This is a great homemade sauce. It's savory and spicy, as well as thick and chunky. The secret is the combination of Italian sausage, green onions, red wine and red pepper flakes. Easily double or triple amount and top on anything! Even better the next day. Enjoy.

2 tablespoons olive oil
4 cloves garlic, minced
1 pound Italian sausage
4 green onions, chopped
1 (8 ounce) package fresh mushrooms, sliced
1 tablespoon dried basil
1 tablespoon dried oregano
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can stewed tomatoes
1 (6 ounce) can tomato paste
½ cup water
½ cup red wine
1 teaspoon red pepper flakes
2 tablespoons white sugar
1 pinch salt and pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Saute garlic until browned. Add sausage and cook for 4 minutes, breaking apart with a spoon. Add green onions and cook until sausage is evenly browned, about 10 minutes.
  • Stir in mushrooms, basil and oregano; cook for 5 minutes. Stir in tomato sauce, stewed tomatoes, and tomato paste. Add water, red wine, red pepper flakes, and sugar. Season with salt and pepper to taste. Reduce heat to low and simmer for at least 1 hour.

2 cups packed brown sugar

  • Divide sausages between two ungreased 13-in. x 9-in. baking dishes. Combine barbecue sauce and brown sugar; pour over sausages and toss to coat. , Bake, uncovered, at 350° for 35-40 minutes or until sauce is thickened, stirring once.

2 pounds bulk Italian sausage
2 medium onions, chopped
2 medium sweet red peppers, chopped
2 medium green peppers, chopped
6 to 8 garlic cloves, minced
2 tablespoons olive oil
2 cans (29 ounces each) tomato sauce
2 cans (14-1/2 ounces each) Italian stewed tomatoes, drained
2 tablespoons brown sugar
4 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon pepper
1/4 to 1/2 teaspoon cayenne pepper
1-1/2 pounds uncooked bow tie pasta
1/2 cup heavy whipping cream
Shredded Parmesan cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In a Dutch oven, saute the onions, peppers and garlic in oil until tender. Stir in the tomato sauce, tomatoes, brown sugar and seasonings., Cook pasta according to package directions. Meanwhile, in a blender, process tomato mixture in batches until smooth. Return to the pan. Add sausage; heat through. Gradually stir in cream. Cook and stir over low heat for 5 minutes. Drain pasta; top with sauce. Sprinkle with cheese.

6 tablespoons olive oil
4 spicy Italian sausages, pierced several times with toothpick
1 large onion, finely chopped
4 large garlic cloves, minced
1 1/2 28-ounce cans crushed tomatoes with added puree
1/4 cup chopped fresh Italian parsley
2 small bay leaves
2 teaspoons dried basil
2 teaspoons dried oregano

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add sausages, onion, and garlic. Sauté until onion begins to color, about 10 minutes. Add crushed tomatoes and herbs and bring sauce to boil. Reduce heat to medium-low, cover, and simmer until flavors blend and sausages are cooked through, stirring often, about 30 minutes. Season with salt and pepper. Slice sausages thinly, if desired.

1/2 pound hot Italian sausage, removed from casings and crumbled
1/2 pound sweet Italian sausage, removed from casings and crumbled
1 1/2 cups sliced red onions
1 1/2 tablespoons chopped garlic
3/4 teaspoon fennel seeds
1/2 teaspoon salt
1/2 teaspoon crushed red pepper
1 (28-ounce) can whole peeled tomatoes, crushed by hand, with their juice
2 tablespoons tomato paste
1 tablespoon chopped fresh oregano
1 pound dry penne, ziti or mostaccioli
1 1/2 cups fresh ricotta, or crumbled or coarsely grated fresh ricotta salata
6 tablespoons chopped fresh basil leaves
Grated Parmesan, for garnish

Steps:

  • In a large saute pan or pot, cook the sausage over medium-high heat until the fat is rendered and the sausages start to brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Remove all but 2 tablespoons of fat from the pan.
  • To the fat remaining in the pan, add the onions and garlic and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the fennel seeds, salt, and red pepper, and cook, stirring, until fragrant, 20 to 30 seconds. Add the tomatoes and their juice, the tomato paste, oregano, and cooked sausage and cook, stirring, until thick and fragrant, 20 to 25 minutes. Remove from the heat and adjust the seasoning, to taste.
  • Meanwhile, in a pot of salted water, cook the pasta until al dente. Drain and toss in the pot with the sauce. Stir in the ricotta salata and basil. Serve immediately and garnish with Parmesan cheese at the table.

Pasta and sausage are a combination that usually suggests a dense, heavy tomato sauce. But it can also mean the very opposite. Sausage, used in small amounts, can contribute to a relatively light, almost delicate pasta sauce. In fact, sausage is a gift to the minimalist cook: it comes already seasoned, and its seasoning can be used to flavor whatever goes with it. The technique is simple. It's easiest to start with bulk sausage, or patties, because then there's no need to remove the meat from a casing. (Though that is easy to do: Just slit the casing with a sharp knife and peel it off.) You crumble the sausage into a little melted butter, which adds smoothness to the final sauce (omit it if you prefer), add water or other liquid and finish with grated Parmesan.

1/2 pound sweet or hot Italian sausage (if using link sausage, remove it from the casing)

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Put the butter in a medium skillet over medium-low heat. As it melts, crumble the sausage meat into it, making the bits quite small, 1/2 inch or less. Add the liquid, and adjust the heat so that the mixture simmers gently.
  • Cook the pasta until it is tender but not at all mushy. Reserve about 1/2 cup of the pasta cooking water.

2 tablespoons olive oil
1 pound sweet Italian sausage, removed from casings
1 pound spicy Italian sausage, removed from casings
1 tablespoon tomato paste
1 small yellow onion, finely chopped (1 cup)
1 medium carrot, finely chopped
2 cloves garlic, minced
2 (28-ounce) cans whole peeled plum tomatoes
1 (6-inch) sprig rosemary

Steps:

  • Heat oil in a 4- to 5-quart saucepan over medium-high heat. When oil shimmers, add sausages. Brown sausages, breaking them up into small pieces as they cook, just until sausages are cooked through, 5 minutes.
  • Add tomato paste, onion, carrot, and garlic and continue cooking, stirring occasionally, until vegetables begin to soften, about 3 minutes.
  • Stir in tomatoes and rosemary and break up tomatoes into pieces with the side of a spoon or scissors. Bring to a boil. Reduce heat, partially cover, and simmer, stirring occasionally, until sauce thickens and reduces slightly.
  • Cool meat sauce to room temperature, then transfer to freezer-safe containers with tight-fitting lids and freeze until ready to use, up to 6 months.
