SEASIDE SQUID SALAD

1 1/2 pounds squid, tubes and tentacles
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon toasted and ground cumin seeds
1/8 teaspoon cayenne pepper
3/4 cup finely chopped and seeded tomato
1/4 cup finely chopped red onion
2 tablespoons capers, drained
1/4 cup chopped fresh cilantro leaves

Steps:

  • Thoroughly rinse the squid under cold water and pat dry. Cut the tentacles in half lengthwise. Cut the bodies in half lengthwise as well and then into 1/2-inch wide pieces. Set aside.
  • Over high heat, bring 1/2 inch of water to a boil in a 6-quart saucepan. Decrease the heat in order to maintain a simmer. Place the squid in a steamer basket and gently set over the simmering water. Cover and steam for 2 to 4 minutes. Remove the steamer basket from the pot and plunge the squid into ice water to stop the cooking. Remove from the water and drain thoroughly. Set aside.
  • In a large mixing bowl whisk together the lemon juice, olive oil, salt, black pepper, cumin and cayenne pepper. Add the squid, tomato, onion, capers and cilantro and toss until combined. Cover and refrigerate for 1 hour before serving.

1 (8 ounce) package macaroni (small shells or elbows)
1 tablespoon oil
2 tablespoons lemon juice
1 cup sliced celery
1/4 cup chopped green pepper
4 green onions, sliced
1 cup plain yogurt
2 tablespoons mayonnaise
3 tablespoons prepared mustard
3/4 teaspoon salt
1/2 teaspoon hot pepper sauce
2 teaspoons parsley
1 (10 ounce) package frozen broccoli florets
1 lb cooked shrimp
3 tablespoons French dressing

Steps:

  • Cook the macaroni according to package directions; drain, rinse with cold water, and drain well.
  • Toss macaroni with oil and lemon juice. Add celery, green pepper, and onions.
  • Make dressing by combining yogurt, mayonnaise, mustard, salt, hot pepper sauce, and parsley. Toss with chilled macaroni. Cover and refrigerate at least 2 hours or overnight.
  • Cook broccoli until tender-crisp; drain and cool.
  • Put shrimp and broccoli in a bowl and toss with French dressing. Cover and chill.
  • About 1/2 hour before serving, add broccoli/shrimp mixture to macaroni and toss lightly. Chill until ready to serve.

1 (8 ounce) package small shell pasta
2 (7 ounce) cans tuna, drained & flaked
2 hard-boiled eggs, diced
1/3 cup finely chopped onion
1 cup thinly sliced celery (diagonally)
1 green pepper, seeded & cut in thin,short strips
1 cup pitted ripe olives, sliced
1 cup mayonnaise or 1 cup salad dressing
1/2 cup sour cream
1 teaspoon curry powder
1 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Cook macaroni according to package directions, adding a little vegetable oil to keep separated; drain and chill.
  • Mix with tuna, egg, onion, celery, green pepper and olives.
  • With a whisk or fork, beat together dressing ingredients; toss with macaroni-tuna mixture.
  • Cover and chill until serving time.
  • Garnish with salad greens.

3 cups boiling water
3 cups cold water
1 can (20 ounces) crushed pineapple, drained
1-3/4 cups graham cracker crumbs
6 tablespoons butter, melted
1/4 cup sugar
Candies for decorating

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in cold water and pineapple. Pour into a 13-in. x 9-in. dish. Refrigerate until set. In a bowl, combine the cracker crumbs, butter and sugar; cover and refrigerate. Just before serving, sprinkle cracker mixture over half of the gelatin to form a beach. Decorate as desired.

3 ripe avocado, halved & seeded

Steps:

  • Combine shrimp and next 9 ingredients in a bowl; stir well. Stir in chopped mandarin sections. Chill. To serve, fill avocado halves with shrimp mixture.

I've had this recipe forever; it was an instant hit the first time I made it, and now my daughter makes it for her family. If you are not a salmon fan, I imagine you could substitute tuna----but it is so tasty with the salmon, I've never had to alter it.It is great for picnics or family gatherings.

2 cups uncooked shell pasta (small)
1/4 cup French dressing (Catalina is best)
7 -8 ounces canned salmon
1/2 cup diced celery
2 tablespoons sweet pickle relish
2 hard-boiled eggs, chopped
1/4-1/3 cup chopped green onion (your preference)
3 tablespoons minced fresh parsley
2/3 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/8 teaspoon pepper
1 teaspoon prepared mustard

Steps:

  • Cook macaroni in boiling, salted water until tender. Drain.
  • Add Catalina dressing while still hot and toss. Chill.
  • Drain and flake salmon.
  • Add flaked salmon, celery, relish, eggs, green onion, parsley, seasonings and mayonnaise to macaroni. Toss all together lightly.
  • Chill at least 2 hours to marry the flavors.

3/4 cup mayonnaise
2 tablespoons milk
2 tablespoons lemon juice
3 cans (6 oz each) lump crab meat, rinsed and drained
1/4 cup thinly sliced green onions
4 slices bacon, crisply cooked and crumbled (1/4 cup)
2 cups thinly sliced iceberg lettuce
2 medium tomatoes, chopped and drained (1 1/2 cups)

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Meanwhile, in large bowl, stir together Seasoning mix, mayonnaise, milk and lemon juice. Stir crab meat, green onions and bacon.

1 pounds shrimp meat
1 pounds crab meat
1 cups shredded cheese
5 units chive stems
2 tablespoons mayonnaise

Steps:

  • To begin, you will need a large mixing bowl. Rinse shrimp meat of ice or standing water in a strainer. Place the shrimp in the bowl.
  • Place the crab meat on a plate and begin pulling apart, full pieces of meat is optional. Place the crab meat and the cheese in the bowl with the shrimp.
  • Cut the chives up in small pieces. Mix all the ingredients together. Mix in the mayonnaise. Be careful not to place in too much, it will give it a bitter taste (taste before adding more).
  • Cover and place in the refrigerator for 1 to 2 hours. Serve cold.
