My Easy Sausage Muffins are perfect for a grab-and-go breakfast! They're savory breakfast muffins full of sausage, eggs, and Cheddar cheese.

1 pound bulk breakfast sausage
4 eggs (lightly beaten)
1 cup sharp Cheddar cheese (shredded)
1 cup baking mix (recommend: Bisquick)

Steps:

  • Preheat the oven to 350 degrees. Grease a 12-cup muffin pan and set aside.
  • Cook the sausage in a skillet over medium-high heat until no pink color remains. As the sausage cooks, break it up using a potato masher or large fork so that it is crumbly and loose. Drain as much fat as possible from the cooked sausage.
  • In a large mixing bowl, combine the eggs, shredded cheese, cooked drained sausage and baking mix. Stir until thoroughly combined.
  • Fill muffin cups about 3/4 full. Bake for approximately 20 minutes or until golden brown on top.

This is a recipe I found online and adapted to suit my family's taste. You can use either Chorizo or regular bulk breakfast sausage, depending on your tastes. They're both good. If you like spicy foods, add a 4 oz can of chopped and drain green chilies.

2 lbs chorizo sausage or 2 lbs bulk breakfast sausage
4 cups Bisquick
2 cups cornmeal
6 eggs
3 1/2 cups milk
3 cups shredded cheese

Steps:

  • Line muffin tins with paper liners, and set aside.
  • Fry, crumble and drain sausage.
  • Preheat oven to 375 degrees.
  • Mix together bisquick, cornmeal, eggs, and milk.
  • Add drained sausage, and cheese, and stir well.
  • Ladle the filling into the prepared muffin tins, filling almost to top.
  • Bake for 11-15 minutes.
  • Allow to cool completely.
  • Store in freezer in a large airtight container.
  • Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.
  • Microwave on high for approx 90 seconds.

1 tablespoon olive oil
1 lb breakfast sausage
½ teaspoon McCormick® Rubbed Sage
½ teaspoon red pepper flakes
kosher salt, to taste
1 batch Stuffin' Muffins Base
2 large eggs
1 oz McCormick® Turkey Gravy Mix
1 cup cold water

Steps:

  • Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.
  • Heat the olive oil in a medium pan over medium heat. Add the breakfast sausage, McCormick® Rubbed Sage, and red pepper flakes and cook, breaking up the meat into small pieces, until browned and cooked through, 6-8 minutes. Pour off any excess grease, then season with salt to taste.
  • Add the sausage to the stuffing base and stir to combine. Fold in the eggs until incorporated.
  • Spoon about ¼ cup (60 G) of the stuffing into each muffin cup, filling just above the rims. Press down gently with a spoon to release any air pockets.
  • Bake the stuffing cups for 30-35 minutes, or until cooked through and the tops are browned. Let rest in the muffin tin for 20 minutes, then run a knife around the edges of each cup to release.
  • While the stuffing muffins cool, add the McCormick® Gravy Mix to a small saucepan. Pour in the water, whisking constantly to prevent lumps from forming. Turn the heat to medium and cook, stirring frequently, until the gravy comes to a boil. Reduce the heat to low and simmer for 1 minute. Remove the pot from the heat and let sit for 3-5 minutes, until slightly thickened.
  • Spoon the gravy over the sausage stuffin' muffins and serve warm.

3 large eggs
1/8 teaspoon seasoned salt
1/8 teaspoon pepper
1 package (8-1/2 ounces) corn bread/muffin mix
3/4 cup shredded cheddar cheese, divided

  • Preheat oven to 400°. Line 12 muffin cups with paper liners. In a skillet, cook sausage over medium heat 4-5 minutes or until no longer pink, breaking into crumbles. Remove to paper towels to drain., In a small bowl, whisk eggs, seasoned salt and pepper. Pour into same pan; cook and stir over medium heat until eggs are thickened and no liquid egg remains. 1 cup diced onion

Steps:

  • Cook ground sausage in a large skillet over medium-high heat, stirring often, until browned and cooked through, about 5 minutes. Drain excess grease.

These red pepper and sausage egg muffins are very easy to make! They take only a few ingredients to make, and come together about 30 minutes or so. They come out so delicious, tender, and perfectly fluffy. Plus, they are make-ahead and freezer friendly.

8 large eggs
½ teaspoon Kosher salt
¼ teaspoon ground black pepper
½ cup half-and-half or heavy cream
½ cup finely diced yellow onions
12 oz breakfast sausage, casings removed
¾ cup shredded cheddar cheese
Half of a red bell pepper, diced ((about ½ cup))
Oil spray for pan

Steps:

  • Preheat oven to 350 degrees F. Note: you will need a standard 12-muffin pan.
  • In a skillet over medium heat, cook the onions and sausage, crumbling the sausage into small pieces, until fully cooked through. Set aside. Note: the sausage should release some fat naturally, but if needed, you can add some oil to the skillet too.
  • In a bowl, vigorously whisk the eggs, ½ teaspoon Kosher salt, ¼ teaspoon freshly ground black pepper, and ½ cup heavy cream until fully combined. Set aside.
  • Lightly spray a standard 12-muffin pan with oil spray. Evenly divide up the diced red bell peppers, the sausage and onion mixture, and the cheese in the muffin pan. Fill them with the egg mixture a little bit over ¾ of the way through. This will allow the egg some room to expand without spilling all over.

2 tablespoons oregano

Steps:

  • Preheat oven to 375°F.
  • Combine Bisquick, cornmeal, eggs and milk.

  • Add remaining ingredients and mix well.
