SEAFOOD CHOWDER POT PIE

A flaky puff pastry crust tops a hot and rich mixture of vegetables, shrimp and crabmeat. Great for brunch or dinner!

1 teaspoon salt
2 cups peeled and diced potatoes (2 medium russet potatoes)
4 slices bacon, cut in half
1/3 cup Gold Medal™ all-purpose flour
2 bottles (8 oz each) clam juice
1/4 cup whipping cream
1/2 teaspoon onion salt
1 cup frozen peas and carrots, thawed
1 cup frozen corn, thawed
1 tablespoon chopped fresh thyme leaves
1 cup cooked deveined peeled medium shrimp, tail shells removed (about 6 oz)
1 can (6 oz) crabmeat, drained, flaked (about 1 cup)
1 sheet frozen (thawed) puff pastry (from 17.3-oz package)

Steps:

  • In 2-quart saucepan, heat 2 cups water and the salt to boiling over high heat. Add potatoes; heat to boiling. Reduce heat to medium; cover and simmer 5 to 7 minutes or until tender; drain.
  • Heat oven to 400°F. Spray 11x7-inch (2-quart) baking dish with cooking spray.
  • Meanwhile, in heavy 3-quart saucepan, cook bacon over medium heat, turning occasionally, until crisp. Remove bacon; crumble and set aside. Using wire whisk, stir flour into bacon drippings. Gradually stir in clam juice, whipping cream and onion salt. Heat until thickened and bubbly, stirring constantly. Stir in potatoes, bacon, peas and carrots, corn and thyme. Cook 3 to 4 minutes longer or until hot. Stir in shrimp and crabmeat. Spoon mixture into baking dish.
  • On lightly floured surface, unfold pastry. Roll into 12x8-inch rectangle. With sharp knife, cut slits in pastry to allow steam to escape. Place pastry in baking dish over hot seafood mixture. Roll outer edges of pastry over edges of baking dish, and press onto edges.
  • Bake 30 to 40 minutes or until crust is deep golden brown. Let stand 10 minutes before serving.

Well, add a splash of sherry along with some fresh vegetables, some traditional ingredients like frozen peas, chopped shrimp, crab and scallops, and then top with a flaky biscuit. And dinner. My twist ... I like to top with a little cheese before I top with the crust. Pure comfort food

1 lb shrimp, peeled tails off (I used large and rough chopped)
3/4 lb scallops, rouch chopped (I used bay, the small scallops)
8 ounces crabmeat, 1 can if you can't get fresh just pick through to make sure there are no shells
1 cup onion, chopped
1/2 cup celery, chopped
3/4 cup carrot, chopped
1 cup diced potato, fine chopped skins off
1 cup mushroom, chopped
1/2 cup frozen peas
2 cups half-and-half
1/2 cup chicken broth
1/4 cup butter
2 tablespoons all-purpose flour
1/2 teaspoon creole seasoning
4 tablespoons sherry wine
1/2 cup grated monterey jack cheese
8 country biscuits (I used pillsbury, or you can make your own, no cooked)
2 tablespoons butter (to brush on the biscuits)

Steps:

  • Shrimp -- Prepare your shrimp, scallops and vegetables.
  • Vegetable Base -- In a large pot, melt the butter on medium heat. Add the celery, onion, mushrooms, and carrots and cook until soft. Add the sherry to deglaze the pan, then the creole seasoning, salt and pepper, flour to make a light roux and then add the half and half and the chicken broth. Bring back to a medium heat to lighten thicken. Add the peas, shrimp, scallops, and fresh parsley and stir to combine. The last minute add the crab.
  • Casserole -- Spray the casserole dish or individual baking dishes (soup bowls or small ramikens with Pam or brush with olive oil) and spoon the pot pie mixture inches Top with a little of the grated cheese.
  • Topping -- Take the southern biscuits cut in half, top and bottom half (just thinner so they cook quicker) (Pillsbury or any name brand or you can easily make your own if you want.). Just top the individual dishes or you can top the whole casserole dish. The biscuits can be cut to fit the size of the casserole dish. Brush with some butter to make them crusty brown.
  • Bake -- Heat the oven to 350 degrees and bake until the biscuits are golden brown and the filling is bubbly. About 20-30 minutes depending on your oven. Cook on the middle shelf.

I have tasted Ina Garten's Lobster Potpie and it was awesome - so how can you improve on something so delicious but she has!!! "One of my philosphies of cooking is to take a recipe you are totally comfortable making, and then have three variations of it up your sleeve." She also says that "she loves all kinds of potpies -- chicken, lobster, vegetable, plus the one with seafood. 1 process = 4 recipes and you have a whole dinner in one dish that goes from the oven to the table. 1 cup chopped fennel (we omitted using, personal preference)
1/2 cup all-purpose flour
4 cups fish stock or 4 cups clam juice
1 tablespoon Pernod (we omitted using, personal preference)
1/2 lb large shrimp, peeled and deveined
1 tablespoon kosher salt
1 1/2 teaspoons fresh ground black pepper
3 tablespoons heavy cream
3/4 lb cooked fresh lobster meat
1 1/2 cups frozen peas (not "baby" peas)
1 1/2 cups frozen small whole onions
1/2 cup minced flat leaf parsley
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 lb cold unsalted butter, diced
1/4-1/3 cup ice water
1 eggs, beaten with 1 tablespoon water or 1 heavy cream, for egg wash

Steps:

  • FOR THE SEAFOOD:.
  • Melt the butter in a large saute pan over medium heat.
  • Add the chopped onion and fennel and cook for 10 to 15 minutes, until the onions are translucent.
  • Add the flour and cook over low heat for 3 more minutes, stirring occasionally.
  • Meanwhile, bring the stock to a simmer in a large saucepan.
  • Add the shrimp and scallops and cook for 2 minutes, just until firm.
  • Remove the seafood to a large bowl with a slotted spoon.
  • Pour 3 cups of stock into a measuring cup and discard the rest.
  • When the flour is cooked in the onion and fennel mixture, slowly add the 3 cups of stock, the Pernod, salt and pepper and simmer for 3 minutes.
  • Stir in the heavy cream.
  • Cut the lobster meat into medium-sized cubes.
  • Add the lobster to the bowl with the seafood, then add the frozen peas, frozen onions, and parsley.
  • Pour the sauce over the mixture and taste for seasoning.
  • Pour into a 9 x 13 x 2 baking dish and refrigerate.
  • FOR THE PASTRY:.
  • Mix the flour, salt, and baking powder in a food processor fitted with a steel blade.
  • Add the butter and pulse 10 times, until the butter is the size of peas.
  • With the motor running, add the ice water; process only enough to moisten the dough and have it just come together.
  • Dump the dough out on a floured surface and knead quickly into a ball.
  • Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
  • Meanwhile, preheat the oven to 375º F.
  • Roll the dough out to fit the baking dish with about a 3/4 inch overlap.
  • Use the egg wash to paint the oitside rim of the dish.
  • Place the dough on the filled baking dish and press it lightly to adhere to the egg wash.
  • Make 4 or 5 slashes in it to allow the steam to escape.
  • Place the dish on a sheet pan lined with parchmen paper and and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.

1/2 lb bay scallops
1/2 teaspoon freshly ground pepper
Butter-flavor cooking spray
1 can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup with 30% less sodium
2/3 cup fat-free half-and-half
2 bags (14 oz each) frozen baby gourmet potato blend, thawed
1/4 cup coarsely chopped fresh basil leaves
1/2 teaspoon salt
3 sheets frozen phyllo (filo) pastry (18x14 inch), thawed

Steps:

  • Heat oven to 375° F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In bowl, toss shrimp, scallops and pepper. Spray mixture with butter-flavor cooking spray. In nonstick skillet over medium-high heat, cook shrimp mixture 2 minutes, stirring frequently. Remove from heat. In large bowl, stir soup and half-and-half with whisk. Add shrimp mixture, potato blend, basil and salt; toss gently. Pour mixture into baking dish.
  • Cut each pastry sheet in half crosswise. Work with 1 sheet at a time, keeping remaining sheets covered with damp towel.   • Heat oil and butter in a medium saucepan over medium-high heat. Add leek, fennel, and garlic; cook, stirring, until vegetables are softened, about 6 minutes. Add flour; cook, stirring, 6 to 7 minutes. Whisk in stock. Bring to a boil. Stir in tomatoes. Reduce heat to medium-low. Add lobster, shrimp, scallops, bass, and halibut; cook 5 minutes. Season with salt and pepper. Stir in parsley. Let cool.
  • Preheat oven to 400 degrees. Roll out dough on a lightly floured surface to a 10-inch square, about 1/4 inch thick. Cut out a small vent in center. Transfer stew to an 8-inch square baking dish. Cover with dough, allowing excess to overhang. Transfer to freezer until cold, 20 minutes.
  • Whisk cream and egg yolk in a small bowl. Brush crust with egg wash. Bake pie on a rimmed baking sheet until crust is golden brown and puffy, 35 to 40 minutes. Serve with aioli.

1 tablespoon shortening
1 cup all-purpose flour
1/2 teaspoon salt

8 ounces mushrooms, sliced
1/2 cup chopped leeks or 1/2 cup green onion
1/2 cup margarine or 1/2 cup butter
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon dry mustard
1 dash pepper
1 1/2 cups half-and-half cream
dry white wine
2 egg yolks
1 tablespoon water

Steps:

  • FOR THE PASTRY: Cut shortening into flour and salt until particles are size of small peas. Sprinkle in water , 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans sides of bowl. Gather pastry into a ball; shape into flattened round. Wrap in plastic wrap.
  • PREPARE FILLING; If scallops are large, cut into 1 inch pieces. Cook and stir mushrooms and leek in 2 tablespoons of the margarine in 10 inch skillet over medium heat until mushrooms are light brown and liquid is evaporated, about 5 minutes. Remove from skillet. Heat 2 tablespoons of the margarine in skillet until hot. Cook and stir scallops over medium heat until white, 4 to 5 minutes. Remove with slotted spoon. Drain liquid from skillet, reserving 2 tablespoons.
  • Heat remaining 1/4 cup margarine in skillet over low heat until melted. Stir in flour, salt, mustard and pepper. Cook over low heat, stirring constantly, until smooth and bubbly. Remove from heat; stir in half and half. Add enough wine to reserved scallop liquid to measure 1/3 cup; stir into half and half mixture. Heat to boiling stirring constantly; boil and stir 1 minutes. Stir in mushroom mixture and scallops. Pour into ungreased shallow 1 1/2 quart casserole.
  • Heat oven to 425°F Unwrap pastry and place on well floured board. Roll dough 1 inch large than top of casserole, using floured stockinet covered rolling pin. Cut out designs with 1 inch cookie cutter. Place pastry over top of casserole; turn edges under and flute. Mix egg yolk and water; brush over pastry. Bake until golden brown, about 25 minutes. Serve with lemon wedges if desired. 4 servings.

2 chicken bouillon cubes
1/2 lb scallops
12 oysters
1/2 lb firm white fish fillet, diced
5 tablespoons butter
1/4 cup onion, chopped
1/4 cup celery, finely diced
5 tablespoons flour
1/2 cup lobster meat, cooked and cut into bite-sized pieces (I used imitation)
1/4 cup dry sherry
salt & pepper
pastry dough, for a 10-inch double-crust pie

Steps:

  • Preheat oven to 375F 10 minutes before the pie is ready to go inches.
  • Dissolve the chicken bouillon in 2 cups hot water and bring to a boil.
  • Cook the scallops, oysters and fish in the chicken stock for 5 minutes or until the fish flakes easily when pierced with a fork.
  • Remove seafood and strain the stock.
  • Reserve the stock.
  • Melt butter in a small skillet over medium heat and sauté the onions and celery.
  • Stir in the flour; add the stock and cook, stirring constantly, until thickened.
  • Add the scallops, oysters, fish, lobster and sherry.
  • Season with salt and pepper; cool.
  • Line a 1-quart casserole, deep-dish pie plate, or four individual 5-inch casseroles with the pastry.

1/2 teaspoon onion salt
1 cup frozen peas and carrot, thawed
1 cup green giant niblets frozen corn, thawed
1 tablespoon chopped fresh thyme leave
1 cup cooked deveined peeled medium shrimp, tail shells removed (about 6 oz)
1 (6 ounce) can crabmeat, drained, flaked (about 1 cup)
1 sheet frozen puff pastry (thawed, from 17.3-oz package)

Steps:

  • In 2-quart saucepan, heat 2 cups water and the salt to boiling over high heat. Add potatoes; heat to boiling. Reduce heat to medium; cover and simmer 5 to 7 minutes or until tender; drain.
  • Heat oven to 400°F Spray 11x7-inch (2-quart) baking dish with cooking spray.
  • Meanwhile, in heavy 3-quart saucepan, cook bacon over medium heat, turning occasionally, until crisp. Remove bacon; crumble and set aside. Using wire whisk, stir flour into bacon drippings. Gradually stir in clam juice, whipping cream and onion salt. Heat until thickened and bubbly, stirring constantly. Stir in potatoes, bacon, peas and carrots, corn and thyme. Cook 3 to 4 minutes longer or until hot. Stir in shrimp and crabmeat. Spoon mixture into baking dish.
  • On lightly floured surface, unfold pastry. Roll into 12x8-inch rectangle. With sharp knife, cut slits in pastry to allow steam to escape. Place pastry in baking dish over hot seafood mixture. Roll outer edges of pastry over edges of baking dish, and press onto edges.
  • Bake 30 to 40 minutes or until crust is deep golden brown. Let stand 10 minutes before serving.

1/2 c heavy cream
1 shallot diced fine
2 Tbsp butter
3 Tbsp sherry, or dry white wine
1 lb lobster meat
1 can(s) jumbo lump crabmeat (picked through for shells)
1/2 lb shrimp-cooked & diced
1 pkg frozen puff pastry

Steps:

  • 1. Preheat oven to 375 Allign ramekins or small tart pans on a cookie sheet.
  • 2. Saute shallots in butter until clear and fragrant. Add sherry or white wine and reduce by half. Add soups and simmer 5 minutes. Remove from heat and stir in heavy cream and seafood.

6 oz seafood (crab, shrimp or crawfish) cooked and chopped
1 c sharp cheddar cheese, grated
4 oz cream cheese, in small cubes
1/4 onion, diced
2 oz pimentos, chopped
1 celery stalk, finely chopped
2 tsp old bay seasoning
1 tsp garlic powder
2 eggs
1 c milk
1/2 c baking mix (bisquick)

Steps:

  • 1. Preheat oven to 400 degrees. Spray a 9x1 pie plate or a 9x9 square glass pan with cooking spray. Mix seafood, both cheeses, onion, pimentos and Old Bay in a small bowl. Pour into greased pan.
  • 2. Mix remaining ingredients. Pour over seafood mixture.
  • 3. Bake uncovered for approximately 40 minutes until golden brown and center is set.
  • 4. If you want to make slices let pie cool 10-15 minutes before cutting. If you want it piping hot you can scoop onto plates.

If I have puff pastry in the freezer I often top my Seafood Pot Pie with it, but if I don't or a request is made for the mashed potato topping I'm okay with that. Either way the pie is the star and the topping is the co-star of this wonderful dish.

8 oz cod filets
1 c milk
2 1/4 c leeks, chopped
6 oz large shrimp, peeled and deveined
6 oz bay scallops
3 Tbsp butter, unsalted
2 Tbsp all purpose
1 c fresh or frozen petite baby peas
3/4-1 c fresh mushrooms, sliced
1 Tbsp parsley, italian, chopped
4 Tbsp lemon juice, fresh
1/4 c dry sherry
1/2 c gruyere cheese, shredded
1/2 tsp kosher salt
1/2 tsp freshly ground white pepper
3 c mashed potatoes or sheet of puff pastry for topping

Steps:

  • 1. Preheat oven to 350°. Place 4 individual baking dishes on a rimmed baking sheet, and set aside.
  • 2. Place the cod in a baking dish with the milk and chopped leeks. Cover the dish tightly with foil, and bake for 15 minutes. With a slotted spoon, remove the fish and leeks to a bowl, and reserve the milk. When the fish has cooled for a few minutes, break it into chunks.
  • 3. In a sauce pan, melt the butter over low heat. When it bubbles, stir in the flour with a wooden spoon, and cook for 2 minutes. Slowly add the reserved milk, and cook, stirring frequently, until the mixture thickens to the consistency of gravy. Add the fish and leeks, shrimp and scallops, peas, mushrooms, parsley, lemon juice, sherry,cheese, salt and pepper, and cook for 4-5 minutes until the shrimp are just cooked (not overcooked). Divide the mixture among the four prepared dishes.
  • 4. MASHED POTATO TOPPING: Divide the mashed potatoes equally among the four dishes. To make a fancy topping, thin the potatoes with enough additional milk so you can pipe them through a pastry bag fitted with a star tip. Bake for 30 minutes until the tops are starting to brown and you can see the filling bubbling a bit along the edges of the baking dishes. Serve hot.
  • 5. PUFFED PASTRY TOPPING: 1 sheet frozen puff pastry, cut into four squares 1 egg, beaten with 1 tablespoon water Place a puff pastry square over the top of each bowl, pressing lightly around the rim. Brush the pastry with the egg and water mixture. Place the four bowls on a baking sheet. Bake for about 25 minutes, or until pastry is puffed and golden brown. Let rest at least 5 minutes before serving.

This is a very quick and easy recipe to throw together and it tastes great, you can play around with the ingredients to add your favourite seafood. The longest part of this whole thing is grating the potatoes for the rosti. It was a trial recipe and both my hubby and I enjoyed this.

650 g whit fish fillets, chopped coarsely
250 g medium cooked prawns, shelled, deveined
30 g butter
260 ml sour cream
2 tablespoons dry white wine
1 tablespoon lemon juice
1 teaspoon fish stock granules
1 teaspoon vegetable stock powder
1/4 cup fresh dill, chopped finely
1/2 cup frozen peas
500 g potatoes, peeled and grated coarsely
2 tablespoons baby capers
30 g butter, melted

Steps:

  • Caper Rosti Topping.
  • Squeeze excess moisture from potatoes, combine with capers and butter in a bowl.
  • Seafood.
  • Heat butter in a large frying pan, cook fish in batches, for about 3 Min's. return fish to pan with prawns, sour cream, fish stock, vegetable stock, wine, lemon juice and dill, cook stirring occasionally, for 4-5 Min's or until fish is cooked through.
  • Preheat grill. Spread seafood mixture into a shallow ovenproof dish, top with caper rosti mixture. Grill about 10 Min's or until topping is tender and a nice golden brown.
  • To Serve: Serve in bowls and garnish with a slice of lemon and dill.

I found this in a older copy of the magazine Austrlian Table. I reckon it would be a good way to use the enless supply of seafood we seem to catch. I love working with filo and I love fish pies, so I figure what's not to love about this! Aus tablespoons contain 4 teaspoons.

1 cup water
500 g firm white fish, cut into chunks
500 g salmon, cut into chunks
200 g scallops or 200 g prawns
1 bay leaf
1 onion, sliced
2 1/2 tablespoons butter
2 1/2 tablespoons flour
1 cup milk
6 green onions, finely sliced
1/4 cup snipped fresh dill
8 sheets phyllo pastry
cooking spray

Steps:

  • Preheat oven to 180°C Bring the water to a simmer in a large frying pan on a low heat. Add all the seafood, bay leaf and sliced onion and poach for 5 minutes, covered, until just opaque. Remove the seafood and strain liquid reserving one cup full.
  • Melt the butter in a heavy based saucepan on medium heat. Stir in the flour and cook stirring for a minute. Gradually add the milk and reserved poaching liquid stirring continuously. Simmer for a few minutes until thickened. Stir in the seafood, green onions and dill. Season to taste. Spoon into an 8 cup pie dish.
  • Lay filo sheets on a flat surface. Spray every 2 layers with oil. Cut pastry into a round or square (depends on your dish) cut 1 cm larger than the dish.Top seafood mixture with filo sheets, spray with oil and bake for 35 minutes (until the pastry is golden). Serve with a simple green salad.

2 (10.75 ounce) cans Campbell's® Condensed Cream of Shrimp Soup
2 (10.75 ounce) cans Campbell's® Condensed New England Clam Chowder
3/4 cup milk
1/2 tsp. Old Bay Seasoning
2 (10 ounce) packages frozen mixed vegetables, thawed
2 lbs. medium shrimp
1 lb. bay scallops

Steps:

  • 1.Thaw the pastry at room temperature for 40 minutes or until it's easy to handle. Heat the oven to 375 degrees F. Spray a 12 x 8 x 2-inch shallow baking dish with cooking spray. 2. Blanch the shrimp and scallops for about 3 minutes and drain. 3.Stir the soups, milk, Old Bay Seasoning, vegetables, shrimp and scallops into the prepared dish. 3.Unfold the pastry sheet on a lightly floured surface. Roll the sheet into a 10 x 9-inch rectangle. Gently roll the pastry onto the rolling pin so that you can lift it and gently unroll it on the baking dish. Crimp or roll the edges to seal it to the dish. 4.Bake for 40 minutes or until the pastry is golden brown and the filling is hot and bubbling. Let the pot pie stand for 5 minutes before serving.

1/4 c chopped green onions
1/4 c chopped celery

1/2 lb jumbo shrimp,boiled and peeled
1 c grated cheddar cheese
1/4 c grated parmesan cheese
1 Tbsp lemon juice
1/8 tsp tabasco sauce
1 egg, beaten
1/4 c mayonnaise (miracle whip )

Steps:

  • 1. BAKE PIE SHELL PARTIALLY AT 400* FOR 5 TO 7 MIN. MELT BUTTER IN A LARGE SKILLET AND SAUTE GREEN PEPPER, GREEN ONIONS, CELERY AND MUSHROOMS.
  • 2. ADD CRABMEAT, SHRIMP, 3/4 C. CHEDDAR CHEESE,PARMESAN CHEESE, LEMON JUICE, TABASCO SAUCE, EGG AND MAYONNAISE.STIR WELL TO COMBINE THIS MIXTURE SHOULD BE MOIST BUT NOT RUNNY SO DRAIN OFF EXCESS LIQUID
