  • 1. 1 wide-mouth pint canning jar 1 Cup yellow corn meal 2/3 Cup sifted flour 1/3 Cup sugar 4 Teaspoons baking powder
  • 2. Instruction In a large bowl, thoroughly mix all dry ingredients. To package in jars: Wash, rinse and dry canning jars, lids and bands. pre-mix ingredients thoroughly before placing in jars Decorate as you wish To package in bags: 1. Place cornbread mix in jar 3. Cut 12-inch lengths of craft ribbon. Tape craft ribbon around paper bag. make a tag with recipe instructions
  • 3. (include on gift tag): Texas corn bread 1 jar Texas Cornbread Mix 1 egg 1 cup milk 1/4 cup soft shortening (Crisco) Preheat oven to 425 degrees. Grease one 8-inch square pan, or 8-inch cast iron skillet, or cast iron cornbread mold. Place cornbread mix into bowl, mix thoroughly. Add egg, milk and shortening. Hand-beat until smooth, about one minute. Bake for 15-20 minutes until done

1 cup cornmeal
1 cup plain breadcrumbs
4 teaspoons sea salt
3 teaspoons black pepper
1/2 teaspoon cayenne pepper

Steps:

  • Combine all the ingredients in a bowl and blend well.
  • Place in a pint jar and seal.
  • Attach a gift tag with the following instructions:.
  • Lightly beat 2 eggs in shallow dish. Dip seafoods or poultry in egg mixture and shake off excess. Dredge in cornmeal mixture. Pan fry in oil until done depending on meat used.
  • NOTE: you can also add other spices to your own taste depending on meat used.

½ cup milk
1 tablespoon lemon juice
4 (3 ounce) fillets cod
1 cup oil for frying
⅓ cup cornmeal
⅓ cup all-purpose flour
1 teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon dried thyme
⅛ teaspoon cayenne pepper

Steps:

  • In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
  • In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
  • Fry cod fillets in hot oil until golden brown.

15 pint jars (widemouth are best)
CORNBREAD MIX
12 1/2 c sifted all-purpose flour
12 1/2 c yellow cornmeal
1 1/3 c baking powder
3 1/3 c sugar
3 1/4 Tbsp salt

Steps:

  • 1. In large bowl: Mix all ingredients together well.
  • 2. Spoon 2 cups of mixture into dry sterilized jars. Wipe the rim of the jars. Place lids and rings.
  • 3. Make the following recipe cards: Preheat oven to 425 degrees. Down Home Cornbread: 1 jar cornbread mix 1 large egg 1 cup milk 1/4 cup Crisco shortening Put all ingredients in a bowl and mix together well with a fork or a whisk until smooth (for about 1 minute...do not over beat). Grease a 8-inch square pan. Pour in the batter. Place in oven. Bake at 425 degrees for 20 to 25 minutes.
  • 4. Cut 6-8 inch circles from cloth. Place a circle on each jar. Secure cloth in place with a rubber band. Cover the rubber band with a pretty ribbon, put recipe card on the ribbon and tie a pretty bow.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup 2% milk
1/3 cup sugar
1/3 cup butter, melted
1 egg
3/4 cup cornmeal
1 teaspoon salt
3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter, egg, cornmeal, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Divide in half and shape into two loaves. Place in greased 8x4-in. loaf pans. 1 cup milk
1 large egg
1 1/4 cups yellow, white or blue cornmeal

Steps:

  • Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
  • In a 1-quart saucepan, heat the butter over low heat until melted.
  • In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. Add the cornmeal, flour, sugar, baking powder and salt all at once; stir just until the flour is moistened (batter will be lumpy). - 1 cup plain bread crumbs (or plain panko)
- 4 tsp sea salt
- 2 tsp cayenne pepper
- 1 qt size canning jar and lid, with decorative materials

Steps:

  • Combine cornmeal, bread crumbs, sea salt and cayenne pepper. Pour into a one-pint glass jar. Attach a gift tag with the following instructions: Fried Fish Fillets: Lightly beat 2 eggs in shallow dish. Dip fish fillets in the egg, shake off excess and then dredge in cornmeal mixture. 4 cups boiling water
1 cup cornmeal
⅔ cup molasses
½ teaspoon baking soda
½ cup margarine
2 tablespoons salt
4 cups cold water
¼ cup warm water (110 degrees F/45 degrees C)
1 (.25 ounce) package active dry yeast
20 ½ cups bread flour

Steps:

  • Place boiling water into a large mixing bowl. Stir cornmeal slowly into boiling water to make mush, stirring constantly to eliminate large lumps. Add baking soda to molasses, and beat until light and foamy. Add molasses mixture to cornmeal mixture. Mix in butter or margarine and salt. Stir in cold water to make mixture lukewarm. Dissolve yeast in 1/4 cup warm water, and add to cornmeal mixture. Gradually add flour.
  • Turn dough out onto a lightly floured surface, and knead until smooth. Place in a large greased bowl. Grease the top of the dough. Cover with a damp cloth, and allow to rise until doubled.
  • Punch down dough, and divide into 6 parts. Shape 4 parts into loaves, and place in 9 x 5 inch loaf pans. Use the remaining dough to make into 2 dozen rolls. Allow to rise until doubled.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until brown.
