Sea scallops are pan-seared easily with olive oil, lemon juice, and soy sauce and served over a layer of basil pesto sauce, adding velvety and savory flavors to the scallops. Super easy, delicious and ready in less than 15 minutes!

1 Tbsp. olive oil
3/4 pound sea scallops, (if large, about 8 to 9 )
3 to 4 tsp. low-sodium soy sauce
1 Tbsp. butter
1/2 tsp. toasted sesame ginger seasonings (or ground ginger)
2 Tbsp. fresh lemon juice
2 to 3 Tbsp. homemade basil pesto sauce, heated through
fresh cracked pepper (optional)

Steps:

  • In a non-stick skillet or frying pan, heat olive oil over moderately high heat until very hot.
  • Season the scallops with toasted sesame ginger seasonings (or with salt and pepper).
  • Add the scallops to the pan and cook for about 1 to 2 minutes, until the bottoms get browned.
  • Drizzle on top with soy sauce. Then add the butter to the scallops.
  • Turn and cook until browned on the other side, about 2 minutes. Add lemon juice on top while cooking. Then turn them over again to cook for about another minute or so. About 3 minutes per side.
  • Arrange dinner plates with a tablespoon of warm basil pesto sauce in the center of each plate.
  • Lay 3 or 4 scallops on each plate. Optional: Add fresh cracked pepper on top.
  • Garnish with fresh basil leaves and serve.
  • Serves 3 to 4 ( with 3 or 4 scallops per serving)

If you're looking for something to pair wonderfully with a few glasses of amber-hued amontillado, you can't do much better than these tender, burnished sea scallops, inspired by a memorable midcourse of scallops with pistachios and licorice at Restaurant Daniel. Though you're less likely to overcook larger sea scallops, remember that quality is more critical than sheer size. In the market, look for scallops that appear fairly dry; waterlogged scallops will never achieve that ideal caramelized crust.

1 teaspoon anise seeds
1 clove garlic
1/4 teaspoon salt, more for seasoning
3/4 cup roasted shelled unsalted pistachios
3 tablespoons fresh tarragon, plus sprigs for garnish
2 tablespoons extra-virgin olive oil, plus more for pan
2 tablespoons amontillado sherry
2 tablespoons lemon juice
1/3 cup fish or seafood stock, or water
12 ounces sea scallops (12 to 16 jumbo)

Steps:

  • In a mortar, crush the anise seeds with 1/4 teaspoon salt and the garlic. Place pistachios and tarragon in a food processor and process until finely ground. Add anise mixture, oil, sherry and lemon juice. Process to a thick paste. Transfer to a small saucepan. Whisk in stock or water. Heat on low until tepid. Turn off heat.
  • Heat a cast iron skillet or a griddle to very hot. Dry scallops. Brush a slick of oil on the pan, lower heat a bit and place scallops in the pan. Sear on medium-high until handsomely browned, 2 to 3 minutes. You'll know when the scallops have browned enough when they can be lifted with your spatula without ruinous sticking. Lightly dust scallops with salt, then turn them. Reduce heat to medium-low and continue cooking until scallops are browned on the bottom and just cooked through, another 6 to 8 minutes. Meanwhile, gently warm the sauce. Whisk and add a smidgen of salt if needed.
  • Spoon some of the sauce in the center of each of 4 warm dinner plates. Poise 3 to 4 of the scallops around the edges of the sauce pool and garnish with tarragon.

2 cups all-purpose flour
1 tablespoon ground cumin
1 teaspoon curry powder
2 tablespoons dried thyme
2 tablespoons paprika
3 tablespoons olive oil
1 pound sea scallops, cleaned
Pesto, recipe follows
Basmati rice, recipe follows
2 cups arugula, stemmed, washed, and dried
2 cups basil leaves, washed and dried
1/2 cup grated Parmesan
4 cloves garlic, chopped
1/4 cup pistachio nuts
1/2 cup olive oil
Salt and pepper
1 cup basmati rice
2 cups water
2 tablespoons butter

Steps:

  • In a mixing bowl, combine flour, cumin, curry, thyme, and paprika. In a medium saute pan, heat the olive oil over medium heat. Dredge the scallops in the flour mixture, shaking off any excess flour, and add to the hot saute pan. Cook scallops for 2 to 3 minutes on each side until golden brown. Transfer the scallops to a plate, drizzle with pesto, and serve with the basmati rice on the side.
  • Add all ingredients to food processor except for the olive oil, salt and pepper. Process until the ingredients form a paste. With the motor running, add the olive oil in a stream until combined. Season with salt and pepper, to taste.
  • In a medium saucepan, add rice, water and butter. Bring to a boil, reduce heat and cover. Cook the rice without stirring for 12 to 15 minutes. Fluff with a fork and serve with scallops.

  • Heat butter or margarine in nonstick skillet over medium-high heat.

½ cup all-purpose flour
2 teaspoons seasoning salt
½ teaspoon dried oregano
½ teaspoon dried thyme
2 tablespoons lemon pepper
16 sea scallops, rinsed and drained
2 tablespoons olive oil
4 tablespoons chopped fresh parsley, divided
4 teaspoons lemon juice, divided

Steps:

  • In a large bowl, mix together flour, salt, oregano, thyme and lemon pepper. Roll scallops in flour mixture until lightly coated on all sides.
  • Heat olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides (about 2 minutes for each side). After turning scallops, add 1 tablespoon parsley and 1 teaspoon lemon juice. Remove scallops from pan and place on a plate in the oven to keep warm until ready to serve.
