In a large bowl, combine the pancake mix, cornmeal and cinnamon. Stir to combine. Add the eggs, vanilla and water, adding more water as needed for the batter to become slightly thick (but not overly gloopy.) Start out by adding 1 cup, then work your way up to 3 cups or more. Heat some canola oil in a large pot over medium-high heat to about 350 degrees F. Drop in a bit of batter to see if it's ready; the batter should immediately start to sizzle but should not immediately brown/burn. One could argue that this recipe is one of those times, since we could just cook some sausage and serve it next to our potato pancakes-but I could, and did, stuff mine with sausage, and I very much enjoyed how they came out. Besides, if you're going to skip the sausage stuffing, this recipe is a reminder of just how easy potato pancakes are to make.

6 ounces Italian sausage links, casings removed
1 ½ pounds russet potatoes, peeled
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons all-purpose flour
1 large egg, beaten
2 ½ tablespoons vegetable oil
2 tablespoons diced roasted red peppers
3 tablespoons sour cream, or to taste
1 tablespoon chopped fresh chives, or to taste

Steps:

  • Divide sausage into 6 equal pieces, and press between plastic wrap to flatten into discs about 2 1/2 inches round and about 1/8 inch thick. Keep in the refrigerator until needed.
  • Grate potatoes and transfer into a large bowl of cold water. Stir the grated potatoes with your hand for a few seconds, and then drain the potatoes in a strainer. Using your hands and/or a towel, squeeze out as much water as possible.
  • Transfer the potatoes to a mixing bowl. Add salt, black pepper, cayenne, flour, and egg; mix thoroughly.
  • Heat oil in large nonstick pan over medium-high heat. For each pancake, place down about 3 tablespoons of the potato mixture. Reduce heat to medium; top each pancake with a sausage patty, pressing it down lightly into the surface. Top each sausage patty with another heaping tablespoon of potato mixture and spread over the top until the sausage is covered. Flatten down with a spoon or spatula.

1 pound ground pork
2 teaspoons brown sugar
3/4 teaspoon kosher salt
1/2 teaspoon minced fresh rosemary
1/2 teaspoon minced fresh sage
1/2 teaspoon minced fresh thyme
4 large eggs, separated
1/4 cup granulated sugar
1/2 cup milk
2 tablespoons unsalted butter, melted and cooled
1/2 teaspoon vanilla extract
3/4 cup store-bought pancake mix
Pat of unsalted butter, plus more for serving
Nonstick cooking spray, for the ring molds
Maple syrup, for serving

Steps:

  • For the sausages: Mix the pork, brown sugar, salt, rosemary, sage and thyme in a bowl until well combined. Shape into four 4-inch-wide and 1/4-inch-thick circular patties.
  • For the big fluffy pancake mix: In a stand mixer with the whisk attachment, whisk the egg whites to soft peaks. Continue whisking and gradually add the granulated sugar. Continue whisking until all the sugar is dissolved and the mixture forms stiff peaks.
  • In a separate bowl, whisk together the egg yolks, milk, melted butter and vanilla extract until smooth. Add the pancake mix and stir to combine. Carefully fold in the egg white mixture, taking care not to overmix.
  • For the big fluffy pancakes and sausage: Preheat a large nonstick pan over low heat and add the butter.
  • Spray 3-inch round (2-inch tall) ring molds with cooking spray. Place the ring molds in your preheated pan and use a ladle to fill the molds two-thirds of the way with the pancake mix. 2 tablespoons pure apple extract
1 teaspoon vanilla extract
4 small red apples
Maple syrup, for serving

Steps:

  • For the sausage: Begin by browning the sausage in a pan over medium heat. Stir in the Thai chili garlic sauce and brown sugar and cook for 10 to 15 more minutes. Remove from the pan and set on paper towels to drain. For the pancakes: Mix the flour and sugar together. Whisk in the milk, oil and eggs. Add the food dye and extracts and mix well.
  • Core the apples and remove any seeds, then slice in round slices.

1/4 cup vegetable oil, plus more for the pan

3 tablespoons teriyaki sauce
3 scallions, finely chopped
1 teaspoon toasted sesame or chili sesame oil

  • Preheat the oven to 450 degrees F. Toss the sausage, broccoli, 1 tablespoon vegetable oil and a pinch each of salt and pepper on a baking sheet. Bake, stirring, until the sausage is browned and the broccoli is charred, 25 to 30 minutes.

1/2 teaspoon kosher salt, divided
1/4 teaspoon fresh ground black pepper, divided
2 -3 tablespoons vegetable oil, divided
1 lb hot Italian sausage, casing removed
1 red bell pepper, seeds and veins removed, diced
3 cups packed fresh Baby Spinach
1 tablespoon butter
1 shallot, minced
2 garlic cloves, minced
8 ounces goat cheese
3/4 cup heavy cream
2 tablespoons chopped fresh basil
additional fresh basil (to garnish)

Steps:

  • In a large bowl, mix together the potatoes, green onions, parmesan cheese, eggs, 1/4 teaspoon salt and 1/8 teaspoon black pepper, set aside.
  • In a large non-stick skillet or griddle, heat 1 tablespoon vegetable oil over medium-high heat. Measure out 1/3 cup of potato mixture, drop into heated skillet, spread out into a 3 1/2" to 4" round. Continue this process using the remaining potato mixture, making a total of 8 potato pancakes. Cook until golden brown, approximately 4 minutes, flip pancakes over and continue to cook until second side is golden brown, approximately another 2 - 3 minutes. Add additional 1 - 2 tablespoons oil, if needed. Remove to plate, season with remaining 1/4 teaspoon salt; keep warm. (Depending on size of skillet you may need to cook potato pancakes in 2 batches.).
  • Heat a large non-stick skillet over medium-high heat. Add in the sausage and red bell pepper and cook until sausage is cooked through, approximately 4 - 5 minutes, being sure to break up sausage into small pieces as it cooks. Add in the spinach and continuing cooking, just until spinach begins to wilt. Transfer to a medium bowl; set aside.
  • In the same skillet, over medium heat, melt the butter. Add in the shallot and garlic and cook for 1 - 2 minutes until shallot begins to soften. Add in the goat cheese and cream and cook until goat cheese has melted, stirring constantly. Add in the reserved sausage mixture, remaining 1/8 teaspoon black pepper and the chopped basil; mix to fully combine.
  • To serve, stagger 2 potato pancakes on serving plate, top with sausage mixture, garnish with additional fresh basil.

1 1/3 cups low-fat buttermilk
1 large egg, lightly beaten
3 tablespoons maple syrup, plus more for serving, optional
1/2 cup diced apples
3/4 cup Jimmy Dean(R) Hearty Original Sausage Crumbles
2 tablespoons butter, for greasing griddle
Cinnamon Walnut Butter, recipe follows
1 stick unsalted butter, softened
2 tablespoons toasted walnuts, finely chopped
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Pinch of salt

Steps:

  • In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and 1/2 teaspoon salt.
  • In a large measuring cup combine the buttermilk, egg, and 3 tablespoons maple syrup and stir with a fork. Stir into the flour mixture with a spatula until just combined. Mix in the diced apple and sausage crumbles.
  • Heat a pancake griddle over medium-low heat and then grease with a small amount of butter. Drop ladles of batter to form 4-inch pancakes, cooking pancakes for 2 to 3 minutes before flipping, or until the batter puffs up and bubbles form. Flip pancakes and continue to cook for an additional 1 to 2 minutes, until cooked through and nicely browned. Top with Cinnamon Walnut Butter and additional maple syrup, if desired.
  • Combine the butter, maple syrup, cinnamon, vanilla, and salt in a bowl and mix until well blended. Serve with pancakes.

2 tablespoons flavorless oil, plus more for frying
1/2 cup (65g) all-purpose flour
1/2 cup (65g) oat flour, or more all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 teaspoon baking soda
1 large egg
1/2 cup (120g) buttermilk
18 pre-cooked breakfast sausages (if frozen, heat them a little just until they're soft enough to insert with lollipop sticks)
Maple syrup, for serving, optional

Steps:

  • Fill a large heavy pot or high sided skillet fitted with a thermometer with 1 inch of oil and heat over medium-high heat to 360 degrees F.
  • In a medium bowl, whisk together the all-purpose flour, oat flour, sugar, baking powder, salt and baking soda. In a separate small bowl or measuring cup, whisk together the egg, buttermilk and 2 tablespoons oil. Add the wet ingredients to the dry ingredients and stir to combine. Transfer the batter to a tall skinny glass or measuring cup (this step isn't completely necessary, but it will make coating the sausages easier). Working in batches of 3 or 4 sausages at a time, insert popsicle sticks or lollipop sticks into the sausages, pat off any excess moisture with a paper towel, and dip them into the pancake batter to fully coat, scraping off excess. It doesn't need to be a very thick coating as the batter will puff up when frying. Carefully lower the entire thing (stick included) into the hot oil and fry until golden, 1 1/2 to 2 minutes. Use tongs to transfer to a paper towel or wire rack. Repeat with the remaining sausages. Cool slightly before serving.

1/2 pound breakfast sausage, casings removed if any, cooked and crumbled (rendered fat reserved)

Steps:

  • In a large bowl, combine flours, baking powder, and salt. In another medium bowl, whisk together the milk, eggs, maple syrup, and melted butter. Add the wet ingredients to the dry ingredients, and stir to combine. Stir in 1/2 cup scallions.
  • Heat a large skillet or griddle to medium and brush it with reserved sausage fat or vegetable oil. Scoop 1/4 cup of batter per pancake into the skillet. Cook until bubbles start to form on the surface, 1 to 2 minutes. Sprinkle 1 tablespoon crumbled sausage onto the top of the pancake. Flip and cook until lightly browned on the bottom, about 1 minute more. Repeat with remaining batter, brushing pan with rendered fat or oil, as needed.
  • Serve pancakes drizzled with maple syrup and topped with fried eggs and sliced scallions.

BUTTERMILK, SAUSAGE AND BACON PANCAKES

2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 cups buttermilk
5 tablespoons unsalted butter, melted, plus more for the griddle
2 large eggs, lightly beaten
2 cooked breakfast sausage links, crumbled
1 cup maple syrup
1 tablespoon bourbon
10 slices cooked bacon, chopped into pieces
1 cup chopped pecans

Steps:

  • Preheat a griddle to 375 degrees F.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Add the buttermilk, butter and eggs and whisk until the lumps in the batter begin to disappear; don't overmix the batter though--a few lumps are fine. Let stand for 2 to 3 minutes. Fold the sausage crumbles into the batter.
  • Grease the griddle with butter, wiping off any excess. Using a ladle, pour about 1/2 cup of pancake batter onto the griddle. Cook until bubbles appear at the top of the pancake, about 3 minutes. Carefully flip using a spatula. Continue to cook for about 2 more minutes. Transfer to a platter. Repeat this process with the remaining batter, adding more butter to the griddle as needed.
  • In a small bowl, whisk together the maple syrup and bourbon.
  • Serve the pancakes in a stack and top with the bacon, pecans and a drizzle of bourbon maple syrup.
