4 tablespoons unsalted butter
2 large cloves garlic, minced
6 ounces large shiitake mushrooms, stems removed
Salt and freshly ground black pepper
1 tablespoon chopped parsley

Steps:

  • Combine butter and garlic in saute pan. Heat until butter is melted and garlic starts to sizzle, about 30 seconds. Do not let garlic brown.
  • Add mushrooms and saute 3 to 4 minutes, turning until lightly browned. Season to taste with salt and pepper, sprinkle with parsley and serve.

8 ounces pencil thin fresh asparagus, trimmed
8 ounces fresh shiitake mushrooms, stems removed and sliced
1/4 cup unsalted butter
1/3 cup minced shallot (use onion if shallots are unavailable)
2 teaspoons ground ginger
1/2 teaspoon salt
black pepper
1/4 cup dry vermouth or 1/4 cup sherry wine
1 teaspoon orange zest, slices chopped

Steps:

  • Cut asparagus spears in 1/2 lengthwise, 7 into 1 inch pieces.
  • Melt the butter in wok& add the shallots& ginger.
  • Sauté until just tender.
  • Add the asparagus& mushrooms.
  • Season w/ salt& pepper& cook for 2 minutes.
  • Add the vermouth& cover.
  • Cook for 2 minutes, shaking the pan once or twice, Sprinkle with the orange (fresh) zest.
  • Cook 1 more minute.

2 tablespoons olive oil
8 ounces shiitake mushrooms, stems removed
1/4 cup Canal House Teriyaki Sauce or 1 tablespoon (scant) prepared oyster sauce

Steps:

  • Heat oil in a medium skillet over medium heat. Add mushrooms and cook, tossing occasionally, until tender and golden brown, 8-10 minutes.
  • Add 2 tablespoons water to skillet and cook, tossing mushrooms occasionally, until water is evaporated and mushrooms are tender, about 2 minutes longer. Transfer mushrooms to a medium bowl and toss with teriyaki sauce.
  • DO AHEAD: Mushrooms can be made 5 days ahead; cover and chill.

1 tablespoon butter
2 shallots, minced
12 ounces shiitake mushrooms, stemmed and thinly sliced
1/2 teaspoon salt, divided
1/4 teaspoon fresh ground black pepper, divided
1/3 cup sherry wine
1/4 teaspoon dried rosemary
1 tablespoon olive oil
4 (4 ounce) boneless skinless chicken breasts, pounded to even 1/3 inch thickness

Steps:

  • Melt the butter in a nonstick skillet over medium-high heat.
  • Add the shallots and saute, stirring occasionally, for 2 to 3 minutes, or until they start to soften.
  • Add the mushrooms, 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper, and saute for 5 to 6 minutes until the mushrooms soften.
  • Add the sherry and cook 1 to 2 minutes, or until most of the liquid has evaporated.
  • Remove from the heat and keep warm.
  • Sprinkle the remaining 1/4 teaspoon of salt, 1/8 teaspoon of pepper and the rosemary over the chicken.
  • Coat a ridged grill pan or cast-iron skillet with the olive oil and heat over medium high.
  • Add the chicken and cook 5 to 6 minutes on each side, or until the chicken is cooked through.
  • (A thermometer, inserted horizontally into the center of the breast, should register 160 degrees).
  • Place a chicken breast on each plate and serve topped with the sauteed mushrooms.

2 teaspoons vegetable oil
1/4 cup thinly sliced shallot
8 -10 medium shiitake mushrooms, with stems removed sliced thin
2 teaspoons olive oil
1 boneless rib-eye steak (about 8 ounces, and 1-inch thick)
3 tablespoons low sodium soy sauce

Steps:

  • Heat the vegetable oil in a skillet over medium-high heat. Add the shallots and mushrooms, and saute until soft. Remove and set aside.
  • In the same skillet, heat the olive oil over medium-high heat. Add the steak and sear on each side for about 2 minutes, or enough to leave the insides pink and juicy. Remove steak from heat, but leave the juices in the pan.
  • Lower the heat to medium. Return the mushrooms and shallots back to the skillet; add the soy sauce and stir until the vegetables are well coated.
  • Slice the steaks into bite-size pieces and pour the mushroom mixture over the meat. Serve immediately, with steamed rice.

Medallions of Beef and Sautéed Shiitake Mushrooms with Red Wine Sauce image

6 tablespoons butter or margarine, divided
4 small shallots, minced
1 garlic clove, minced
1/2 cup Worcestershire sauce
1/2 cup red wine (Bordeaux)
1/4 pound mushrooms (fresh, sliced Shiitake, if possible)
1 1/2 pounds beef tenderloin medallions
cognac as needed
1 teaspoon flour

Steps:

  • In a sauté pan, melt 2 tablespoons butter. Sauté shallots; then add garlic. After 2 minutes, add Worcestershire and wine. Simmer until sauce is reduced by one third. Add mushrooms. In a separate pan, melt remaining butter and, when hot, sauté the beef to desired degree of doneness. Flame beef with cognac. Remove beef. Add flour to pan and stir. Mix beef drippings into sauce. Set medallions on a bed of rice and pour sauce over.

Linguine with Peas, Shiitake Mushrooms and Sage with Mixed Sauteed Vegetables image

1-ounce dried porcini mushrooms
1 pound linguine
4 teaspoons olive oil, divided
2 leeks, chopped
2 cups sliced shiitake mushrooms
2 tablespoons chopped fresh sage leaves or 1 teaspoon dried
1 cup frozen green peas
1 cup reduced-sodium vegetable broth
1/4 cup chopped fresh parsley leaves
Salt and freshly ground black pepper
4 ounces Asiago or Romano

Steps:

  • Soak porcini mushrooms in 1 cup hot water for 15 minutes. Drain, reserve soaking liquid and set aside.
  • Cook linguine according to package directions. Drain and set aside.
  • Heat 2 teaspoons of the oil in a large skillet over medium heat. Add leeks and cook 2 minutes. Add drained porcini mushrooms and shiitake mushrooms and cook 3 to 5 minutes, until soft. Add sage and stir to coat. Add peas, broth and reserved porcini soaking liquid (strain liquid through a paper towel to remove debris) and bring to a simmer. Simmer 5 minutes. Add mixture to linguine, add parsley and toss to combine. Season, to taste, with salt and black pepper. Transfer to a serving platter and, using a vegetable peeler, shave Asiago cheese over top.

1/2 pound fresh shiitake, sliced thickly
salt and pepper
1 tablespoon minced shallot or green onions
Pea shoots

Steps:

  • Place skillet over high heat with the butter and oil. As soon as butter foam begins to subside, add mushrooms. Toss and shake for 4 to 5 minutes. After they have browned lightly, remove from heat. Toss the shallots or green onions with the mushrooms. Saute over moderate heat for 2 minutes. Garnish with pea shoots.
