2 jars (24 ounces each) pasta sauce
2 medium green peppers, cut into strips
2 medium onions, thinly sliced
1/2 teaspoon garlic powder
1/2 teaspoon fennel seed, crushed
2 packages (20 ounces each) Italian turkey sausage links
10 hoagie buns, split

Steps:

  • In a 3-qt. slow cooker, combine the first 5 ingredients. Cook, covered, on low until vegetables are tender, about 4 hours., Grill sausages according to package directions. Serve on buns with sauce. Freeze option: Freeze cooled sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

4 -6 italian sweet sausage or 4 -6 hot Italian sausages
1 1/4 cups dry white wine or 1 1/4 cups water, divided
2 -4 teaspoons extra virgin olive oil, divided
2 large onions, thinly sliced,lengthwise
2 -3 cloves garlic, minced
3 -4 large red bell peppers or 3 -4 large green bell peppers, seeded and thinly sliced
salt & freshly ground black pepper
4 -6 large crusty French rolls, split and warmed in oven
4 -12 slices provolone cheese, 1 to 2 slices per sandwich (desirable) (optional)
1 -2 cup fairly spicy marinara sauce (if not spicy, simmer with garlic and red pepper flakes or cayenne pepper to taste)

Steps:

  • Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
  • When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
  • When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
  • Remove sausages from pan, and set on paper towels to drain.
  • Drain all grease from skillet, but do not wash or rinse it.
  • Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
  • Add onions, and garlic, and season to taste with salt and pepper.
  • Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
  • Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
  • Continue cooking and tossing until onions are almost translucent.
  • Add peppers, and toss to combine with onions.
  • Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
  • Bury the sausage in the vegetables to reheat if necessary.
  • I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
  • Either one is better than your typical hoagie roll.
  • I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
  • If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.

2 Italian sausage links (4 ounces each)
1/4 cup water
1 small green pepper, cut into strips
1 small onion, halved and thinly sliced
1 tablespoon olive oil
1 cup spaghetti sauce
1/4 teaspoon dried basil
2 brat buns, split and toasted
2 tablespoons shredded Italian cheese blend

Steps:

  • Place sausages and water in a large skillet; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover; cook 5-10 minutes longer or until meat is no longer pink; drain. Remove sausages and keep warm., In the same skillet, saute pepper and onion in oil until tender. Return sausages to pan. Stir in spaghetti sauce and basil; heat through. Serve sausages on buns with sauce and cheese.

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

This is an authentic style Italian sausage sandwich, just like what you would have in Philadelphia or New York.

4 mild Italian sausage or 4 hot Italian sausages
2 medium onions (cut in half & sliced)
1 green bell pepper (cored, seeded & sliced)
1 red bell pepper (cored, seeded & sliced)
6 tablespoons extra virgin olive oil
1/2 tablespoon salt
1 tablespoon black pepper
1/8 teaspoon dried oregano
1/8 cup white wine or 1/8 cup red wine
1/4 cup shredded parmesan cheese
1/4 cup shredded mozzarella cheese
1/4 cup shredded provolone cheese
4 hoagie rolls (submarine)
1 cup marinara sauce (see my recipe 84217)

Steps:

  • Poach raw sausages in 1/2 cup water in a covered skillet, simmering until almost done.
  • This takes about 8 to 10 minutes.
  • Sautè onions and peppers with olive oil, salt, pepper and oregano 4 minutes on medium-high heat.
  • Add the wine, cover and cook 4 minutes more.
  • Uncover and cook until moisture is absorbed.
  • On either a grill or in a skillet with a little extra-virgin olive oil, cook the poached sausages over medium-high heat 7 to 10 minutes, turning often to ensure even browning.
  • In a large baking dish or pan, place the opened rolls.
  • Fill the rolls with 1 sausage in each roll and evenly distribute the onions and peppers.
  • Mix the 3 shredded cheeses and evenly sprinkle that on top.
  • Place in oven, uncovered, on 400°F or until the cheese is melted.
  • Remove from oven, top with some Marinara sauce, close the sandwiches and serve.

In this quick and easy sausage and peppers variation, a mix of flavors is brought together with the ease of just adding Classico® Tomato & Basil Sauce.

1 pound sweet Italian sausage links
3 bell peppers (green, yellow and/or red), sliced
1 large yellow onion, sliced into rings
1 clove garlic, minced
1 teaspoon salt

1 (24 ounce) jar Classico® Tomato and Basil Sauce
4 fresh Italian sandwich rolls

Steps:

  • Heat the oil in a skillet over medium heat. Add the sausages; cook until browned on all sides, following cooking instructions indicated on the packaging. Remove sausages from the pan. Drain grease, leaving about a tablespoon for the vegetables.
  • Cook peppers and onions in skillet over medium heat until they begin to soften. Add garlic, salt, and pepper and cook one more minute.
  • Stir in Classico Tomato & Basil Sauce. Increase heat until sauce begins to boil; reduce heat and simmer over low heat.
  • Cut the sausages into 1-inch pieces; add to the pan and stir to combine. Cook until the sauce has thickened and the peppers and onions are soft, about 10 minutes.
  • Serve in bowls or on rolls as sandwiches.
