Number Of Ingredients 14

1-1/2 cups whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon pepper
2 eggs
1-1/4 cups buttermilk
2 tablespoons butter, melted
1 tablespoon canola oil
3/4 cup cubed Havarti cheese with jalapeno or pepper Jack cheese
3/4 cup finely chopped fully cooked ham
1 medium sweet red pepper, finely chopped
4 green onions, finely chopped

Steps:

  • In a large bowl, combine the flours, baking powder, baking soda, salt and pepper. In another bowl, combine the eggs, buttermilk, butter and oil. Stir into dry ingredients just until moistened. Fold in remaining ingredients., Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-22 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Number Of Ingredients 12

2 cups white whole wheat flour (or may substitute all purpose flour)
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 2/3 cups buttermilk
2 eggs
1/3 olive oil
8 ounces ham, diced
8 ounces monterey jack cheese, grated

Steps:

  • Prepare muffin pans with baking spray. I use 2 pans that hold 12 muffins each. This recipe yields approximately 18 muffins.
  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together dry ingredients: flour, baking powder, salt, sugar, garlic powder,cayenne pepper, salt and pepper. Set aside.
  • In a seperate bowl whisk together buttermilk, eggs and oil.
  • Add wet ingredients to dry and combine. Do not over mix.
  • Stir in ham and cheese until incorporated.
  • Distribute batter evenly into muffin cups. Bake at 350 degrees for 30 minutes or until a toothpick come out clean when tested.

1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
2 eggs
1 1/3 cups buttermilk
3 tablespoons olive oil
2 tablespoons melted butter
1 cup thinly sliced scallion
3/4 cup diced Canadian bacon (3 ounces)
1/2 cup grated cheddar cheese
1/2 cup minced red pepper

Steps:

  • Preheat oven to 400°F Coat muffin tin with cooking spray or line with papers.
  • Combine first 6 ingredients in bowl.
  • In another bowl, whisk together eggs, buttermilk, oil, and butter. Fold in scallions, Canadian bacon, cheese, and red pepper.
  • Make a well in the middle of the dry ingredients. Add wet ingredients and mix until just moistened. Scoop into muffin tin.
  • Bake for 20 - 22 minutes. Let cool for 5 minutes before removing from tin. Serve warm!

¼ cup butter, melted
¼ cup vegetable oil

5 slices bacon, coarsely chopped
10 large eggs
1/4 cup milk
1/2 cup coconut flour
kosher salt & freshly ground black pepper
4 ounces Baby Spinach, chopped (2 cups firmly packed)
1/2 cup fresh ricotta
1/3 cup prepared pesto sauce

Steps:

  • Preheat oven to 375 degrees.
  • Add bacon to a medium skillet over medium heat. Cook, stirring occasionally, until bacon is crisp, about 8-10 minutes. Transfer with a slotted spoon to a paper towel-lined plate. Use accumulated bacon fat from the skillet to grease a standard 12-cup muffin tin.
  • In a large bowl, whisk to combine eggs, milk, and coconut flour. Season with salt and pepper. Add spinach and bacon and stir to combine. Divide among muffin tins and top with ricotta and pesto.
