WHOLEGRAIN MUSTARD AND GINGER COCKTAIL SAUSAGES

Scant 1/2 cup ginger conserve
Scant 1/2 cup wholegrain mustard
1 tablespoon garlic oil
1 tablespoon soy sauce
50 skinny breakfast sausage links
1 round (approx. 9 inch diameter) thick-crust sourdough or rye bread loaf, for serving (optional)

Steps:

  • Preheat the oven to 350 degrees F. In a bowl, whisk together the ginger conserve, mustard, garlic flavored oil and soy sauce.
  • Turn the sausages in the mustardy mix and then arrange them on either a large, shallow-sided tin or 2 smaller tins. The height of the tin's sides will determine how quickly the sausages color and cook.
  • If you are using high-sided tins, they will need about 45 minutes in the oven; cooked on a shallower tray, 30 minutes should be fine. And do line with foil or use throwaway foil trays, or washing-up will be a nightmare. To serve the sausages in their bread bowl, cut a circle around the top of the bread to take off a "lid". Put this lid on one side for a moment, and tear and pull out the doughy filling with your hands, leaving the crust intact so that you have a hollow bowl.
  • Fill this emptied-out loaf with as many sausages as you can - you may have to top up with a few as you go - and then you can balance the lid at a jaunty angle for maximum effect and your guests' amusement. Serve with a small pot of cocktail sticks to spear the
  • sausages, but if you're skipping the bread bowl option, let the hot sausages cool slightly before handing them out.

  • Put coating mixture in a resealable bag, add sausages and refrigerate for up to 2 days - put bag in bowl or on plate in case of leakage. Cook as directed in recipe.

1 star anise, broken into pieces
1 pound ground dark-meat chicken or pork
2 tablespoons soy sauce
1 1/2 tablespoons grated fresh ginger
1 tablespoon minced garlic
2 teaspoons light brown sugar
Olive oil for cooking

Steps:

  • In a small skillet over medium-low heat, toast fennel seeds until fragrant, 1 to 2 minutes. Transfer fennel and star anise to a spice grinder and grind well.

1 1/2 cups orange juice
1/2 cups rice wine vinegar
3/4 cups soy sauce
1/4 cups brown sugar
1 whole star anise
3 whole allspice
1 pound bacon, sliced
3 cups all-purpose flour, plus more for dusting
4 teaspoons sugar
1 teaspoon salt
2 1/2 tablespoons baking power
3 tablespoons butter, diced and very cold
1 cup buttermilk, plus more for brushing
1 egg
2 tablespoons grated ginger
2 tablespoons orange zest
1/2-pound breakfast sausages
2 tablespoons butter
2 teaspoons all-purpose flour
2 to 4 cups chicken stock
1 teaspoon sesame oil
2 scallions, sliced
Salt and freshly ground black pepper
2 tablespoons sesame oil
1 tablespoon butter
1 bunch mustard greens, rinsed and roughly chopped

Steps:

  • Preheat the oven to 425 degrees F. Line 2 sheet pans with silicone baking mats.
  • For the bacon: Combine the orange juice, vinegar, soy sauce, brown sugar, star anise and allspice in a small saucepan over medium-high heat and reduce by half. In the meantime,
  • spread the bacon strips onto 1 prepared sheet pan in a single layer. Bake until crispy, 10 to 15 minutes. Pour the glaze over the bacon and cook another 10 minutes.
  • For the biscuits: In a food processor, combine the flour, sugar, salt, baking powder and butter. Pulse 2 to 3 times until the butter is roughly incorporated. Set aside.
  • Combine the buttermilk, egg, ginger and orange zest. Mix the wet and dry ingredients until just combined. Dump onto a floured surface and pat down into a square, about 1 inch high. Cut into desired shapes and place the other prepared sheet pan. Brush the top of each biscuit with buttermilk. Bake until the biscuits are a light golden brown, 8 to 10 minutes.
  • While the biscuits are cooking, start the gravy. Remove the casings from the sausage links. Heat a skillet over medium-high heat and saute the sausage, breaking it up in the pan until fully cooked.
  • In the meantime, in a saucepan, melt the butter over low heat. When melted, vigorously whisk in the flour. Continue to whisk the roux on medium heat for about 3 minutes. Add 2 cups chicken stock to the roux. Continue whisking until shimmering. If the gravy is too thick, add more stock until it reaches the desired consistency. Once at the desired consistency, add the sesame oil and chopped scallions. Add the sausage and season with salt and pepper. Hold warm over low heat.
  • For the mustard greens: In a large saute pan, heat the sesame oil and butter. When the butter is melted and foamy, add the mustard greens. Cook on high heat until tender and the greens begin to crisp, 7 to 8 minutes. Season with salt and pepper.
  • To serve, split open a biscuit, top with the gravy, follow with the mustard greens and garnish with a slice of the soy-glazed bacon.

BEEF SHANKS BRAISED IN SOY SAUCE WITH CINNAMON AND STAR ANISE



Beef Shanks Braised in Soy Sauce with Cinnamon and Star Anise image

Yield Serves 8 as a main course

Number Of Ingredients 16

8 cups water
1 cup soy sauce
1/3 cup Scotch
1/3 cup sugar
6 slices fresh gingerroot, each about the size of a quarter, flattened with flat side of a heavy knife
4 scallions, flattened with flat side of a heavy knife
two 3-inch cinnamon sticks
two 4-inch strips fresh orange zest, removed with a vegetable peeler
2 tablespoons star anise*, crushed lightly with flat side of a heavy knife
4 meaty cross-cut sections beef shanks (about 4 1/4 pounds total)
a 7- to 8-ounce package dried rice-stick noodles
(rice vermicelli)*
3/4 pound carrots, cut diagonally into 1/4-inch slices
3/4 pound turnips, peeled, halved, and cut into 1/4-inch slices
Garnish: fresh coriander leaves
*available at Asian markets

Steps:

  • In a 9-quart kettle combine water, soy sauce, Scotch, sugar, gingerroot, scallions, cinnamon, zest, and star anise and simmer mixture 10 minutes. Add beef shanks and cook, partially covered with lid 1/2 inch ajar, at a bare simmer 2 hours, or until meat is very tender.
  • About 15 minutes before meat is done, in a large bowl soak noodles in warm water to cover 5 minutes and bring a large saucepan of salted water to a boil. Drain noodles in a colander and boil them 5 minutes. In colander drain noodles and rinse under cold water. Drain noodles well and transfer to large bowl.
  • Transfer meat with a slotted spoon to cutting board. With slotted spoon remove gingerroot, scallions, cinnamon sticks, zest, and star anise from broth and discard. Add carrots and turnips to broth and simmer until just tender, about 5 minutes. Transfer vegetables with slotted spoon to noodles. Boil broth until reduced to about 7 cups. While broth is reducing, discard bones and gristle and cut meat across grain into thin slices.
  • Divide noodles, vegetables, and meat among 8 bowls and ladle broth over them. Sprinkle mixture with coriander.

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

4 garlic cloves, minced
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
1 star anise, broken in half
2 teaspoons soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
2 tablespoons peanut or canola oil
1 small cabbage, 1 to 1 1/2 pounds, quartered, cored and cut crosswise into 1/8-inch shreds
1 medium carrot, cut into julienne
Salt to taste
2 tablespoons minced chives, Chinese chives or cilantro

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Uncover and stir-fry for another 30 seconds, then stir in the chives or cilantro and remove from the heat. The cabbage should be crisp-tender. Serve with rice or noodles.

2 tablespoons soy sauce
1/2 cup hoisin sauce
3 tablespoons five-spice powder
1/4 cup chopped scallion
1/4 cup red wine
2 tablespoons sugar
12 black peppercorns
1 teaspoon granulated garlic powder
canola oil, to cook
sesame oil, to cook

Steps:

  • In an oiled sautè skillet oiled with Canola oil& Sesame oil, add all the ingredients& bring to a boil.
  • Reduce heat& simmer about 5 minutes.
  • Check for seasoning.
  • Bring to a boil again.
  • Reduce heat& simmer another 10 minutes, stirring constantly until sauce somewhat thickens, almost like a syrup.
  • Strain& use the sauce to cook over duck, chicken, pork chops or beef cubes.
