I used to eat a lemon piccata dish at my favorite Italian restaurant and one day I decided to try to whip up one on my own. It's a hit with the family! Enjoy. Garnish with lemon wedges.

1 (16 ounce) package linguine pasta
¼ cup olive oil
¼ cup butter
1 pound uncooked medium shrimp, peeled and deveined
10 baby bella mushrooms, sliced
2 cloves garlic, chopped
1 (6 ounce) jar marinated artichoke hearts, chopped, with juice
½ lemon, juiced
3 tablespoons capers with juice
1 splash dry white wine
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Heat olive oil and butter in a saucepan over medium heat. Add shrimp, mushrooms, and garlic; cook and stir until fragrant, 1 to 2 minutes. Add artichokes, lemon juice, capers, and white wine. Cook and stir until shrimp is tender and contents are bubbling, about 10 minutes. Spoon shrimp piccata over individual beds of pasta. Season with salt and pepper.

1 (16 ounce) package medium seashell pasta
6 tablespoons olive oil
1 cup fresh mushrooms, sliced
¾ cup minced green onions
2 tablespoons minced garlic
1 pound medium shrimp - peeled and deveined
1 pound bay scallops
1 pound crabmeat
2 cups dry white wine
6 tablespoons fresh lemon juice
½ cup butter
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to boil, add pasta shells, and cook for 8 to 10 minutes, or until al dente; drain.
  • Heat olive oil in a large pot over medium heat. Saute mushrooms, green onions, and garlic until tender. Stir in shrimp, scallops, and crabmeat. Cook for 5 minutes, or until shrimp is pink. Stir in wine, lemon juice, and butter; cook until heated through.
  • Toss pasta with seafood sauce and parsley.

1/2 cup olive oil
1 pound peeled shrimp
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 cup sliced onions
2 cloves garlic, minced
3 teaspoons red aji paste
2 Poblano chiles, stemmed, seeded and cut into strips
1 1/2 cups chopped canned tomato, seeds and juice removed
1 teaspoon sugar
Juice of 1 lime

Steps:

  • Heat the oil in a large saucepan over moderate heat. Saute the shrimp with salt and pepper until just cooked, 3-4 minutes. Add the onion and cook 5-7 minutes until golden. Add the garlic, aji and poblano and cook until tender, stirring occasionally, 5-7 minutes. Add tomatoes and sugar and continue cooking for 5 minutes, stirring occasionally. Add the shrimp and lime juice. Serve garnished with Garlic Chips on top of Arroz Graneado.

SENSATIONAL SHRIMP MOLD

A seafood dip appetizer that's sure to wow your guests!

1 finely chopped, white and green parts green onion
1/2 cup mayonnaise
1 (8 oz) package softened cream cheese
1 lb small or medium shrimp
2 teaspoons dijon mustard
1 dash or cayenne pepper Paula Deen Hot Sauce
1 dash black pepper

Steps:

  • Bring 2 cups water and 1 teaspoon salt to a boil in a medium saucepan and add the shrimp. When the water returns to a boil, turn off the heat, cover the pot, and allow the shrimp to sit for 5 minutes. Drain, peel and devein.
  • Place the shrimp in a food processor and pulse about eight to ten times, until they are finely chopped but not mushy. Mix together the cream cheese, mayonnaise, green onion, mustard and hot sauce in a small glass bowl, until well combined. Stir in the shrimp.
  • Line a 2-cup mold or glass bowl with plastic wrap, leaving lots of overhang. Place the shrimp mixture into the mold, packing tightly with a spatula. Cover with plastic wrap overhang and chill in the refrigerator for at least 2 hours or overnight.
  • When ready to serve, unwrap the overhang and invert the mold onto a plate. Remove the plastic wrap. Allow to come to room temperature before serving with water crackers or other favorite snack cracker.

Number Of Ingredients 15

2 envelopes plain gelatin
1/2 cup cold water plus additional 1/4 cup
1/2 to 1 tablespoon liquid crab boil
1 pound lump crabmeat or small shrimp (sometimes called salad shrimp; it's okay to use frozen), or 1/2 pound crabmeat and 1/2 pound shrimp, vary to personal preference
1/2 small yellow or white onion
1 green onion
1/4 red bell pepper
4 ounces butter
1 teaspoon Creole seasoning (like Tony Chacherie's)
1 can cream of mushroom soup
1 8-ounce package cream cheese (not low- or nonfat, as the mixture will be too watery)
Worcestershire sauce, to taste
Cilantro, for garnish
Special Equipment
blender or food processor; medium-size mold (approximately 6 cups) or shallow dish

Steps:

  • Dissolve gelatin in 1/2 cup cold water and let sit.
  • Mix liquid crab boil (vary amount according to taste) with 1/4 cup water in small bowl. Soak seafood in crab boil mixture. (If using shrimp, cook until done first, then let soak.)
  • Chop onions and pepper in food processor or blender. Slowly melt butter in skillet and sauté onion and pepper mixture until soft and onions are clear. Remove from pan and set aside.
  • In the same pan used to cook the onions, add soup and cream cheese and melt over low heat until the cream cheese is melted and the mixture is smooth. Cream cheese burns easily, so stir constantly. Add dissolved gelatin and Worcestershire sauce to taste. The mixture will thicken as you stir. Turn off heat.
  • Remove seafood from crab boil mixture, drain, and chop in food processor until smooth. Add to cream cheese mixture. Add onion mixture and mix well. Add Creole seasoning to taste.
  • Pour in mold or shallow dish and refrigerate overnight or at least 3 hours, until thickened (it will set just like Jello).
  • Release mold onto serving platter and garnish with cilantro. Serve.

SHRIMP AND PASTA PICANTE

This is a quick and easy dish to make - if you like a little heat then this recipe is prefect you want a little more heat - please add to your desired spice level

1 lb shrimp (16-20 count peeled and deveined)
2 tablespoons extra virgin olive oil
1 cup sweet onion (diced very fine)
3 tablespoons garlic (crushed)
1 (14 1/2 ounce) can tomatoes with garlic (Hunts makes the Fire Roasted series)
2 teaspoons hot chili peppers, flavored oil with toasted sesame oil to your heat preference (use less (or more)
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon thyme
1 teaspoon red pepper flakes (this is where you adjust to your taste)
2 whole dried hot red chili peppers (again add to your level of heat)
3 cups uncooked pasta

Steps:

  • In a large skillet heat your EVOO and add onions and garlic sauté till onions are clear. Add the fire roasted tomatoes, and spices. Let this simmer for 20 minutes (the whole red peppers again can be increased or decreased depending on your desire for heat.
  • While your sauce is simmering make your pasta - I simply used a bunch of open pasta's not enough left over for a full meal but there - so used your imagination and see what you come up with. Cook till el dente.
  • While the pasta is cooking add your whole shrimp to the tomato sauce and allow to cook till shrimp are nice and pink. Try not to over cook as the shrimp gets tough with over cooking.
  • Just before serving add pasta to the shrimp and tomato sauce - for garnish use a little fresh chopped parsley and serve with fresh grated parmesan cheese.
  • I had some leftover peas and charred onions in the fridge and threw them in at the last minute - you can if you like pretty much add any kind of vegetable or just leave it out all together.
  • Charred Onions - in a heavy cast iron skillet add 2 cups onions sliced in large slices, the skillet should be screaming hot - once onions are added lower heat to medium high , flip the onions at the 3 minute mark and then repeat - you should come up with a nice charred looking onion not burnt - charred - we love to throw these into a can of peas ....this is what was added to the recipe at the very end.

SHRIMP SAUCE PIQUANT

This Paul Prudhomme recipe (that I found on the internet somewhere) is only for the true chile head- but if you are one (like me) it just doesn't get any better than this. He mentions in his notes that the amount of jalapeno in the recipe can be halved for a lower heat level, but if you are worried about that, this recipe is definitely not for you. OOOH, it hurts so good !!!

2 tablespoons unsalted butter
2 1/4 cups chopped onions
1 1/2 cups chopped green bell peppers
3/4 cup chopped celery
3 cups chopped fresh tomatoes
1 cup canned tomato sauce
3 tablespoons minced jalapenos (can be jarred, but soak first to remove vinegar)
2 bay leaves
5 1/2 teaspoons ground cayenne pepper
1 1/2 teaspoons white pepper
1 teaspoon ground black pepper
1 1/2 teaspoons minced garlic
2 1/4 cups fish stock
1 1/2 teaspoons dark brown sugar
3/4 teaspoon salt
2 lbs peeled raw large shrimp
4 cups hot cooked rice

Steps:

  • Melt the butter in a 4-quart non-stick saucepan over high heat; add the onions, bell pepper, and celery and saute for about 2 minutes, stirring occasionally.
  • Add the tomatoes, tomato sauce, jalapeno, bay leaves, ground peppers, and garlic, stirring well; cook about 3 minutes and stir often.
  • Stir in the stock, sugar and salt and bring to a boil.
  • Reduce heat and simmer until flavors are married, about 20 minutes, stirring often.
  • Turn the heat up to high, and when the sauce is boiling, remove from heat.
  • Add in the shrimp, push them down in the sauce, cover the pan and let sit for 10 minutes.
  • Remove bay leaves.
  • To serve, mound 1/2 cup cooked rice in the center of each serving bowl, then pour about 1/2 cup sauce around the rice and arrange 8 shrimp on the top of the sauce.
  • Serve with a cool beverage of your choice-- you'll need it!

1 (10.75 ounce) can condensed tomato soup
2 (.25 ounce) envelopes unflavored gelatin
½ cup cold water
6 ounces cream cheese, softened
1 cup mayonnaise
1 pound cooked shrimp
1 cup minced celery
½ cup green onions, minced

Steps:

  • Heat soup in a small saucepan or in a microwave oven.
  • In a medium bowl, stir gelatin into cold water. Mix hot tomato soup into the gelatin liquid.
  • In a medium size mixing bowl, combine cream cheese and mayonnaise together. Mix soup mixture into the mayonnaise and cream cheese mixture. Mix well. Add shrimp, celery, and green onions.
  • Spoon the mixture into a 1 quart mold and refrigerate for at least 1 hour, but preferably overnight. Unmold onto a serving plate before serving.
