Steps:
- 1. Put the prepared cucumbers on a cutting sheet and using either a large pestle or a cast iron frying pan, lightly smash the cucumbers.
- 2. Add the smashed cucumbers to a medium bowl, and add the onion, parsley, mint, salt and pepper. Mix it all together well.
- 3. In a small bowl mix together the yogurt, lemon juice, lemon zest, sugar and oil, blending well.
- 4. Now add the dressing to the cucumber mixture and toss gently. Taste and re-season if necessary.

A Laotian recipe shared with me by a dear friend of mine. So easy and refreshing. It reminds me of cold watermelon on a hot day.

Steps:
- Wash cucumbers and cut in half lengthwise.
- With a large spoon, scrape the inside of the cucumber into a bowl, being careful not to get any of the peel.
- You want thin, short shreds.
- Stir in the sugar (to your tastes) and several ice cubes.
- Serve after the ice has melted some.
- The cucumber should be cold and juicy.
