into mixture.
  • Add yogurt into the mixture, mix well.
  • Add eggs, mix well again.
  • Beat mixture for 2 minutes til there are no lumps.
  • Pour into 9 X 13 inch baking pan brushed with very little oil.
  • Bake in middle rack of oven for 45 minutes.
  • While the cake bakes, prepare the syrup:.
  • Mix 3 cups sugar & one cup water in a pot, put on stove on high heat.
  • Add in vanilla and cinnamon stick. Stir well.
  • Squeeze half lemon into mixture, drop the lemon itself in there after squeezing.
  • Mix well, let boil for 1 minute, remove from heat.
  • After cake is a golden color (after about 45 mins), remove from oven, and let cool for about 5 minutes.
  • Pour syrup onto the whole cake, let cool. Cut into as many pieces as you like.

Namoura (Syrup-Soaked Semolina Cake) image

Amanda Saab, a social worker and home cook who lives near Detroit, riffs on her Lebanese grandmother's recipe for namoura, a cake made from semolina flour, soaked in syrup while it's still warm. When she serves it at iftar dinners during Ramadan, Ms. Saab often doses the syrup with a little bit of lavender extract. You could follow her lead, or use another floral note like vanilla or rose. The cake has no eggs, but this version gets its rich flavor and texture from aerated yogurt, which goes bubbly within minutes of being mixed with a little baking soda.

1 tablespoon freshly squeezed lemon juice
1 1/4 teaspoons lavender extract, vanilla extract or rose water

3/4 cup/150 grams granulated sugar

Steps:

  • In a small saucepan over high heat, boil sugar and 1 cup/240 milliliters of water, stirring until the sugar is dissolved. Reduce the heat to a simmer, add lemon juice and extract, and stir to combine. Simmer until thickened into a syrup, about 2 minutes. Remove from the heat and set aside to cool.
  • Heat oven to 400 degrees. Coat a 9-by-13-inch baking dish with butter. Place the semolina, melted butter and sugar in a large bowl and stir until well combined; set aside.
  • Place the yogurt and baking soda in a medium bowl and stir to combine. Set aside until the mixture has nearly doubled in size, about 10 minutes.

  • Place baking dish on a wire rack and drizzle the cooled syrup over the top of the hot namoura. Let cool to room temperature before recutting along the scored lines and serving.

  • Continue beating until very stiff and glossy.
  • Set meringue aside.
  • Beat egg yolks, remaining sugar, and butter until very light and fluffy.
  • Add orange rind and vanilla.
  • Beat in dry ingredients alternately (slowly, on a low speed) with orange juice and semolina until incorporated.
  • Fold in meringue.
  • Turn into prepared pan and sprinkle with almonds.
  • Bake for 40-50 minutes, or until it tests done.
  • Cool.
  • For syrup: Boil sugar, water and cinnamon stick for 8 minutes.
  • Add brandy and remove cinnamon stick.
  • Pour hot syrup over cooled cake.
  • Cool and cut into squares.
  • Serve with a dollop of whipped cream.

  • For the syrup:.
  • put all the ingredients together except for the rose water in a pot and bring to a boil.when it starts to boil, put in the rose water and let boil.it should look like syrup but should not be thick.don't let it reduce too much.let it sit while the cake is baking.
  • for the cake:.
  • while the syrup is put to boil, start the mixture of the cake.mix butter and sugar together(before doing this, make ure butter is very soft.cutting it up in small cubes always help).do not use a hand mixer or a cake mixer (this causes it to be too airy and we don't want this) but, use a fork or a potato masher.the butter and sugar does not need to be melted into each other.

Making this cake, which is adapted from "Sweet," by Yotam Ottolenghi and Helen Goh, is a labor of love, but that's only appropriate, for a cake adorned with rose petals. If you want to save time, however, you can do without the petals or use store-bought dried rose petals - the cake and cream are both special enough for those you feed to know you love them. If you are going all out with the roses, red or pink petals are a matter of preference; the red petals will turn a deep purple once candied. The cake keeps well for up to five days, but the petals should be sprinkled over just before serving. And don't confuse rose water and rose essence: the difference is huge. You want to use rose water here, and in brazen amounts, but it's what makes the cake both distinct and delicious.

3/4 cup plus 3 tablespoons/170 grams fine semolina flour

1/4 teaspoon salt
1 1/4 cups plus 1 tablespoon/300 grams unsalted butter (2 1/2 sticks plus 1 tablespoon), at room temperature and cubed, plus extra for greasing the pan
1 2/3 cups/330 grams granulated sugar
4 large eggs, lightly beaten
Finely grated zest of 1 lemon (about 1 teaspoon), plus 1 tablespoon lemon juice
2 tablespoons rose water (not rose essence)

Steps:

  • Heat oven to 200 degrees Fahrenheit/100 degrees Celsius. Line a baking sheet with parchment paper and grease a 9-inch/23-centimeter round springform pan and line with parchment paper.
  • Make the candied rose petals, if desired: Whisk egg white by hand until frothy. Then, using a small pastry brush or paintbrush, very lightly paint both sides of each petal with egg white; do this in a few small batches, brushing and then sprinkling the sugar lightly over both sides of each petal. Shake off excess sugar and lay petals on the lined baking sheet. Place in the oven for 30 to 45 minutes, until dry and crunchy, then set aside to cool.
  • Make the cake: Increase oven temperature to 350 degrees Fahrenheit/180 degrees Celsius.
  • Combine pistachios and cardamom in a food processor. Process until the nuts are finely ground, then transfer to a bowl. Add almond meal, semolina, baking powder and salt. Mix together and set aside.
  • Place butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed until fully combined, but take care not to overwork it; you don't want to incorporate a lot of air into the mixture. With the machine still running, slowly add eggs, scraping down the sides of the bowl a few times and making sure that each batch is fully incorporated before adding the next. The mixture will curdle once the eggs are added, but don't worry; this will not affect the end result.
  • Remove the bowl from the machine and add the dry ingredients, folding them in by hand and, again, taking care not to overmix. Next fold in lemon zest, lemon juice, rose water and vanilla extract and scrape the batter into the pan. Level with an offset spatula and bake for 55 to 60 minutes, or until a skewer inserted into the center of the cake comes out clean but oily.
  • While the cake is in the oven, make the rose cream: Place all the ingredients for the cream in a bowl and whisk to beat everything together for about 2 minutes, until thick. Keep in the refrigerator until ready to serve.
  • Make the rose syrup: About 10 minutes before the cake comes out of the oven (you want the syrup to be warm when the cake is ready), place all the ingredients for the syrup in a small saucepan over medium heat. Bring to a boil, stirring so that the sugar dissolves, then remove from the heat. Don't worry that the consistency is thinner than you might expect; this is how it should be.
  • As soon as the cake comes out of the oven, drizzle all of the syrup over the top. It is a lot of syrup, but don't lose your nerve - the cake can take it! Sprinkle with finely chopped pistachios and set the cake aside in its pan to come to room temperature. Remove from pan and scatter rose petals over the cake. Serve immediately, with a generous spoonful of rose cream alongside. (The cake keeps well for up to 5 days in an airtight container. The rose petals should be sprinkled over just before serving.)

5 c semolina
1 c fine semolina (if not found use regular semolina)
2 c butter or ghee, melted
2 c sugar
2 1/2 c plain yogurt
2 tsp baking powder
1 1/2 tsp orange blossom water
1 1/2 tsp rose water
1 c almonds, blanched
FOR THE BAKING PAN
3 Tbsp tahini
FOR THE SUGAR SYRUP
3 c sugar
3 c water
1 tsp lemon juice
1 tsp orange blossom water
1 tsp rose water
*if you can't find rose water or orange blossom water, you can substitute them with 3 teaspoons of vanilla extract in the cake mix, but discard them from the sugar syrup.

Steps:

  • 1. Prepare the Namoura: -In a large mixing bowl, combine all the ingredients leaving out the almonds for garnish. The mix should be slightly thick and sticky. -Spread the tahini on the bottom and sides of a 14-15 inch round pan to prevent sticking. (feel free to use a square or rectangular pan, don't go too small though, Namoura shouldn't rise very high, not more than 1 inch thick) -Pour the Namoura mix in the pan and smooth the top. (You can do that by dipping your fingers in some melted butter and smoothing out the top) -Leave the cake to rest for 5-6 hours. (It's OK to decrease the time if you're in a hurry) -Before you bake the cake, with a watered knife, cut the namoura with evenly spaced lines to create square or diamond shaped pieces. (you don't have to cut it through to the bottom) -Decorate each square with a blanched almond or any other nuts of your choice (traditionally we use almonds or sometimes pine nuts) -Bake the Namoura in a 400 degrees preheated oven until it's golden.
  • 2. Prepare the Sugar Syrup: -Boil together sugar and water. -Add lemon juice, when the syrup starts thickening. -Add rose water and orange blossom water just before you turn off the heat or right after. -Cool the sugar syrup completely.
  • 3. To finish the Namoura: -Take off the Namoura from the oven, while it's very hot, pour the cooled sugar syrup all over. Preferably not all the syrup at once, let the cake absorb it then repeat. -Cool the Namoura, then cut it (on the already existing lines) and enjoy!

Steps:

  • Preheat the oven to 350°F.
  • Grease the bottom and sides of a 9"x13" pan.
  • In a medium bowl, mix together the flour, semolina, and baking powder.
  • Use a mixer to cream the sugar and butter until light and fluffy.
  • With the mixer still running, add the eggs one by one. Continue mixing until a light yellow color.
  • Add the vanilla extract and lemon zest.
  • Clean the beaters and whip the egg whites with a pinch of salt until soft peaks form.
  • Using a spatula, carefully fold the egg whites into the batter until just incorporated. The best way to do this carefully is to add the eggs in thirds.
  • Pour the batter into the pan, using the spatula to smooth it out, and bake for 45 minutes, or until golden brown.
  • Meanwhile, make the syrup by adding the water, sugar, and orange peel to a sauce pan and bring to a boil. Reduce heat and simmer for 5 minutes.

I think I'd use an 8x8 Pyrex dish. I'm still trying to figure out the formatting on submitting recipes :p. This recipe is for a cake and syrup. The ingredients for the syrup begin with the caster sugar.

3 large eggs
1 cup sugar
1 1/2 cups coarse semolina or 1 1/2 cups cream of wheat
1 cup sour cream
1/2 teaspoon baking soda
1 tablespoon metaxa brandy
1 tablespoon finely grated orange zest
5 tablespoons butter, melted and cooled slightly
1 cup water
1 1/2 cups sugar
1/2 lemon

Steps:

  • Butter and coat with fine dry breadcrumbs a 9 x 9 inch Pyrex pan.
  • Set oven rack in the middle of the oven; preheat to 350°.
  • Whisk eggs and ½ cup sugar by hand in the bowl of an electric mixer.
  • Place the bowl on the mixer fitted with the whisk attachment; whip the mixture on high speed until pale and thickened, about 4 minutes.
  • While the eggs are whipping, stir the semolina and remaining ½ cup sugar together in a medium mixing bowl; stir in the sour cream.
  • Dissolve the baking soda in the brandy in a small cup and stir into the semolina mixture; add in the orange zest and butter, stir to combine.
  • When the egg mixture is ready, fold it into the semolina batter with a large rubber spatula.
  • Scrape the cake batter into the prepared pan; smooth the top.
  • Bake cake for about 30 minutes, or until it is well risen and deep golden and a pick comes out clean.
  • Cool the cake on a rack for 10 minutes.
  • While the cake is cookng, prepare the syrup: stir together all the ingredients in a saucepan; bring to a boil over medium heat; let the syrup boil gently for 5 minutes.
  • While the syrup is cooling, score the cake into 2 inch diamonds or rectangles with the point of a sharp knife, cutting about 1 inch into the cake.
  • After the syrup is cooked, remove the lemon half from the syrup and slowly pour the syrup all over the top of the cake so that it is evenly absorbed.
  • Cool completely.
  • Serve: cut through the scoring marks completely with a sharp knife; use a flexible spatula to first loosen each piece of cake, then remove it from the pan.
  • Only the first piece is difficult and may break slightly, the rest should come out easily.
  • Storage: keep the cake pan covered with plastic wrap at a cool room temperature.

1 cup all-purpose flour
1 1/4 teaspoons baking powder
3/4 teaspoon plus a pinch of salt
1/2 cup finely ground semolina flour
4 large eggs, separated, plus 1 large egg white
3/4 cup sliced almonds, with skins
3 tablespoons packed light-brown sugar
1 1/4 cups granulated sugar
1/3 cup almond paste
1/2 teaspoon pure vanilla extract
2/3 cup whole milk

Steps:

  • Preheat oven to 350 degrees. Generously butter a 9-inch springform pan; set aside.
  • Sift all-purpose flour, baking powder, and 3/4 teaspoon salt together into a medium bowl; stir in semolina flour. Set aside.
  • Whisk 1 of the egg whites vigorously in a small bowl until foamy. Transfer 2 teaspoons of egg white to a medium bowl; discard remainder. Stir almonds, brown sugar, and a pinch of salt into egg white. Set almond mixture aside.
  • Put butter, 1 cup granulated sugar, and the almond paste in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, 3 to 4 minutes. Add egg yolks and vanilla; mix until well blended, about 2 minutes.
  • Reduce speed to low. Mix in reserved flour mixture in 3 batches, alternating with 2 batches of the milk. Continue mixing until no traces of flour or milk remain, about 2 minutes. Transfer the cake batter to a large bowl.
  • Fit the electric mixer with the whisk attachment. Put remaining 4 egg whites in a clean mixing bowl; beat on medium high speed until foamy. Gradually beat in remaining 1/4 cup granulated sugar; beat until soft peaks form.
  • Using a rubber spatula, fold half of egg-white mixture into batter. Gently fold in remaining egg-white mixture.
  • Transfer the batter to buttered pan. Smooth top with spatula. Bake until cake begins to turn golden but center is still wobbly, 15 to 20 minutes.
  • Remove cake from oven; scatter reserved almond mixture evenly over top.
  • Return cake to oven; bake until topping is golden brown and a cake tester inserted into center comes out clean, about 25 minutes. (Check cake 10 to 15 minutes beforehand; if almond topping is darkening too quickly, cover loosely with foil, and continue to bake.)
  • Let cake cool completely in pan on a wire rack. Run a thin knife around edges of cake to loosen; remove sides of pan. Using two spatulas, transfer cake to a serving platter or a cake stand. Cake can be stored in an airtight container at room temperature up to 4 days.

1 Tbsp. tahini, for greasing
2½ cups (12 oz. or 350 g) fine semolina
½ cup (3 oz. or 100 g) superfine or sugar
1 tsp. baking powder
1 tsp. baking soda
½ cup (4 fl oz. or 120 ml) milk
½ cup (4 oz. or 120 g) plain yogurt
3 ½ oz. (100 g) unsalted butter, melted
16 blanched almonds
¾ cup (4 oz. or 120 g) superfine or caster sugar
Grated zest and juice of 1 lemon
1 bay leaf
1 Tbsp. rose water or orange blossom water

Steps:

  • Heat the oven to 350°F or 180°C and grease an 8-inch (20-cm) square baking pan with the tahini.
  • Put all the dry ingredients for the cake into a large mixing bowl and mix to combine. Add the milk, yogurt, and melted butter, then use an electric whisk to beat until it forms a smooth, creamy batter.
  • Pour the batter into the prepared pan, then arrange the almonds in a 4 x 4 grid pattern on the cake, so that each slice will have an almond in the center when sliced. Bake in the hot oven for 40 minutes.
  • While the cake is cooking, make the syrup by putting all of the ingredients into a saucepan with ½ cup (4 fl. oz. or 120 ml) of water. Let the sugar dissolve over a moderate heat, then turn the heat up and boil until it has a syrupy consistency (about 10 minutes). Remove from the heat and allow to cool slightly.
  • Remove the cake from the oven and, while it's still hot, pour the syrup all over it. Allow the cake to stand in the pan for 20 minutes to absorb the syrup, then slice into 16 squares and serve.

1 orange, thinly sliced
1/2 cup confectioners' sugar
Whipped cream
1 1/4 cups (2 1/2 sticks) unsalted butter, plus more for pan
8 egg whites
1 1/2 cups caster (superfine) sugar
12 egg yolks
1 teaspoon baking powder
4 tablespoons condensed milk
1 teaspoon vanilla powder
Zest of 1 orange
1/2 cup plus 2 tablespoons cake flour, sifted
1 1/4 cup semolina flour
1 cup blanched slivered almonds, finely chopped

Steps:

  • Preheat oven to 350 degrees. Grease sides of a 10-inch tube pan with removable bottom.
  • Beat egg whites until stiff, approximately 7 minutes. Add sugar, then yolks, and beat until stiff, adding baking powder along the way. In a stand mixer fitted with the paddle attachment, beat butter, condensed milk, vanilla powder, and the orange zest until smooth.
  • Fold the whipped butter mixture into the egg white mixture. Fold in cake flour, semolina flour, and chopped almonds.
  • Bake 30 to 35 minutes. Cover with aluminum foil and bake an additional 10 to 20 minutes.
  • While the cake is in the oven, make the candied orange slices: Line a baking sheet with parchment paper. Arrange orange slices in a single layer and generously dust with confectioners' sugar. Transfer to 350-degree oven and bake until bubbling and lightly golden around edges, about 20 to 30 minutes.
  • Turn off oven and leave cake in oven for 30 minutes. Remove cake, place on a cooling rack, cover with foil and a plate to cool for 1 hour.
  • Remove cake from pan and serve with candied orange slices and whipped cream.

SFOOF SEMOLINA AND TURMERIC CAKE

This cake has density to it, it can be served vegan by substituting extra virgin olive oil for butter and water for milk, it will taste just as good. Traditionally its cut in small squares and each square has a pine nut or blanched almond, I've served it with toasted sesame seeds when I wanted Sfoof and was out of pine nuts and almonds. You can omit the anise, however the flavor adds a little sweetness and takes it to another level. I absolutely love this cake and I hope you will too! Sfoof is great served with tea or coffee for breakfast.

Steps:

  • Preheat oven to 350°F, grease a deep rectangular pan 81/4 x121/4 x2 inches deep with a tablespoon of tahini.
  • Mix the semolina, flour, baking powder, anise and turmeric in a bowl,.
  • Add the olive oil or butter in small pieces and with your hands mix well until all well combined ( I use a cheese shredder for the butter instead of cutting them in small bits).
  • In a separate bowl combine warm water or milk and sugar and stir until its dissolved.
  • Add the syrup to the flour mixture and beat with a hand beater for 5 minutes.
  • Pour into baking pan, sprinkle with sesame seeds, pine nuts or blanched almonds whichever you fancy!
  • Bake for about 35 minutes or until the cake has risen and is cooked inside. Test with a toothpick and if it comes out dry the cake is done. Remove from the oven and allow to cool, then cut into diamonds or squares and serve at room temperature This cake will keep for a week if its stored in a sealed container in a cool place.

ALGERIAN BASBOUSSA - SEMOLINA CAKE WITH SYRUP

There are many, many versions of Basboussa ( and many spelling variations!) throughout the Arab world. Some of these are a spongy cake-like texture & some are more of a grainy texture. This Algerian version is more of a cake-like texture - which happens to be my favourite. I absolutely love the addition of coconut in the recipe, it really adds something to the Basboussa. This recipe is extremely simple to make & is delicious served with coffee or tea. It is definitely a Ramadan staple in our home!

1 1/2 cups of coarse semolina
1 cup plain flour
2 teaspoons baking powder
3/4 cup unsweetened dried shredded coconut
1/4 cup granulated sugar
1 cup sunflower oil
1 lemon, zest of (finely grated)
1 cup yogurt
4 eggs
2 teaspoons vanilla flavoring
3 cups water
3 cups granulated sugar
1 tablespoon orange flower water (add a little more if you like it very fragrant)
1 teaspoon lemon juice
blanched whole almond

Steps:

  • Preheat the oven to 180°C Grease a large baking dish (approx. 11" x7").
  • In a pan, place the sugar & water from the 'Syrup Ingredients', bring to the boil then simmer until you have a pale golden colour. Remove from the heat & stir in the lemon juice & the orange flower water. Set aside to cool, you can also store this syrup in the fridge until you need to use it.
  • Place all the wet ingredients in a large bowl & using a hand mixer, mix until creamy. Add the dry ingredients a little at a time & mix well.
  • Pour into your baking dish & level off the surface with the back of a dessert spoon or palett knife. With a small knife, score the surface into equal squares or diamonds & place a blanced almond in the centre of each square / diamond.
  • Bake in the oven until golden - this will take approximately 30-40 minutes.
  • Remove from the oven & cut through the scored squares / diamonds. Pour the syrup over the top & allow the Basboussa to soak up the syrup before serving. It is best to leave it for at least 2 hours for best results.

SEMOLINA COCONUT CAKE

Steps:

  • Make the syrup: In a small saucepan, combine sugar, saffron, lemon juice, and 1/2 cup water. Bring to a boil, reduce to a simmer, and stir constantly until sugar dissolves.
  • Make the cake: Preheat oven to 350 degrees. Butter a 9-by-13-inch pan and line with parchment paper, leaving a 2-inch overhang on all sides; set aside.
  • Add saffron to milk and let steep 5 minutes. Whisk together coconut, semolina flour, baking powder, and salt in a large bowl until combined. In a separate large bowl, whisk together eggs, sugar, and oil until light and fluffy. Add milk mixture and yogurt; stir to combine. Fold in coconut mixture to incorporate.
  • Transfer batter to prepared pan and bake until cake is golden brown and springs back in center when gently touched, about 1 hour.
  • Transfer pan to a wire rack. Pour syrup over warm cake and sprinkle with pistachios. Let cake cool completely in pan on a wire rack. Using parchment overhang, remove cake from pan to a cutting board; cut into triangles using a serrated knife.
