SEA BASS WITH COCONUT-CURRY SAUCE

Number Of Ingredients 9

1 tablespoon vegetable oil
1 medium onion, thinly sliced
4 garlic cloves, minced
4 teaspoons curry powder
2 13 1/2- to 14-ounce cans unsweetened coconut milk
1 cup chicken stock or canned low-salt chicken broth
2 medium carrots, peeled, cut into matchstick-size pieces
4 5- to 6-ounce sea bass fillets
4 green onions, thinly sliced

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion, garlic and curry powder. Sauté mixture until onions are translucent, about 4 minutes. Mix in coconut milk and stock; bring to boil. Reduce heat to medium-high and boil until liquid is reduced to thin sauce consistency, about 50 minutes. Add carrots; simmer until crisp-tender, about 3 minutes. Remove from heat; keep warm.
  • Preheat broiler. Place fish on baking sheet; sprinkle with salt and pepper. Broil fish until just opaque in center, about 8 minutes. Using metal spatula, transfer fish to plates. Spoon sauce over fish. Sprinkle with green onions.

(sweet Japanese rice wine)
1/4 cup sake
1/4 cup tamari or regular soy sauce
2 tablespoons yellow miso (fermented soy bean paste)
2 tablespoons rice vinegar
1 tablespoon chopped peeled fresh ginger
1 tablespoon brown sugar
6 6-ounce sea bass fillets
1 tablespoon vegetable oil
Steamed white rice
Coconut-Curry Sauce
Chopped fresh cilantro

Steps:

  • Purée first 7 ingredients in blender. Place fillets in single layer in glass baking dish. Pour marinade over. Cover; refrigerate 2 hours, turning fish occasionally.
  • Preheat oven to 400°F. Remove fillets from marinade; pat dry with paper towels. Sprinkle both sides of fillets with salt and pepper. Heat oil in large ovenproof nonstick skillet over medium-high heat. Add fillets and sear until golden brown, about 2 minutes. Turn fillets over; transfer skillet to oven. Bake fillets until just opaque in center, about 8 minutes. Place some steamed rice in center of each of 6 plates. Top with fillets. Spoon some Coconut-Curry Sauce around rice on each plate. Garnish with chopped fresh cilantro and serve.

For marinade
a 1-inch piece fresh gingerroot
1 cup mirin*
1/2 cup sake kasu* (fermented lees of Japanese rice wine)
1/2 cup tamari* or soy sauce
1/4 cup white miso*
1/4 cup rice vinegar (not seasoned)
2 tablespoons packed brown sugar
six 6- to 7-ounce skinless pieces Chilean sea bass fillet (each about 1 1/2 inches thick)
1 tablespoon vegetable oil
Accompaniment: Coconut Green Curry Sauce

Steps:

  • Make marinade:
  • Peel and chop gingerroot. In a blender combine gingerroot with remaining marinade ingredients and blend until smooth.
  • Arrange sea bass in a 2-inch-deep dish just large enough to hold fish in one layer and pour marinade over it, turning fish to coat well. Marinate fish, covered and chilled, at least 2 hours and up to 2 days.
  • Preheat oven to 400°F. and wrap handle of a 12-inch non-stick skillet with a triple-layer of foil, shiny side out, if handle is not ovenproof. Remove fish from marinade, letting excess marinade drip off, and put on a plate. Discard excess marinade. In non-stick skillet heat oil over moderately high heat until hot but not smoking and sear fish on 1 side only until golden brown, about 3 minutes. With tongs turn fish over and transfer skillet to middle of oven. Roast fish until just cooked through, 6 to 8 minutes. Serve sea bass with curry sauce.

Take your curry up a level with this Malaysian seabass dish. The sauce features torch ginger flower and Vietnamese mint, which can both be found online

60ml oil
1 torch ginger flower finely chopped, or 1 tbsp torch ginger paste or grated ginger (optional)
20 Vietnamese mint (hot mint) or coriander leaves, plus extra to serve
4 sea bass fillets, plus 1 fish carcass tied in a muslin bag
4 tbsp tamarind concentrate
1 tbsp sugar
3 tomatoes , cut into eighths
24 dried chillies
3 lemongrass stalks , white parts roughly chopped
10 shallots , roughly chopped
2.5cm fresh turmeric , grated
40g shrimp paste

Steps:

  • Put all the ingredients for the rempah (curry paste) in a food processor and blend until everything is very finely chopped. Set aside.
  • Heat the oil in a medium saucepan. Add the rempah and cook over a low heat until a layer of red oil separates out on top. Add the torch ginger or ginger and Vietnamese mint leaves and stir, then add the fish carcass and cook for 5-8 mins.
  • Add the tamarind, sugar, 1 tbsp salt and 300 ml water and cook for 5 mins. Turn off the heat, take out the fish carcass and add the tomatoes.
  • Put the sea bass in a baking dish and pour over a little of the sauce. Put the dish in a roasting tin. Pour a little boiling water into the tin, then cover and steam the fish for 10 mins or until just cooked. Lift out the fish and discard the cooking liquid. Serve with the remaining sauce poured over and scattered with some more Vietnamese mint leaves.

2 cups nonfat milk
3 tablespoons minced peeled fresh ginger
1 tablespoon Thai red curry base*
1 teaspoon turmeric
2 teaspoons finely chopped garlic
2 teaspoons fish sauce (nam pla)
1 1/2 teaspoons imitation coconut extract
6 5-to 6-ounce sea bass fillets
1/2 cup bottled clam juice
1 tablespoon arrowroot
3 tablespoons chopped fresh basil
1 tablespoon sugar
3 cups cooked jasmine rice or other white rice

Steps:

  • Combine first 7 ingredients in glass baking dish. Add fish. Refrigerate 2 hours, turning occasionally.
  • Remove fish from the curry mixture. Transfer curry mixture to heavy large skillet and bring to simmer over high heat. Sprinkle fish with salt and pepper; add fish to skillet. Reduce heat to low; cover and simmer 4 minutes. Turn fish, cover and simmer until opaque in center, about 2 minutes longer. Using spatula, transfer fish to plate. Tent with foil to keep warm.
  • Whisk clam juice and arrowroot in small bowl to dissolve arrowroot. Whisk into curry mixture. Boil until slightly thickened, whisking often, about 6 minutes. Stir in basil and sugar. Season with salt. Pour any accumulated juices from fish into curry sauce. Place rice on plates; top with fish. Spoon sauce over fish.

2 Tbsp vegetable oil
1 medium onion, sliced
4-5 clove garlic, minced
1 Tbsp fresh ginger, grated
2 Tbsp curry powder
2 can(s) unsweetened coconut milk
2 medium carrots, cut in matchsticks
1 c chicken stock or broth
4 6 oz sea bass filets
1 Tbsp butter
! Tbsp olive oil
4 green onions, sliced

Steps:

  • 1. Heat 2T oil in heavy medium saucepan over medium heat. Add onion, garlic, gnger and curry powder. Sauté mixture until onions are translucent, about 4 minutes. Mix in coconut milk and stock; bring to boil. Reduce heat to medium-high and boil until liquid is reduced to medium sauce consistency, about 50 minutes. Add carrots; simmer until crisp-tender, about 3 minutes. Remove from heat; keep warm.
  • 2. Dry your fish filets, then salt and pepper to taste. Heat olive oil and butter in a cast iron pan to high heat. Place Sea Bass in pan to sear until cooked 2/3 of the way through on one side. Flip to other side to complete cooking.
  • 3. Put a small amount of coconut sauce on plate. Place fish on sauce-add additional sauce as desired. Sprinkle with green onions I serve this with steamed Jasmine rice

RICE FLAKE CRISPED BLACK SEA BASS MUSHROOMS, PEA GREENS AND CUMIN PEPPER CURRY



Rice Flake Crisped Black Sea Bass Mushrooms, Pea Greens and Cumin Pepper Curry image

4 (6-ounce) portions black sea bass
Egg wash
1 cup rice flakes
1 cup shiitakes
1 cup oyster mushrooms
2 tablespoons canola oil
Oil for deep frying, at 350 degrees
1 cup eggplant, small dice
Wondra flour, to coat
1 tablespoon shallots
1 teaspoon black cumin
1 tablespoon butter
3 cups pea shoots
1 tomato, diced
Salt and pepper, to taste
Sauce, recipe follows
4 tablespoons white onion, finely chopped
1 tablespoon garlic, chopped
1 tablespoon ginger, chopped
1/4 teaspoon turmeric
1 dried chili, ground
1 tablespoon coriander seed, ground
1 tablespoon cumin, ground
1/2 teaspoon black pepper, ground
2 1/2 cups fish fumet
2/3 cup coconut milk
3 tablespoons tamarind

Steps:

  • Score the skin of the bass (if whole fillet) and coat with egg wash that is seasoned with salt and pepper. Cover with rice flakes on skin side. Cook fish in saute pan with 1 tablespoon of oil, rice flake side down until golden brown, flip and continue until done (golden brown). Saute mushrooms and 1 tablespoon of oil in saute pan over medium-high heat. Season with salt and pepper and reserve. Dredge eggplant in Wondra flour, deep fry in oil until golden and reserve. Saute shallots with black cumin in butter until translucent, add the reserved mushrooms and saute. Add pea shoots to wilt, then the tomato dice, reserved eggplant and toss. Place vegetable in center of plate and top with the bass and drizzle with the sauce. Serve.
  • In a medium saucepan, sweat onion, garlic and ginger. Make a paste with spices and water to moisten. Add to onion mix and sweat. Add fish fumet and simmer for 30 minutes. Finish with coconut milk and tamarind. Do not boil. Simmer until flavors are balanced. Pass through fine mesh strainer
